GREAT idea!!! I know a lot of my friends still have the idea that I don't eat vegetables and fruit, when in fact I eat more than they do!

However, I need to be accountable for eating enough veggies at every meal, not just for dinner. So, I will try to post here every day.

Let's see...yesterday I had:

Leftover crustless quiche with broccoli, peppers, a bit of onion and sundried tomatoes for breakfast
Celery and a few baby carrots for a snack; the celery had a dab of almond butter
Lunch was tuna salad on a bed of greens
Steak for dinner, with fresh green beans sauteed in olive oil and garlic; salad with blue cheese dressing, and fresh blueberries with Splenda and a drizzle of cream for dessert

I guess I did pretty well, after all!

Cool idea!

So far ...

Scrambled eggs with home made salsa and a sprinkle of grated cheddar for breakfast.

Currently noshing on a couple of stalks of celery, 1/2 a cuke and 1/2 small zucchini cut in spears, with blue cheese dressing for dip, as part of my lunch.

Tonight I'm having stuffed green peppers which, in addition to some meat, include garlic, onion and tomato. ... and a salad.

Couple of weeks ago, the Office of Court Administration went around and took new photos for our ID cards. It is the first ID picture (of ANY kind) I've ever had taken that I liked and they were nice enough to send me a digital copy.

Hello! I've had four cups of mixed greens with 1/4 tomato wedge as part of my antipasto salad for lunch.

And, I agree, Maggie, that is a nice picture of you. Gorgeous hair!

OK, I'll play. This morning with my tea, I had a bowl of raspberries and blueberries with splenda and heavy cream. I had a handful of celery sticks with my egg salad for lunch.

tonight I'm looking forward to a big pile of broccoli and cauliflower with butter, which will make up my remaining 3 servings, and be accompanied by chicken cooked on our brand new grill. YUM!


One of my favorite ways to get veggies is to make a cobb salad. This thing is a meal in itself with bacon, hardboiled egg, cheese, turkey, and then all kinds of salad stuff--tomatoes, mushrooms, peppers, all on a big bed of greens--right now it's mainly spinach with a little iceberg thrown in for crunch. THis is one of my most satisfying meals, and is a delicious way to get in at least 4 servings of veggies. Sometimes I tweak it a little and call it chef salad, but its the same principle.

So far today Ive had (its 129 pm here) 3 bottles of water, 3 cups cesear salad(full fat dressing) with parmesean cheese and sliced chicken.. very good...

S - Cuke slices and a few baby carrot sticks. (1 serving)

L - Romaine & spinach salad w/ cukes and blue cheese dressing. (3 servings - it was a BIG salad!)

Looks like I'm almost there.

I went and looked up a serving size and it was small! Especially the leafy greens. My lunch salads are generally 3-4 cups and the site says that 1 cup is a serving!

Tonight we'll be having broccoli and I was going to have some berries also. I guess I'll be over

But that's the kind of "over" we want to be.

Good idea Andrea! While the naysayers are looking for the bacon and beef forum they'll run across this one!

Let's see-2c romaine lettuce, 1 roma tomato, 2 ounces cucmber, 1/3 c chopped onions, half a yellow bell pepper, and an unknown quantity of mushrooms. Oh and 1/4 cup of canned tomatoes.

my day -
3 c lettuce (yes, just iceburg - but btn)
1 large cucumber
broccoli side dish
1 c romaine lettuce

and tonight will be cutting up my broccoli & cauliflower from yesterday shopping.
