			<content:encoded><![CDATA[<div>Yesterday we had to run an order to the post office to get it mailed quickly. So we took a quick trip to our local Walmart to pick up a few things. One of our favorite flavors of ice cream is Moose Tracks made by Hershey's. Hubby wanted to buy a treat and that's what he chose but not Hershey's, they had Turkey Hill's. He asked if it would bother me if he got it as he knows how much I loved it. I told him no it wouldn't. But when we got home and him and my son took it out and started eating it BEFORE I even fixed supper......I looked at it and thought about all those chunks of chocolate in it and the tiny peanut butter cups in it. I felt such temptation. But I had bought for my treat a package of Swiss Cheese.......which I love. It is my favorite. It worked! They were eating ice cream and I ate a couple of slices of the Swiss Cheese and I was just fine.<br />

Yesterday my order came from Netrition. I ordered it the day before and it always comes the very next day. I think that is because it is located in Albany which is not that far away. I had to reorder my gingerbread syrup and I also ordered peach. Can't wait to try that! I also ordered Bob's low carb bread mix and baking mix. Can't wait to try them. I also ordered 2 bags of the Almond Meal as that is one of my favorites......use it in my OMM.:writethink:<br />

The organic coconut oil is something I have been wanting to try as I have heard such good things about it and I ordered that also. So today, I think I will be able to create some good low carb meals! The reviews I read about it seemed like everyone loved it and some people gave it credit for helping them to lose weight. I bought it for cooking and am thinking of using it for baking. Put a little in my coffee this morning and it is good. :nod:<br />

I figured that my order is worth it as Netrition's prices are better on some things than my local health food store plus they don't even carry most of the stuff that I want. So I don't have to settle for something else by ordering online. Netririton is my favorite place to shop now. $4.95 for shipping your order no matter how heavy. That is a real good price for shipping those heavy bottles of DaVinci's sugar free syrups! :reddance:</div>

So I spent some time researching here for some outstanding recipes........of which there are many! :happy: For the first time yesterday I made the cauliflower that replaces rice. And it does! Looks like it too. I am thinking this morning I will brown some in a frying pan for a replacement of home fries. In fact, hubby and I had discussed it when I started eating this way last December and discovered neither one of us were big fans of rice. So I don't miss it unless I am making Chinese food. Now I know what to replace it with. (Thank you Henry!)  :nod: <br />

Last night when I set my dish on the table and said to hubby, &quot;Looks like a diet meal doesn't it?&quot; He had to admit it looked pretty good. Salad with Blue Cheese &amp; Italian Dressing, roast chicken, cauliflower(that looks like rice!) . I like to put it all on a flat plate and fill the plate up. I don't get seconds as that one plate fills me up. I am a slow eater so I enjoy every mouthful, and eating slow helps to fill you up.<br />
<br />
If you are starving on the Low Carb food plan then you are not doing it right. Vegetables are the key. I grew up eating salad at every supper. Some of my favorite vegetables are not low carbs so I have been experimenting with others. I don't measure my salads but I know they are not more than 2 cups if that. Putting them on a flat dinner plate makes them appear larger and many times I put the meat on top.<br />
<br />
You know how you used to look forward to your high carb treats? Like ice cream, doughnuts, chips, Reese's Peanut Butter Cups? You know you have them in the cupboard or refrigerator and you are saving them for that special tv show or to munch on while you start your new book. Well I get excited about the meals I am going to make that are healthy for me plus taste good! It's fun to create something that I will be wanting to make again. Finding some new snack recipes is an excellent way to replace those old snacks. Potato chips are boring compared to some of the homemade snack foods you can make and keep in your refrigerator. I love celery with cream cheese or natural peanut butter......way better than chips!  :writethink:<br />

I have printed out many recipes from this site as well as other sites and am replacing the recipes I have in a cookbook I made. It is a looseleaf notebook that was packed full of high carb recipes. Getting rid of all of them and putting in my new low carb ones. I have also replaced most of my collection of cookbooks with a new collection of low carb cookbooks. So if you are new here, be sure to check out the recipes as well as the cooking board and you will find recipes there you can't wait to try. I do. Good luck! :reddance:</div>

