Lettuce And Greens - A Low Carb Favorite

I am getting lettuce and greens from my garden daily now. Love them! Makes the ones in the plastic bags in the stores look so sick. Not to mention tasteless. Lots of people like them though. I am going to do my best this year to get some started for my winter garden. You should be able to grow greens all winter in a cold frame. After all they are a cold weather crop.
Lettuce and greens are about the easiest plants to grow. So even if you have never gardened before you can easily do this. I have about six large containers on my deck stairs that are also growing lettuce and greens. Some days I am in a hurry and just want to quickly cut some. Otherwise they grow out back in my raised beds.
I also have a raised herb bed that has lemon balm, chives and oregano growing in among other things. I always pick some of them fresh to add to our salads. Fresh herbs are a wonderful addition to your salad!
Most people think of them as weeds.....dandelion, plantain and lamb's quarters. I put them in our salads also. Nothing could be better than adding dandelion as it a healing herb and nourishes your liver. I try to get that in all our salads as well. Most people pick it in the spring and cook it to get rid of the bitter test. We eat it raw in our salads all summer and as long as it is growing. I welcome the bitter taste to my salad since I use salad dressings anyway and it covers up the bitterest taste. Try it!
