Special Thoughts Today

Yesterday I spent most of the afternoon with my wonderful father, whom I still call "Daddy". He will be ninety in May this year. Looks more around seventy and is more like sixty in his activity. He is always working on something but most especially on some kind of motors. Like snowblowers, rototillers, lawnmowers and also his car. The nearby junkyard employees know him well as he goes there all the time to get parts off junk cars.
Every year he has a huge garden and cans his famous homemade pickles of which he wants to show me how to do this coming summer so the recipe will be carried on. It is a recipe my mother and he developed themselves and is very good.

It was also a bittersweet day as my father and I looked over his will, health care proxy, living will and power of attorney. His visiting nurse who comes to oversee his medications weekly needed to see his health care proxy and he had misplaced it. He found it while I was there. He is diabetic even though he was never overweight in his whole life. His brother and sister both had it and were a bit overweight but not obese. So it does run in his family, which is what made me get started on my low carb journey and back to good health goals.

I had run low on my food this week but kept to my plan. So I had a couple of days where I did not get much protein. Instead of eating all the high carbs that I have stored in the house I managed to spread out the eggs I had left. I ate some hard boiled ones for supper two nights in a row with canned asparagus. The funny thing is before when I would get low on food I'd be starving and eat about anything I could dig out of the pantry. Including beans. I have lots of beans and rice stored. Not this time though. I was just not starving. My husband refused the beans and rice too. I did make him a lentil soup that he ate but did not fill it with alot of lentils. He wasn't crazy about it so I think I will be changing the supplies......excuse me! I meant to say...... I will be changing the supplies kept in our pantry! I am going to change him over to the ongoing maintence food plan of Dr. Atkins. My husband is pretty good about eating low carb recipes and doesn't complain as long as it's good and he can have lots of it. So he shall!

On a side note, today is my son's 39th birthday! He is a Valentine's Day baby! I can hardly believe he is that old. He lives about 35 miles away in a nearby city. I won't be able to see him but hope to call him. If I can't reach him I will have to send his birthday greetings to his myspace page. He has no weight problem at all. Is 6'5" and very slim. Smokes though and I worry about that constantly. Also has Epilepsy and takes a strong medication for seizures which works. One time he just stopped taking it and almost immediately I found him out in my backyard laying on the ground! I freaked out of course. We got him inside and he never did that again. I have seen some relation in my books and online to low carbs and Epilepsy. I will be researching that pretty soon.

Well I'm busy today getting more of my programs into my new laptop, which is a job I just hate. We have dial up only here and even with a bigger computer it takes a long time. Soon I'll be back to normal.
