| | Low Carb Meals Are Not Boring!It is even better than I thought! I fried onion and mushrooms in a little bacon grease, then added some of the left over cauliflower (that was kinda like rice) in a cast iron pan. I let it brown a bit and was that ever good! Even better than real home fries! |

We practically lived on brown rice before I low carbed, especially when we were broke, and white rice way too often when we were in a hurry. That and pasta. I don't miss either one, because I put things on veggies now, or as you said, salad. S |

| | Putting Things OffYep, I thought about! I am commmitted to lowcarb straight through the holidays with no more bumps in the road-- one goal is to be closer to 200 pounds before I turn 50. At 30, I was busy and stressing out with work, (big change eh?) so I put it off, at 43 was pregnant, now here I am. I have gained the 10 pounds per year of stress eating fat that many teachers do. So i am not putting it off any longer. Same thing with the farm/homestead. I put it off so long that I almost waited too late. Now I am preparing for the big move and almost screaming with frustration because I want it NOW... and the waiting for the right time part is agonizing. Your blogs are always full of insights and encouragements. Happy Thanksgiving (hard to believe THAT time is already here). |

| | Confessions of a Carb Addict...I started Atkins back in 01 and over a year, found out exactly how it works for me. I've adjusted here and there to make it work for me. I'm not sure what program I follow now other than it's LC and it's livable. Is there something about the Carb Addict Diet that I should look at? |

| | Food Between FriendsI know how you feel, Kat. The hard part for me is that sometimes people are not as encouraging as I wish they would be. A few actively sabotage, a few make negative comments, and others look at me like I have lost my mind. If the subject comes up, I get some pretty harsh lectures about the DANGERS of my new lifestyle, and questions about when i will come to my senses and get off my DIET and do something sensible, like eat all whole grains, Weight Watchers, or Veganism. (Well, as a former farmer and hunter, THAT one isn't quite as likely to come up with close friends. ) I have to re explain that it's not a diet, and its not unhealthy-- especially for me, and that the AHA super low fat diets don't work and haven't been shown to actually reduce anyone's weight or cholesterol, or heart disease. Then there's the whole-- I quit DIETING about 20 years ago and do not plan to ever begin again; but I am committed to a low carb lifestyle because it is healthier for me. I finally gave up on a lot of people, and when they offer me something with sugar, flour, etc. I just say "oh, I am so sorry but I have some special health problems. "That looks delicious, but it would make me very ill". Not exactly a lie, either. It seems to be easier to be thought a poor freak with some bizarre disease than to explain that they would probably be better off without the food themselves. I find it easiest to invite people to my house to eat, either I cook the pasta, potatoes, etc. and just don't eat any, or I offer what we eat and people are pleasantly surprised at how satisfying it is. I seldom do the pasta thing anymore, because everyone who comes over likes the meals I make for us, even though they don't choose to eat that way at home. As for going out for dessert, I do coffee. Being in a college town, we have coffee shops (with overpriced coffee) on every corner. I order something that feels decadent (Latte made with steamed cream instead of milk and a shot of sugar free Toroni- skip the whipped cream) and really enjoy it. If they want to eat a brownie or a croissant or something else, I just remember that I used to get sick after I ate them, and that I am saving $3-6 bucks by not ordering it. If I am really good, I just order regular coffee with cream and we talk a lot. Sad how some of our friends and even family members can't just accept us as we are. I always want so say "Why is my NOT being obese threatening to you? Did you like me to be fat so you could feel better about yourself? Lol, I certainly make most of my friends look MODEL THIN. I keep my mouth shut at least. |

Rabbits, goats and sheep. Several of my closet friends are also spinners. Maybe you'd like to check out this site and go to their goat forum Homesteading Today. Don't go today! They have been down all day.....probably being attacked. But there is a lot of info there on homesteading and whatever you need to know. katlupe |
