Today my Pastor and our music director from our church are coming to spend the afternoon with us. I am so excited! We hadn't been able to get to our church since the fall. Winter is tough at our house. Can't leave our house alone or our stoves go out and when we go to church we are gone for hours. It is also a long drive. So I haven't seen them in some time. My husband wanted me to make them some kind of a goody to go with coffee. I have absolutely no white flour in my house anymore. I have whole wheat and whole wheat bread flour as I used to bake all my own bread. I had to think of something. So instead we bought a loaf of store bread and some milk and am going to make Bread Pudding. One of my husband's favorite desserts. I used to enjoy it too. I have no longing for it anymore. It's an easy thing to make so that takes care of that problem.

I belong to the Paperbackswap club and got another book by Dr. Atkins, Atkins For Life. It is really good. I am reading the whole thing in the next few days. It helps to keep me focused. He just makes so much sense. I know because my mother in-law was a diabetic who adjusted her own insulin. She ended up losing both of her legs and passed away January of last year. She had a lot of problems but she ate what she wanted. I think she has played a big part in how I stuck to my new eating plan when I started out. Now it's the plan itself. This forum is a huge help also. I like coming here and reading everyone's posts and how they handled things. I like to read the older posts and blogs. And love the Five A Day!

My new computer is being shipped today so I should have it next week. I cannot wait. It is the first brand new computer I have ever had. I needed it for my online business and for my church website. My husband and I designed a site for our church and now I am learning how to do the video work on it. So I will be very busy between the two, and needed a more powerful computer. Energy star too.

I have to have energy efficient appliances as we generate our own power and when you do that you have to be aware of your power usage at all times. That is why at this time I do not have a refrigerator or a freezer. We are saving our money to buy solar refrigeration. Up until a year ago we had propane refrigeration but decided to save that money toward our new appliances. So I cannot stock up on food and stick it in my freezer. I usually have to can it. That works though.

    What computer are you getting? My dh bought me a Dell about a year and a half ago, got stuck with Vista, hate it with a passion. I keep threatening to install XP instead, even if it means losing a lot of stuff in the process. I hated all the Vista commercials, calling it Mojave. What a joke! I got so sick of them that I muted the commercials every time they came on. Haven't seen one in ages, thank goodness!

    Do you dry any of your foods? I use a dehydrator, which, of course, uses electricity, but I've read about making your own racks with screening fabric, and stacking the racks in the sun, covering them with cloth to keep the critters out. I think it would be fun to try it sometime. If you are using woodburning stoves, you could keep your drying racks nearby to dry the food. My latest projects were onions and peppers, and they turned out beautifully.

    It is a ThinkPad W500. It has Vista Business version. I have used Vista on someone else's computer and it was okay, but I don't think that was the business version. I always get the ThinkPads. I love them.

    Yes, I do dry foods. But use the pilot in my gas oven. Or hang them upstairs. I do alot of herbs, wild herbs as well as the medicinal ones. Elder flowers from the elderberries. And of course the vegetables and berries.

    For breakfast I usually have eggs, fried with bacon or a cheese omelet with sauteed green peppers and a little onion. I don't eat lunch because when we first get up we drink coffee then go out and do barn chores. Then come in and work on our computers on our business, then have breakfast around ten or so. I can honestly say I don't get hungry till around four and that is when I usually start our dinner.

    My menu for dinner is usually salad and meat (chicken, turkey, pork or some kind of beef), maybe some olives or almonds. I try to squeeze almonds in daily as they are really good for you. Maybe I will have less salad and another vegetable like green beans or mixed greens or asparagus. I find I am not eating an awful lot of food anymore. I am satisified though.

    Lisa, this looks pennomehal! I mean, it doesn't look like anything but a regular chocolate cake! I found some peanut flour at Trader Joe's last week and snapped it up with your donut recipe in mind. But now I think I will make this, instead. I certainly don't mind the peanutty taste, and could even imagine enhancing it so that it came through a little more. PB and chocolate go so well together.
