Low Carb Meals Are Not Boring!

This week I have been revamping my diet. Getting tired of the normal eggs for breakfast and a piece of meat for supper. So I spent some time researching here for some outstanding recipes........of which there are many! For the first time yesterday I made the cauliflower that replaces rice. And it does! Looks like it too. I am thinking this morning I will brown some in a frying pan for a replacement of home fries. In fact, hubby and I had discussed it when I started eating this way last December and discovered neither one of us were big fans of rice. So I don't miss it unless I am making Chinese food. Now I know what to replace it with. (Thank you Henry!)

Last night when I set my dish on the table and said to hubby, "Looks like a diet meal doesn't it?" He had to admit it looked pretty good. Salad with Blue Cheese & Italian Dressing, roast chicken, cauliflower(that looks like rice!) . I like to put it all on a flat plate and fill the plate up. I don't get seconds as that one plate fills me up. I am a slow eater so I enjoy every mouthful, and eating slow helps to fill you up.

If you are starving on the Low Carb food plan then you are not doing it right. Vegetables are the key. I grew up eating salad at every supper. Some of my favorite vegetables are not low carbs so I have been experimenting with others. I don't measure my salads but I know they are not more than 2 cups if that. Putting them on a flat dinner plate makes them appear larger and many times I put the meat on top.

You know how you used to look forward to your high carb treats? Like ice cream, doughnuts, chips, Reese's Peanut Butter Cups? You know you have them in the cupboard or refrigerator and you are saving them for that special tv show or to munch on while you start your new book. Well I get excited about the meals I am going to make that are healthy for me plus taste good! It's fun to create something that I will be wanting to make again. Finding some new snack recipes is an excellent way to replace those old snacks. Potato chips are boring compared to some of the homemade snack foods you can make and keep in your refrigerator. I love celery with cream cheese or natural peanut butter......way better than chips!

I have printed out many recipes from this site as well as other sites and am replacing the recipes I have in a cookbook I made. It is a looseleaf notebook that was packed full of high carb recipes. Getting rid of all of them and putting in my new low carb ones. I have also replaced most of my collection of cookbooks with a new collection of low carb cookbooks. So if you are new here, be sure to check out the recipes as well as the cooking board and you will find recipes there you can't wait to try. I do. Good luck!

    As always, you have a wealth of great ideas, observations, and helpful suggestions. Gotta look for that rice ish cauliflower recipe. We practically lived on brown rice before I low carbed, especially when we were broke, and white rice way too often when we were in a hurry. That and pasta. I don't miss either one, because I put things on veggies now, or as you said, salad. Gotta log and go find that recipe!

    It is even better than I thought! I fried onion and mushrooms in a little bacon grease, then added some of the left over cauliflower (that was kinda like rice) in a cast iron pan. I let it brown a bit and was that ever good! Even better than real home fries!
