I have been feeling very good since I am eating healthy now. Though I am concerned about my protein intake. I am not positive that I am taking in enough. I was never a really big eater.......just ate the wrong things. Lots of potatoes, rice, chips, soda, homemade goodies and chocolate candy are my dangerous foods that I loved. Not in large amounts though.


Since I am not eating bread on my burgers I made two for me also as that is what my husband eats too. Of course, he eats his with the bread or roll. I could hardly finish my second one and had to share it with Nikita, my dog. I have done great on the low carb part keeping it at 20 or below for my first two weeks.

We only eat two meals a day and maybe that is where I can add some protein. After breakfast I just don't get hungry until about six in the evening. Our breakfast is usually later in the morning after chores are done and we are having coffee and working on the computers. Then I get to a point where I need some food. So off I go to the kitchen.

I have to admit I think I went through my whole food budget for the month already! It is expensive for me now buying meat so regular. I had really cut back on it and we were eating more beans and rice type meals or pasta. My husband recently admitted to me that he loves my low carb eating because we are not eating those type of foods anymore. He said he hated the beans and rice. Pasta is so so. He'll eat it but it's not a favorite unless it has sausage and ground meat and some real cheese in it. I can make it really good and tasty, but not if I am low on my budget. So I am working on bringing in more money this month to increase our budget, which needed to be done anyway as the prices in the stores have gone way up.

I am working on my low carb cookbook so that I can have my recipes handy and the ingredients can go right on my shopping list. This morning I have also been changing some favorite recipes into low carb ones to try. It's basically a matter of changing the starchy vegetables to low carb ones and not thickening the sauces with cornstarch or flour. Shouldn't be too hard to do.