I was looking for Bob's almond meal flour at the Health food store and she said &quot;what about whole wheat flour? You won't eat that?&quot; I told her no and she looked bummed out. Baking bread is what people who are into homesteading do. And homesteading is what I write about and people ask me about. So she couldn't understand that I won't do that anymore. At least not now......in the future I will find alternatives for that. Right now though, I am keeping my carbs at 30 or below. :reddance:<br />

A little later, she says to me, &quot;I had potato soup today. You probably couldn't eat that could you?&quot; I tell her no. Then she says, &quot;what about a  sweet potato?&quot; I say no to that too. Then she says, &quot;I'm glad I am healthy and don't have to worry about that. I could never eat that way. I'd get sick if I tried it.&quot; I tell her that sugar and white flour is like poison and I am not hungry at all on this. She says she'd starve. :whistle:<br />
<br />
Now for one thing, she is not that healthy. She had her gallbladder out last year, has high blood pressure and high cholesterol. I was not trying to get her to try LCE. Never mentioned it. But I think she is disappointed that I cannot go to her house for meals because it is all high carbs. :what: Or go out to eat with her for the types of food we used to eat. Desserts! Everyone likes that sugar laden piece of pie or cake after a big meal. Not anymore! <br />
<br />
I can go out to eat and I do.:) My husband and I go out to breakfast mainly. But there are a lot of things you can eat that are low carb in a restaurant. Now going to someone's house is another story!:eek:<br />

They keep saying I will do this when I have more money. I will do this when I get married. I will do this when I have children. I will do this when I am older, when I am thinner, when I am _________ whatever. <br />

I know I am guilty of this myself. You cannot put things off that you want to do because you just might <b>never</b> do them. I make goal lists now every day. I keep them on my desktop and check them every morning. I admit my goal lists are not earth shattering things like hiking around the world or exploring the tropical rain forests. There are many things I have started doing around my home that I would never have done by now because I kept putting them on the back burner.<br />
<br />
Many times losing weight is exactly one of those things you put off. Keep putting it off and you <b>never start</b>. I know a few people who talk about how they lost weight easily on Dr. Atkins, but they have some excuse why they can't do it right now. And what is happening to them now? Yep! You guessed it......they keep getting heavier and keep having more health problems. Those health problems keep being more serious each time.<br />
<br />
Now how many people will put off starting a diet because the holidays are coming and they don't want to be restricted by following a food plan at that time? Almost everyone starts their diets or new exercise programs on the new year......after they ate themselves silly the night before. Just think if you started now in October, <b>what would you look like on New Year's Day 2010?</b> When everyone is just starting their new diet.......you will be 68 days ahead of them! :wow:</div>

I go to the recipe sites and put &quot;low carb&quot; into their search box and usually get pages. Sometimes I find recipes that are not really low carb but can make the changes to them to make them acceptable to me. <br />
<br />
Using vegetables in place of noodles or rice has become second nature to me. My husband is willing to eat my low carb foods as long as they taste good. He KNOWS it is a healthier food plan but has a hard time giving up bread, sugar and snacks, though he has replaced potato chips with peanuts. I notice though that if he buys the peanuts he gets the honey flavored ones :no: and I get the regular ones. <br />
<br />
It is true that most people think that low carb means no carbs. So hard to get that through their heads. I told the girl in the grocery store the other night that I eat low carbs and she wanted to know how long I have to stay on that. I told her &quot;forever!&quot; She said she knows she eats all wrong because she lives alone and gets something frozen and brings it home and microwaves it. I think microwaves are really bad for you and would never have one in my house so I felt pretty bad for her. I told her low carbs does not mean no carbs it means meat, cheese and lots of vegetables. She was surprised about that. As most people are.<br />
<br />
It does seem to me that if you have a family, including children you would want to start them eating this way. Just start cooking this way. Provide low carb snacks and they will change. It is a little more work but if a member of your family had a health problem and had to eat a certain way wouldn't you be willing to do it for them? Of course you would! So instead of waiting for them to get a health problem start making homemade food for your family that is low carb and they would never even realize it. :nod:<br />
<br />
One thing I like to do instead of sandwiches is making a antipasto platter. Set that out on the table for a snack. Everyone can snack on it and you can put what you want on it. If you can find an old cook book or if you  have some, they are a goldmine of recipes.  The ones I like are from the 1930's-1950's and have recipes for sandwiches using meat that you chop or grind up with mayo, olives, hard boiled eggs, banana, peanut butter, anchovies, chopped onion or vegetables, cream cheese, cream, etc. Nobody seems to make those type of sandwich fillings anymore. I remember my grandmother did and they were good. Just be sure to put them on something low carb! :clap:</div>

