Greetings all!
This is my first ever blog so forgive me but I am really excited. So, a little about me - I am a 32 yo wife, mother and 2nd year PA student. Like many of you my goal is far greater than just to lose weight, I want to not only be healthy but I also want to be a healthy example to my patients and family. I am about 100 lbs overweight and hate it! I have finally begun to feel the effects of my weight that I never noticed in my twenties. It began with my knees -they're killing me, they creak moan and groan more than the stairs I climb every day and hurt constantly. My energy is at it's lowest, I am so drained by the end of the day that I have no energy for my family and often come home and sit on the couch like a zombie staring at the TV for 2 hrs before I can motivate myself to do anything. Finally, I feel like a hipocrate as I talk to patients about their weight, diabetes, hypertension and high cholesterol when I know that I am in the very same boat or will be very soon if I don't change something. How do you tell someone they need to lose weight when they too can obviously see that so do you? I can easily empathize with my patients about their weight and the struggles they endure but I know I will be more effective in helping others if I actually set the goal and achieve it. I want to show them that they can do it too!! So, my absolute mission is to lose the weight, track my progress, reach out for support and inspire my patients to do the same. Sound reasonable?
Well, I have tried every diet in the book over the years but what I know always works for me is the Low-Carb way and with all the new options & substitutions out there combined with the great support of forums like this and all of you, I know I can do it

OK, Now That's Funny!

Hey Everyone! I've been busy as a bee - I started my job on April 28th and I have been going, going, going. I keep checking in though and seeing what everyone is doing and posting. Apparently, someone has noticed this as I saw a message today when I logged on that said I haven't been posting but been lurking - LOL LOL - that really cracked me up! It was one of those moments where I found myself looking over my shoulder and saying "OMG, someone's watching me!" I totally am a lurker, I love to see what everyone's posting but often log off without posting my own update. Alright then, so I've been officially called on my lurking ways and will try to post some more . So, the scoop here is I have been sticking to the low-carb life but haven't gone back to induction which I will eventually do but as of right now straight up LC is actually working fine. I've lost 3 lbs since last time I posted. Not exactly rapid WL but that's not all I'm in it for anyways so that's alright with me. I feeling pretty darn good lately and that delights me. I recently found a yummy find at the grocery store - Low Carb Pita Bread called Joseph's Flax, Oat Bran Whole Wheat Flour Pita Bread. It is a soft pita bread that is very yummy and only has 4 g of Net Carbs per pita. I made a very yummy jazzed up egg-salad sandwich with it for lunch today. This entailed 2 chopped hard boiled eggs, 1 tsp mayo, 1 tsp spicy mustard, salt & pepper mixed together in the usual way. I then scooped this onto the center of the pita and topped with thin slices of red bell pepper, a few slices on red onion and some romaine lettuce. I then folded it in half and packed it in a baggie for lunch today. It kept very well - the pita was not a bit soggy, the veggies stayed crisp and it was a very filling meal for lunch. If you haven't had this yet, you've gotta try it! I bet it would make really yummy low-carb pizza too.

I've been trying to get in the 8 - 8 oz glasses of water a day - some days that works out and on others it doesn't - instead I'll find myself downing 4 diet pepsi's then trying to squeeze in 2 bottles of water before bed because I'm so thirsty for water. Has anyone else ever done this? Ughh - well don't start - it's terrible. I find myself having to get up in the night to go to the bathroom or wake up in the morning after a terrible night's sleep with a bladder that is ready to explode! That is getting really old let me tell you so I'm halting all water at 9 pm from now on in hopes of better rest! I did drink my water today though so I am on track.

DH and our little girl planted 6 tomato plants today and we'll add some pepper plants this weekend. We had a great crop of fresh tomatoes last year so I'm hoping for more. There is nothing like home-grown, red, plump and juicy tomatoes in the summer! We've also got some blueberries growing for the first time and I pray we get to enjoy them before the birds do!

The weather here has been incredible - the skies are crisp blue and full of fluffy white clouds, temps in the mid 80's, soft breeze and wonderful. Everyone is talking about summer and how hot it will be. Here in Savannah it get's pretty steamy by July/August and everyone starts wilting by mid-day and I'm sure this summer will no different but I will not complain. We live about 45 minutes from the Tybee Island beach so we'll probably make a few trips out there. It still seems funny to me to have to drive that far to get to one - I grew up and up until 2 1/2 years ago lived in Daytona Beach area where it only took 10 minutes to get there. What is crazy is that once I was married and working, I hardly ever went! Well, I think I've said enough for now and likely satisfied the lurky fairy that watches over me. Karen-If it helps your peace of mind, the message is actually automated and nobody's watching you specifically...LOL...we love our lurkers too! (Well, mostly nobody watches. I do wonder what people are up to when they don't post for a while, so I'm still glad you did!)

That pita sounds great! I've been using another kind Rob mentioned in the product review forum and really like that, but it is higher net. I'll have to keep an eye out for your brand.

Enjoy that garden. Sounds like so much fun, and what a great father-daughter activity.
