Preparing With The Right Foods

Posted 11-20-2009 at 07:44 AM by katlupe (katlupe's Low Carb Eating Plan)

One of our favorite flavors of ice cream is Moose Tracks made by Hershey's. Hubby wanted to buy a treat and that's what he chose but not Hershey's, they had Turkey Hill's. He asked if it would bother me if he got it as he knows how much I loved it. I told him no it wouldn't. But when we got home and him and my son took it out and started eating it BEFORE...

Low Carb Meals Are Not Boring!

Posted 11-18-2009 at 04:41 AM by katlupe (katlupe's Low Carb Eating Plan)

This week I have been revamping my diet. Getting tired of the normal eggs for breakfast and a piece of meat for supper. So I spent some time researching here for some outstanding recipes........of which there are many! For the first time yesterday I made the cauliflower that replaces rice. And it does! Looks like it too. I am thinking this morning I will brown some in a frying pan for a replacement of home fries. In fact, hubby and I had discussed it when I started eating this way last December...

Low Carb Meals Are Easy To Prepare!

Sometimes I find recipes that are not really low carb but can make the changes to them to make them acceptable to me.

The One Minute Muffin Or Better Known As OMM

Posted 09-09-2009 at 04:45 PM by katlupe (katlupe's Low Carb Eating Plan)

One of the hardest things for most people when switching to low carbs is the no bread thing. I mean, how can you eat a sandwich with no bread? What can you eat with your eggs in the morning? What about peanut butter? You can eat that! But without bread! Anyone care for peanut butter on a spoon? Well, to be honest, I have eaten it that way myself. Not bad.

The One Minute Muffin or better known as OMM comes to the rescue. I eat it with my eggs all the time. I cut it in half...

Harvesting Some Vegetables & Berries

Posted 08-17-2009 at 05:11 PM by katlupe (katlupe's Low Carb Eating Plan)

To be honest, I wasn't as bummed out about my tomatoes getting the Northeast blight as I normally would have been. I think maybe it is a good thing. The reason being one of my favorite things to eat in the summer is tomato sandwiches made with real soft white bread and mayonnaise. Not exactly a low carb meal!

Every year I usually can about 60 quarts of tomatoes and that is what I normally make my sauces for pasta from. But lately even my husband does not seem to care for pasta meals....
