So supermodelskinny you are VERY wrong. Lots of people care about what I write and about my low carb diet. I write a blog and this is one of my biggest topics that readers ask about. The low carb way of eating! <br />

It sounds to me like supermodelskinny is VERY down on herself. She is depressed and down about her own self. Whether she is skinny for real or not. Her life is pretty empty if she has to come to a low carb forum and make comments of that caliber. <br />
<br />
I do not like it that she was able to leave a comment like that on my blog. But it didn't hurt me. I reported it. For one thing it said she was not a registered user. So I will take a look at my settings to see why she was able to leave a comment. <br />
<br />
So did anyone else get nasty comments from this so called skinny woman? Skinny doesn't mean you are healthy. It could mean you are a mite skinny between the ears as well. :reddance:</blockquote>

They moved into the city in an apartment to be closer to the hospital and so it would...]]></description>
			<content:encoded><![CDATA[<blockquote class="blogcontent restore">Wow, I can't believe it's been nearly TWO years since I last wrote in my blog.  Sheesh.  So much has happened.  Shortly after my last entry my mother got sick, colon cancer, and I looked after her and my father.  They moved into the city in an apartment to be closer to the hospital and so it would be easier for me to look after them.  She passed away August 2009 and I miss her everyday.  My father sold the house and is now living in a home about 30 minutes from me, he's happy there and I'm happy he's there.  <br />
<br />
My oldest daughter finished grad school and moved back to this city, lived with her boyfriend (a real loser), lived with us for a while and then moved out with a friend.  My youngest is nearly finished school!  Hurray!  As soon as she graduates she and her boyfriend will be moving halfway across the country.  I'll be sorry to see them go but there will be many better opportunities for them in their fields up there.  The house is empty now except for hubby, myself and our dog.  We do see lots of friends and family especially on the weekends.  I can't believe how close hubby's retirement is!  October 2012!  He only has 3 more Arctic trips left.  It's pretty good when you can count your working time left in shifts.  He works 4 weeks on and 4 weeks off so that makes it seem so very close.  We've decided to sell this house in the city and move into our other house in the country.  I love it there from spring to fall but not so much in the winter.  As soon as he retires we plan to spend the winter traveling.  <br />

I've pretty well been sticking with low carbing, but have fallen off the wagon too many times to count.  I've been successful for the most part in controlling blood sugar levels with diet.  Hurray!  Still not back on the meds!  My recipe collection has expanded greatly!  I only cook low carb now, anyone who doesn't like it can eat somewhere else.  So there!</blockquote>

I have truly stayed on it one hundred percent and that makes you feel proud to have been able to do that if you were tempted by other people or just being starving. I have to admit though, I am not that hungry anymore.<br />

So check it out and tell me what you think. I plan on writing about low carbs once a week or so. Maybe every Friday or something like that. If you would like me to research something of interest to you just let me know here and I will see if it something I can do. This week I am thinking of addressing the sugar issue.</blockquote>

I have now been back on my low carb eating plan, better known as Dr. Atkins and I have completely re-read his book. I truly love that man. I wish I could tell him that. He was so clear in his books explaining all the details of this way of eating to us. <br />

I am already feeling better in my first two weeks. I know I have lost weight, and I feel confident that I am off and running......once again.</blockquote>

The problem with me being sick is that I don't stick to my food plan very well because I don't want to go to the store. So I end up eating foods I normally will not touch. So it is my own fault.  I know I could have the ingredients on hand for some low carb soups and easy foods that I can just throw together.  I didn't do that and I am mad at myself for not doing it.<br />
<br />
I am just taking it day by day with my cold and hope I get over it soon.  I am working on sticking to my low carb food plan because I need to for my health. I had just gotten my husband ready to change over to the low carb food plan when we both got sick. So back to that. He is really ready to do it. <br />
<br />
So off I go now to take stock of my pantry and see what kind  of low carb meals I can make for the next couple of days. Still don't feel like going to the store.</blockquote>

What did I buy? <b><i>Ice cream, cookies, sugary cereals, lots of soda and candy.</i></b> My then husband would take us out to eat and then we'd  stop at the store on the way home and we'd pile the cart up with all kinds of goodies to eat while we watched television. Oh my gosh, just writing it makes my skin crawl! :eek: Yes, I did that!! :eek:<br />