Like for instance on facebook right now, there has been an on going discussion regarding low fat cream of chicken soup. I mentioned to a FB friend that I make my own mixes because if you take a look at the ingredient label of Campbell's cream of chicken soup you'd be wondering what <b>EXACTLY</b> was in there! As a modern homesteader, I have made my own mixes for years now. But have changed even that since going low carb. <br />
<br />
So now the friend did figure out her own recipe but it is low fat and no sugar which is good of course. But the discussion between her and her other friends was all about not wanting any butter in it at all. <br />
<br />
I found a new recipe for it myself today and I can't wait to try it. Mine of course, has <b>butter AND heavy cream</b>. And <b>EGG YOLKS</b>! I doubt that any of them would want to try it. It is called Low Carb Cream Of Chicken Soup. Very simple. I will tell you the ingredients of the other one includes <b>flour, cornstarch and milk</b>. Probably as bad for me as Campbell's. Campbell's did have MSG in it and that is VERY bad for you too.<br />

The One Minute Muffin or better known as OMM comes to the rescue. I eat it with my eggs all the time. I cut it in half and use half with each egg. Dips great! <br />
<br />
You can spread peanut butter on it or whatever you want. If you go to the thread about it....yes, it even has it's OWN thread on here.....and read the whole thing.....you will see there are so many ways to eat it. Quite versatile to say the least! <br />
<br />
I have tried it several different ways and so far my favorite is to use the DaVinci's Sugar Free Gingerbread syrup in it for the sweetening and flavoring.:writethink: <br />

			<content:encoded><![CDATA[<div>I have started re-reading my The Power Of Positive Thinking by Dr. Norman Vincent Peale. This book changed my life a couple of years ago. My father had given me some books he had on his bookcase and was trying to make room in his house. So he gave me these old books and I was planning on selling them online. I found this book The Power Of Positive Thinking and looked through it. I started reading it out loud to my husband in the evening. We have no television and many nights I read out loud to him. It is a good way to be reading something and have discussions about it while you are reading it with someone. When you read a book silently to yourself......it's not the same. Can't discuss it by yourself. <br />
<br />
It made such an impact on us. We were going through some bad stuff. He had a work related accident that resulted in a crushed right elbow that is still not good. That effected his arm when using a chainsaw to cut wood and it locked up on him and he ended up almost losing his foot. So he was also on crutches for awhile. Needless to say, he was dealing with major depression at the time as he is a very active type of person. Being laid up was not good with his character. <br />
<br />
To top all that off, in 2003 my stepdaughter took her own life in a very violent way. Needless to say, he was never the same since. This though effected my son also as he loved having a sister since he was a only child. So more major depressions in my loved ones around me. For some reason, I always seem to be able to handle things without getting depressed. It is when I have to help others through it that I find it pretty difficult. <br />
<br />
But this book, helped us. My husband and I made some major changes after that and things seemed much better. Many people turn to food...to alcohol, drugs, you name it. Maybe I don't get so depressed because I write. Always have. So my message would be for members on here to write in the journals, start a blog, keep a handwritten diary if you are more comfortable with that. But write your thoughts and feelings out. Of course, you can also set them to private. Fitday has a journal with that option. Keep thinking positive thoughts and don't let your lapses set you back. Or find a friend on here to talk to. I think most of the members here are VERY supportive of each other and willing to lend a listening ear. :hug: <br />

