Rhonda, maybe we should think about seeing if there is any interest in having another KC low carb get together.
Breakfast was a chipolte seasoned ground turkey omelet w/onion, celery, jalepenos, and cheese. Lunch was chili w/black soybeans, 1/2 of a corn OMM, and cole slaw w/cabbage, green pepper, onion, and carrot. Dinner was roast pork, buttered sugar snap peas, curried cauli-rice pilaf w/onion, celery, and mushrooms, and a couple of strawberries and some cantaloupe for dessert.

Breakfast was cantaloupe and Maggie's cereal w/dried cranberries. Lunch was cole slaw w/cabbage, green pepper, onion, and carrot, a bowl of chili w/black soybeans, and 1/2 of a corn OMM. Dinner was pot roast, fauxtatoes and gravy, and buttered sugar snap peas.

I would LOVE to have a get together with our KC friends Henry...... However, you should not always be the Chef, even though you are. Perhaps, we could meet at a local restaurant? However, the meal you served us was devine!

Lunch was a bowl of chili w/black soybeans, cole slaw w/cabbage, onion, green pepper, and carrot, and 1/2 of a corn OMM. Dinner was roast pork, sugar snap peas, and curried cauli-rice pilaff w/onion, celery, and mushrooms.

With the long stretch of cold weather we have been having, the first "real" winter in 7-8 years, I have been in the mood for "comfort food". I tried 2 new things today, and both will become part of my menu rotation, though I will tweak the spaetzle a little the next time I make it.
Breakfast was Maggie's cereal w/dried cranberries. Lunch was cole slaw w/cabbage, carrot, green pepper, and onion, and a chili-cheese sauce served over pork rinds w/chopped tomato, jalepenos, green onion, and ripe olives. I would think of this as a l/c nacho supreme. Dinner was cranberry port pot roast w/port gravy, home made l/c spaetzle, broccoli, and cranberies with pearl onions.

Lunch was a l/c "nacho" supreme w/tomato, jalepenos, green onion, and olives on top of pork rinds covered with chili-cheese sauce. Dinner was a lettuce salad w/roma tomato, green onion, cucumber, green pepper, and stuffed olives, and a piece of Deep dish pizza quiche supreme w/pepperoni, sausage, ground turkey, onion, red bell pepper, mushrooms, and ripe olives.

Hi, Henry. Long time, no see. I'm having some issues, so my posts here will be limited.

I see you are still eating all those wonderful foods you are so famous (infamous?) for!

I mixed some CarbSelect peaches w/a l/c yogurt as part of my breakfast this morning. Also, I whipped up some "Twice-Baked" cauli that includes butter, sour cream, real bacon bits, cheddar cheese, and green onion. Marvelous. And in addition, my green bean casserole. So, I've had my 5-a-day today. And veggies never tasted so good. I was getting a LITTLE burned out on salad EVERY day.

I've been gone for awhile but am back and this is the first thread I'm visiting since you have not had a lot of company Henry. I did really good with my fruits and veggies these last few days. So glad to be back as I find that when away I don't always make as good of decisions with my food without the healthy eating interaction/motivation that I get while here at LCE.com.

Fruit - peaches (splenda canned and yummy!)
veggies - brussel sprouts with light butter