We did eat salads, meat, vegetables, fruit.....lots of fruit, as I have always craved it (have to just be satisfied with berries for now). I never was one for buying processed dinner type foods. I have always liked to cook and prepare from scratch. But those snacks! And after eating a heavy meal with appetizers and desserts in a restaurant! Is it any wonder my ex-husband is in the hospital with diabetes and is in danger of losing the fight???? Been there since December 14th. So it is serious. <br />
<br />
I haven't eaten that way in many, many years. He stayed that way. So when people hear me refer to sugar as poison they may smile....<b><i>but I mean it.</i></b> I have ways of substituting. I buy the Russell Stover's Truffle Chocolates and if I crave chocolate candy I will eat one of them. I know! One sounds like so little, <b><i>when you used to eat a whole bag of Reese's miniatures</i></b>! I thought that too...till I started doing it. It really satisfies my cravings. A little bag can last me the month because I forget about it. Never forgot there was a bag of chocolate candy in my pantry before! I thought about it all the time until it was all gone. :faint:<br />
<br />
DaVinci Sugar Free Syrups are a life saver for me. I love the egg creams (basically it is a ice cream soda without the ice cream....Fox's Chocolate U-Bet syrup was a must) that are so popular in the Bronx &amp; Brooklyn  soda shops. So for a treat I have been making my own every now and then. Put some syrup in the bottom of the glass (I love strawberry or peach the best!), put a dab of heavy cream in and stir together, then fill the rest of the glass with seltzer. Mmmmmm! Love it! :nod:<br />
<br />
There are many ways you can make the special treats you used to love. Just keep trying different versions till you hit on the one that is within the limits of your carb plan and that taste good. You will look forward to trying new things and won't even miss the ones filled with poison (sugar!). :reddance:</blockquote>

I've come across a few fortunate souls that discovered LCE at the beginning of our weight journy, but I suspect that most of us have tried and failed at many diets before discovering this way of life.  As I read posts and talk to people in the non-virtual world, I keep hearing about how hard it is to low carb when spouses and children are constantly consuming carbs, junk food, and sugar, sugar, sugar.  I don't want to sound self righteous, because I have to struggle daily with the carb and sugar issue myself.<br />

I would say that almost everyone who has adopted a low carb way of eating feels better mentally and physically, whether or not they have lost weight.<br />
<br />
So, why do we continue to feed our families junk that we wouldn't eat ourselves?  <br />
Free will, for one thing! As Kat said in her recent blog, you can talk yourself blue in the face and people won't change until they feel a need.  Been there and done that myself.  I will be fighting that sugar battle for the rest of my life, I suspect.<br />
BTW== I don't mean to be sexist, Men are wonderful cooks, and the men in my family were the main cooks... if I seem to be talking to women it is because most research I see shows that women, working or not, are still mostly responsible for cooking, shopping, menu planning, and food choices.<br />
<br />
Husbands, wives, siblings, parents--- all have their own battles to fight, and we can do best for them by modeling good choices and showing how much healthier and happier we are.  However, the person who does the shopping and cooking makes a huge difference in what is eaten in the household.<br />
<br />
Years ago, before I restarted low carbing I realized that if I asked my husband if he wanted vegetables or just meat and pasta, or meat and potatoes, he would choose meat.  If I just cooked the veggies and put it on his plate he ate them without complaint.<br />
<br />
We usually shop together, but if I don't put any junk food in the cart, he seldome does either. <br />
<br />
 My son was astonished when he went to school and saw what people put in their kids lunchboxes or what was served in the cafeteria.  He had never been around junk food and was used to eating his vegetables.  He was a total rice and pasta junkie though, because when my husband stayed home with him that is what they liked for breakfast and lunch!  But, Daddy was really conscentious about also adding fruits or veggies, even if canned or in those little baby food packets.  <br />
<br />
My son and dh are both naturally thin, they have to struggle to keep calories on, not off (at least till age 45 lol).  but they have gradually started eating low carb with me.  My son still loves spaghetti, but he doesn't complain if I serve his favorite sauces over veggies sometimes.  The thing is, if I give him a choice, he is like his dad-- he will prefer the high carbs.  It might be a bit sneaky, but I just don't offer choices most nights of the week and they eat it and feel better.<br />
<br />
If you live with a junk food junkie, try not buying it for them.  Provide alternatives:  cheese, fruits, veggies, cooked chicken or steak bits, my son loves multi grain fiber crackers ( about 7 carbs- WASA brand) with feta and tomatoes for his after school snack.<br />
Any teenagers or men I know would eat healthy stuff rather than actually drive to the store themselves and buy junk food!</blockquote>

