I had coleslaw with pork ribs I baked all morning while I was at work. For supper we had reruns on the pork, finished off the coleslaw, and split a roma tomato and an avocado.

Interesting thing about the pork, I chopped it and put it in a skillet to heat, planning to pour a little lc bbq sauce on it. Got out the bottle, poured it on, and discovered it was my Walden's chocolate sauce! Yikes! I tilted the skillet and spooned out what I could, then dumped on some of the REAL bbq sauce, and, believe it or not, the pork turned out really good! Now, if I could just count the chocolate as a veggie, I'd be all set.

I had broccoli for lunch, leftover soup for supper, with onion, tomato, rutabaga and mushrooms. I am thawing strawberries for my evening snack later tonight. Red, green white, dark yellow. Nice color combo.

I had my usual apple at lunch, then a nice salad for dinner: Romaine lettuce, "taco meat", avacado slices, red onion, a sprinkle of cheddar cheese, and some Ranch dressing. Yum!

Tonight will be more spinach with salsa on top and then fruit will be a biscotti bar (in my exchange it counts as a fruit and one of my starches - yea!) and then 2 other servings of fruit juice. Lots of color today!

Yea Nita! I read that to my dh and let him know because he hates his fruits and veggies. I told him that I don't have a job, little children and he needs to take care of himself because it means that he is taking care of us. I love him so much and know that what you eat is so important. So today for lunch dh is going to be eating a spinach salad. He said he would. I'll be feeding him some pears today too.

I had some blueberries in my breakfast muffin.

I had coleslaw with my lunch, and finished it off with supper, plus a roma tomato. I had bean sprouts and mushrooms with some leftover pork, cooked through.

Breakfast was a couple of egg McMuffins w/o the muffin. Lunch was some steak w/sauteed onion, green pepper, and celery in lettuce wraps. Dinner was roast pork, curried cauli-rice pilaf w/onion, celery, and mushrooms, and green beans w/onion & tomato.

I had a spinach omelet this morning.

Lunch out was a taco salad sans the shell. I had a few chips, though....the salsa was amazing!

Dinner was vegetarian: broccoli-n-cheese, and half an avacado.

Also, a piece of Key Lime Pie. Lowcarb, of course. And homemade.....by me.

Between the cheese on my omelet, in the salad, on the broccoli, and all the stuff in the pie, I've had WAY too much dairy today!