			<content:encoded><![CDATA[<div>To be honest, I wasn't as bummed out about my tomatoes getting the Northeast blight as I normally would have been. I think maybe it is a good thing. The reason being one of my favorite things to eat in the summer is tomato sandwiches made with real soft white bread and mayonnaise. Not exactly a low carb meal! <br />
<br />
Every year I usually can about 60 quarts of tomatoes and that is what I normally make my sauces for pasta from. But lately even my husband does not seem to care for pasta meals. I offer to make them for him but he says they make him feel bloated. I just found a recipe in my Stella Style cookbook for a meat lasagna that does not call for pasta and want to get around to trying that soon. Just haven't done it yet. So as far as the tomatoes go, we won't miss them this year. <br />
<br />
I have been picking  blackberries too. In the morning I pick about a half a bowl worth and eat them for breakfast. They are very big and very good! One of the advantages of living in the forest I guess. :biggrin1:<br />
<br />
Today I dug about 40 pounds of potatoes and that will be for my husband's home fries in the mornings. My garden is FINALLY giving me cucumbers! I am very happy about them as they are a low carbers delight! But no cucumber sandwiches.......<br />
<br />
I hope nobody here supports PETA! On facebook today they had a link to an article concerning them trying to make you think you are fat if you eat meat! I had to hold myself back from replying to that! I did though as I do not like to get into those fights online with people who do not know what they are talking about. </div>I wrote that in a previous blog a few days ago. Then I was getting that book ready to list on paperbackswap and started looking at the recipes. It has some good ones. It also has some bad ones with higher carb counts and foods I will not eat. I went through some recipes I liked and just made some easy changes. So I think I will keep it. I still don't agree with their advice though as I feel that many carbs is just suicide. <br />
<br />
I am finding it fun to take an old standby recipe and take out the potatoes, rice or pasta and find something else that is low carb to take it's place. It is a challenge I enjoy. What I like to do is to make all the foods in our house low carb but so tasty that my husband totally enjoys it too. He really likes when I use the coconut flour or almond meal. I did not like the hazelnut meal as well and will probably not use it again. We love the almond meal though.<br />

I also love to treat myself with a seltzer with one of the DiVinci syrups. Strawberry is my favorite for that. I like gingerbread in my &quot;mock danish&quot;. And those two things are what I like when I feel like a sweet. I never feel deprived anymore because I have great foods available.  :reddance: <br />

It seems that if you are not very careful with every single food you purchase there will be something hidden in it that you don't want. My husband does not like many vegetables and I have to check every thing I buy that it does not have one of the hated ones in it. Like onions....now that's the big one and the one he especially hates! But also green peppers, cabbage, mushrooms, asparagus, Brussels sprouts, etc. Wow, it's amazing I find anything to feed him! I eat what I like anyway. I just don't put those in his dishes. <br />
<br />
Trying to find foods that are simple and not full of all that stuff like preservatives is not easy either. But I try. Sugar is one of the ones I am on the outlook for. I really don't care for it anymore. I don't care for all the sugar substitutes either. I like certain ones and will not buy foods that have the others in them. I do admit though that I like the sugar free chocolate candy. I just eat them very rarely and only one piece in a day.  :dance:<br />
<br />
I am really getting into making my own condiments in small batches. Refrigeration is a problem here so I am making small amounts for only one or two meals. Works for me. Plus, they are so much better. I have found so many recipes that are so easy to make that it seems crazy for me to buy the ones in the store. At least I know what is in them and I can adjust them for variety. <br />

Two on the same day from the same person. My name must have come to the top of the wish list just in time and she listed both of them. So I'll stop keeping you in suspense and tell you the books I got......<br />

The first one is <b>George Stella's Livin' Low Carb : Family Recipes Stella Style</b> and it looks great! In new condition. Makes me wonder about the person who posted it....did she just give up on low carbs or what? <br />
<br />
The next one is <b>The Low-Carb Barbecue Book: Over 200 Recipes for the Grill and Picnic Table by Dana Carpender</b>. I have three other books by her that I also got from paperbackswap. I use her recipes all the time. I like the way she writes....down to earth if you know what I mean.<br />
<br />
Last week I also got <b>Dr. Atkins' Vita-Nutrient Solution : Nature's Answer to Drugs</b>. I am using that book to figure out what my husband and I need to be taking to supplement our diet as far as nutrients go.<br />
<br />
Since December of last year (2008) I have received 19 low carb books and all they cost me is the price of shipping either books or cds to other members. Most of mine were from cds. I had an extensive library of music cds and much classic rock. Since I moved out here I'd rather listen to the birds or the quiet of the forest I live in than music.<br />
<br />
Out of all the books I received only two I would say weren't worth it. Low Carbs For Dummies by Tom Lacalamita is one. And 1001 Low-Carb Recipes for Life by Sue Spitler are not for real low carbers. They both recommend eating higher amounts of carbs than I would ever dream of. Linda Yoakam who co-wrote the book with Sue Spitler recommends at least 130 carbs a day!!!! :scared: No wonder people have trouble losing weight with a &quot;nutrition&quot;  professional&quot; advising people to eat that many carbs. <br />