You see he does not need to lose any weight. He is VERY active so no need to worry there either. But he loves his sweets, chips, regular milk (though I really can't see him giving that up), bread, potatoes and that would be about it.<br />
<br />
Now I am working on our menus. He loves my meals of meat and salad. So that is where I will probably start. Luckily he is not big on pasta. In fact, red sauces seem to bother him later after he eats so I haven't been making much with red sauce anyway. I have a recipe for noodle-less lasagna from my Stella Style book. A recipe for low carb chili from Dana Carpender and a low carb pizza that I found online. So those are basically the only red sauce type foods I would be making anyway. <br />
<br />
The DaVinci syrups have made my life easy as far as sweets go. My son is living with us and he has cut out most of his bread already on his own. His biggest problem seems to be the amount of sugar he uses in his coffee....which he drinks nonstop all day long.:scared: So I am hoping when he sees his step-father feeling better and enjoying his meals more that he will start working on his sugar intake also.<br />
<br />
I can tell people until I am blue :blah: in the face about the advantages of a low carb diet and they just shrug it off. Next time I see them, they are in worse shape and complaining about how they feel. :faint: You truly cannot make people eat right if they don't want to. They just have to suffer and some never do catch on. I see it in my own family. If they would just eliminate at least one thing at a time....say like sugar. Then white flour products, subtracting more of the bad carbs little by little. I think they would see and feel a big difference in their selves.:yippee:<br />

My in-laws ate horrible. My MIL was a diabetic and a nurse (Bad Combination!) so she would adjust her insulin herself. She felt she could eat what she wanted. So she ended up losing both of her legs and by then, she didn't have much of an appetite left. Now my FIL is 90 and he complains how he feels bad all the time (and has been this way for years now). He used to eat 2 apples for breakfast and nothing else all day until dinner. Then he had a big evening meal with desserts. They were big on desserts. He keeps candy and snacks on hand and snacks on them whenever he wants. Now he is not eating the big evening meal but sandwiches or take out. He is constipated and has been this way for years.:confused: I can easily see why.  <br />
<br />
My ex-husband who was always a big eater, loved his coke and snack foods and ate out probably six times a week (No kidding!) is now in the hospital and has been there since December 14th. He is diabetic and his kidneys are in distress. You could never tell him. I tried to get him to just walk around the block in the evenings.....would he do that???? You guessed it! No way! :eek: I went five days a week to local tracks to racewalk and he never went with me even once. So it does not surprise me that his health is jeopardy now. It does come back to you if you do not pay attention to it when you can. <i><b>Though it is never too late to do something about it.</b></i>:reddance:</blockquote>

I started out at 282 lbs and I am now 189 lbs. I want to lose about 40 more lbs my goal of 150.<br />
<br />
I have unfortunately hit plateau, so a week ago I started Induction again and so far I've lost a little bit of water weight and I'm hoping it will kick-start me into losing the rest. <br />
<br />
Also, for the fist time in my life, I'm active. I started going to the the gym in Feb. 2009 and I still go at least 3 times a week. I even have a trainer!! :yippee:<br />
<br />
I'm very excited and proud of myself for what I have accomplished over the last year. :applause:<br />

That just didn't seem to appeal to me so much. So I experimented in my own kitchen and have been using almond meal and flax seed meal to coat chicken or fish or anything that needs coating. Last night we had oven fried chicken using a mixture of both for the coating and both my son and husband loved it. They are both very critical. I have also been using coconut flour to coat chicken instead of flour. It works well and my family loves that flavor also.:reddance:<br />

Today I made a meatloaf that has been simmering on our wood heating stove all day. It smells so good! I made it using almond meal, eggs and some heavy cream with the ground beef. I think it is going to be a hit too. What I find is that when you are looking for low carb replacements for the high carb ingredients.....there are many. They add more flavor and nutrients to whatever you are preparing.<br />

Planning meals seems so much easier if you are planning it around the meat. Since that is a low carb staple, I just add the vegetables and other items around that. I think that is why my husband encourages me to stay on the low carb food plan. He likes it and the food I prepare now much more than before. He could live on salad and meat. We used to eat a lot of potatoes, rice and pasta. Now even he does not miss those foods....actually he told me he never really was crazy about the rice or pasta. So I am having a good time preparing our low carb meals.<br />

I do make him pies or other desserts occasionally. Tomorrow I will be baking cookies to take to his Dad for his 90th birthday present on Saturday at a big party we are going to. It will be in a restaurant and neither one of us was looking forward to that. But I have come up with a good strategy. My husband really only likes to order breakfast in restaurants and it just so happens this one serves breakfast all day and that is what he is planning on ordering. So I am going to order an omelet and a salad myself. Perfect and nobody will really notice. In fact, that is a meal I really love.:clapping:</blockquote>

