The One Minute Muffin Cooked On A Woodstove

The past two days have been very hectic for me around here. I am working on two websites. My own and our church site and that is more complicated than it sounds. Lots of work needs to be done on it and I am also learning how to do the video editing of our pastor's sermons. We also added a store to their site so that maybe the sales from that would cover the cost of keeping the site going and also the film and dvds. We created alot of work for ourselves when we gave them the idea of having a website. Proud of it though. So I'd say it's worth it. Today I had to go meet two members of my NY Homesteading group in a little town about 25 miles away. We like to shop together at a Mennonite store where you can buy foods in bulk. Our store is a favorite of our's and you can get some good deals there. You can buy your supplies in fifty pound bags if you use that much. Some of the people in our group buy the wheat berries and grind all their own flour. Fresher that way. They did try to talk me into going to lunch with them but I stuck to my guns and said no. Besides I ate bacon and eggs for breakfast and when I eat that I am not hungry all day.
I FINALLY made my very first OMM! It was awesome!
I followed the recipe except that I used half almond flour and half flaxseed meal. I also mixed it up in a separate bowl first. Beat the egg real good then added the rest of the ingredients slowly. Oh one other thing I did differently was to cook it in a pyrex custard cup that I placed inside a Dutch oven sitting on my wood heating stove. That is the closest I am getting to a microwave oven. It baked real fast. I always refer to that stove as my microwave because it is that fast. I will be trying some of the variations I saw on the thread on the forum here. In fact, I printed it out. You can never have too many recipes because that's what keeps this LCE fun and interesting.