I keep my low carb books on my cookbook shelf in my kitchen to always be handy. Now I am able to look up tasty low carb recipes in a flash. I'm not always on my computer you know. Love the new dishes and love the low carb life! :reddance:<br />

Our area has a late tomato blight that is affecting tomato and potato plants in our area. Hasn't affected mine yet. But since we have not been getting a lot of sun the tomato and pepper plants have not done well at all. Even my green bean plants which by this time every year have been feeding us daily have not even had one bean on them!!!! I am not happy about this at all. I figure it is to be expected as you cannot have a great crop every year. So I will have to buy produce at the farmer's markets to put up for the winter this year. <br />
<br />
My salad greens and herbs though are producing very well and we are eating salads nightly. I always add fresh herbs and wild plants to our salads for variety and they make it taste awesome. I have a huge lemon balm plant and have started making tea out of it and then cooling it for ice tea. Not quite lemonade but close.<br />
<br />
The key for me in following my low carb plan is to have my foods available and plentiful. If I get hungry I can always grab something that is low carb and good. I always carry foods with me that I can eat too so I don't get into a situation I can't handle. I did get off my plan this summer and it made me feel terrible. Not from guilt but from a healthy standpoint. My low carb plan is not just about losing weight but about feeling good and healthy.  <br />

Lots of people like them though. I am going to do my best this year to get some started for my winter garden. You should be able to grow greens all winter in a cold frame. After all they are a cold weather crop.<br />
<br />
Lettuce and greens are about the easiest plants to grow. So even if you have never gardened before you can easily do this. I have about six large containers on my deck stairs that are also growing lettuce and greens. Some days I am in a hurry and just want to quickly cut some. Otherwise they grow out back in my raised beds. <br />
<br />
I also have a raised herb bed that has lemon balm, chives and oregano growing in among other things. I always pick some of them fresh to add to our salads. Fresh herbs are a wonderful addition to your salad! <br />
<br />
Most people think of them as weeds.....dandelion, plantain and lamb's quarters. I put them in our salads also. Nothing could be better than adding dandelion as it a healing herb and nourishes your liver. I try to get that in all our salads as well. Most people pick it in the spring and cook it to get rid of the bitter test. We eat it raw in our salads all summer and as long as it is growing. I welcome the bitter taste to my salad since I use salad dressings anyway and it covers up the bitterest taste. Try it!<br />

I have been reading my DANDR (Dr. Atkins New Diet Revolution)  and made a list of the ones Dr. Atkins mentions. They can be very pricey! But so can bad health. I am not one to put confidence in the medical community and take responsibility for my own health as much as possible. I know my own body only too well. <br />
<br />
So I am seeing that I probably need a basic low carb vitamin formula that I found that was compared to Dr. Atkins' own formula and I found it at a good price. Next would be Borage Oil, Chromium Picolinate, Fish Oil containing EPA and DHA and Anti-Oxidant nutrients. I always take my Vitamin C so that's no problem. He had some other ones that I would think of adding in the future. Such as Pantethine, Niacin and Carnitine and of course he mentions adding fresh garlic to your diet daily which I already do. <br />
<br />
Something I do with any new supplement I add is to add one new item at a time. Then maybe 2-4 weeks later add the next one. So they aren't all added at once and upset my system. I do that with any of my herbal infusions or teas and it always seemed the best thing for me.<br />
<br />
It seems that it is just common knowledge to add vitamins to your daily diet. But many people do not. I know from my homesteading lifestyle which includes eating as close to the food source as possible and raising your food organically that the vitamins and minerals in your store bought foods is VERY low. So adding supplements seems like a good idea. :clap:</font></font></div>