			<content:encoded><![CDATA[<blockquote class="blogcontent restore">Here it is January, and most of us are looking to renew our commitment to low carb eating, losing weight, etc.  Even if we didn't crash and burn over the holidays.  For years I hated January because of the New Year's Resolutions, weight loss plans, quick diet news, fitness promises, and the endless sales of stuff to organize, lose weight, clean up, etc. etc.  It seemed false to only worry about it in the beginning of the year, and I had so little success anyway-- why make a resolution to lose weight and end up gaining?  That's what usually happened.<br />
<br />
If you've read any of my posts or blog, you know that LIVING LIFE FULLY, RIGHT NOW, not matter what weight I am, or what else is going on, is a frequent topic.  How many fun things did I miss because of waiting to &quot;get it right&quot; before I could let myself live?  <br />
  Just a few:  no shorts till my legs were thinner, no kid till I had enough money, no Country dancing till I looked better in tight jeans, no swimsuits ever, no short sleeve shirts in 110 degrees because my arms were fat, no decent clothes till I could look better in them..... the list is different for everyone, but it is usually there.<br />
<br />
How many times do we also put our families off till we have &quot;more time&quot;?   Songs like <br />
&quot;Cat's cradle&quot; and that new country western song about getting your priorities straight tell it all, though they usually are aimed at workaholic men.  Guess what?  Women do it too.  I am still amazed that my DH stuck with me during the childless years when I so often put my work before him.  I didn't mean to, I SAID i thought he was more important, but FEAR of failure at work and lack of organizational skills due to ADHD meant I stuggled constantly just to keep my head above water.  The principal used to buzz my room at 11:00 pm and make me go home to my husband.  I tried to tell her she needed to do the same.<br />
<br />
I have been better since my son was born.  It was a real wake up call.<br />
<br />
This week something happened to remind me again, just in case I  started putting him off.  It is so easy to say &quot;Sure, honey, I'll go with you to ride your bike, just let Mommy fold the clothes, put another load in, cook the dinner,  clean your bathroom, grade these papers, etc. etc. etc. &quot;  How many times have I done this and then dropped down into my bed, half dead, and realized that we never made it to the bike ride?<br />
<br />
On Monday night my teaching assistant and her little girl were on the way home after school, when a teenaged girl ran a redlight and &quot;t-boned&quot; their car.  The girl was texting, and speeding, and ran right out into the middle of the highway, with lots of traffic.  Miraculously, only 3 cars were hit.<br />
<br />
My assistant's little girl, had to be airlifted to a major city, 45 minutes away to the trauma center.  She wasn't expected to make it.  My friend was taken to another hospital, with no way to find out what was going on.<br />
<br />
The short version is that the little girl survived the flight and the brain surgery, but is still in a medically induced coma.  All they can do is keep her alive and comfortable, and hope she wakes naturally when she is ready.  I was rushing my so to get home that day so I could do chores, I actually fussed at him about going back twice to give his friend Venice (the inujured girl) another hug goodbye.  I am so glad he did, it might have been his last chance.<br />
<br />
If you read this, please pray for Venice and Rosy and their family.  Please don't text, talk, drink, or read the paper and drive, and please, please, please wear your shorts, dance, laugh, be IN the pictures, take the night class, go to the fair, give the hug, ride the ride, look silly, color your hair, or whatever else you wanted to do but didn't, and tell them all how much you love them as you spend time with your friends and family.</blockquote>

I wake up with a confident attitude instead of being depressed or down because of the weather, work or other people's moods. Other people's moods can really affect you. Like my husband always says, &quot;You are your environment.&quot; So if you are around depressed, pessimistic people than that is what you will start being. Not me! Life is too short to waste my time on self pity. I am who I am and I strive to live life to the fullest I can. :reddance:<br />
<br />
One simple thing I have started doing is to declare to everyone, I do not eat sugar. I do not eat white flour products. I do not eat processed foods. I do not eat potatoes, rice, carrots or any other high carb vegetables or fruits. Then when they take out a  pan of brownies, a gallon of my favorite flavor of ice cream or a blueberry pie..........I look at it like it is a food I hate. They don't feel so inclined to talk me into taking a bite or &quot;just a little piece won't hurt you&quot; speech. In fact, they might not feel quite so excited about eating it themselves. Especially after I explain what sugar does to you or how many people I know who have suffered because of eating these same treats. :scared:<br />
<br />
If you just take on the role of being a true &quot;low carber&quot; then nothing will get you to eat even a tiny bit. I know I have cheated and eaten foods not on my plan, sometimes it leads to going off my low carb food plan for a couple of weeks or more. The one thing I can count on though is that I will feel horrible again. It just makes me so uncomfortable to eat that way and I know it is the high carb garbage that is making me feel that way. Think of your body as Anthony Robbins says, &quot;as a temple.&quot; And only put foods in your temple that are worthy of it. :clap:<br />
<br />
I have been watching my own son, who has recently come to stay with us, adding several teaspoons of sugar to each of his many cups of coffee every day. I bite my tongue. Just like I did many years ago when I was married to his father and he ate very unhealthy and did absolutely nothing physical. Now he is paying for those mistakes in his early sixties. My son does not have a weight problem but needs to work on his health and knows it especially in light of his Dad's problems. So today I got up to find he was not adding any sugar to his coffee at all. One tiny step for his Mom! :cheer2:</blockquote>
