I made green bean casserole for our evening meal....sort of a late lunch, early dinner. I used cream of chicken and mushroom soup. The carb count is alot lower than the regular cream of mushroom soup. I also threw in a little can of mushrooms. Yummy!

So, I had a serving of that and the salad I had planned: Romaine lettuce, Key Lime flavored grilled chicken breast, sliced over it, bacon bits, the other half of the avacado, a sprinkle of cheddar cheese, and some Cardini's Caesar dressing. The only thing I forgot to add was some of the green or red onion I have in the fridge. It was really good anyway. And pretty to look at.

This is the kind of thing I wish carb addicts (who don't think they can give up the carbs) knew: you can eat some really tasty food with full-fat dressing AND avacado on top. AND bacon bits.....AND cheese. DUDE!! Now that's good stuff!

Let's see: apple, lettuce, avacado, green bean casserole....I think I got my 5 today!

Yesterday was a colorful travel day. Breakfast was Maggie's cereal w/dried cranberries and some wonderful blackberries that my dw found at one of those 99 cent stores that seem to be all over San Diego. "Lunch" was a couple of low carb bars and an apple at 30,000 feet as we returned home. Dinner at the Hometown Buffet after a late return flight was a spinach salad w/mushrooms, hb egg, and red onion, grilled steak w/sauteed mushrooms and onions, boiled cabbage, and cantaloupe for dessert.

Breakfast was Maggie's cereal W/dried cranberries. Lunch was a lettuce salad w/cucumber, roma tomato, & stuffed olives and a rolled chicken breast stuffed with ricotta & parmesean cheese and andouille sausage. Dinner was an oven "fried" chicken breast, shirataki noodles w/my e-z alfredo sauce, and a meddly of green beans, onion, and tomatos w/bacon.

Hey, Henry.....I guess I should PM this, but it really is not that private. I know you live in Kansas City, so I'd like to ask a favor of you. A friend/coworker passed away suddenly this morning. She live in KC with her husband. Brain tumor, very sudden, and very sad. She was 52. Her last name is Reed. May be spelled Reid. If you see the obit in your paper, would you save it for me? I will PM you with my address or I can mail you a self-addressed stamped envelope. Either way, I would so appreciate it if you could and would do that for me.

I talked to her on the phone almost daily and when she and the owner were here last fall, we got to know each other in person. Sweet lady. I can't believe she's gone. I spoke with her last on Thursday.

If it's any trouble, don't worry about it. It's just that I don't know her family and the owner.....well, that's another Oprah show.

BTW- I had an apple and a salad. I made myself eat the salad. My appetite is gone for right now. The apple was prior to my boss breaking the news to me.

Good to see you back, Henry.

Yesterday I had leftover California Blend, broccoli, cauliflower and baby carrots, with butter for lunch. For supper, I made a soup with leftover grilled meat, rutabaga, onion, tomato, and mushrooms, simmered in homemade chicken stock.

Nita, it is good to be back home, if only for a couple of days. However, I leave Thursday for a 4 day business trip and will have to make do on the road without a kitchen this time, but I have located some restaurants where I will be going that have low carb options so it should not be too bad. Breakfast was an omelet w/onion, celery, jalepenos, meat, & cheese. Lunch was a caesar salad and a chipolte seasoned steak burrito w/onion, celery, & green pepper. Dinner was a lettuce salad w/roma tomato, green pepper, cucumber, green onion, & stuffed olives and italian sausage, green pepper & onion in a light marinara sauce over Dreamfields linguini.

Henry, sounds yummy.

I made an egg/avocado/tomato salad, but it sure needed onion. We had it with crisp bread (all fiber). For supper we had green beans with my experimental corn dogs, using the corn bran I bought. For a snack, I had some ricotta cheese with dried blueberries I had hydrated, and a little Splenda.

I had my little yellow apple, and a nice big salad....one of those with avacado sliced over it. Probably 4 servings. Not bad for a day like this!

Dinner was a lettuce salad w/roma tomato, cucumber, green pepper, green onion, & stuffed olives, grilled steak, mushrooms sauteed in butter & sherry, and shiritake in e-z alfredo sauce.
