OH-OH I made a boo boo

For the past two weeks, my blood sugar has been pretty stable. I have really been sticking to low carb.

I have been avoiding hidden sugars, not eating any grain products, and all the other things that I have found by trial and error that raise my blood sugar.

Today I made a boo boo.

I assumed that since my bs has been so good, I just might be getting over my extreme carb sensitivity.

I made fish for lunch, lightly breaded with organic corn meal. I also had about a tablespoon of organic catsup (of course it has cane sugar in it), I also had a small serving of sugar-free jello (it has malto-dextrine in it it).

I made the jello using Dr Atkin's recipe for confetti jello salad. (it tastes very good by the way). After a couple of months of no sugar, the jello actually tasted extremely sweet.

After eating I tested my blood sugar and as surprised (but shouldn't have been) to find that my blood sugar was 205!!!!

Even though I had all ready taken my walk for the day, I took another one.

Usually taking a walk will bring my blood sugar down quickly. This time it actually went up to 213!!

So I did some Tai Chi. Finally my blood sugar started going down. WHEW

Tonight I tried an experiment. I took my blood sugar, it was still a little high at 143. I ate some pork tenderloin, with lettuce leaves, a slice of green pepper and a slice of tomatoe. I had another small bowl of the sugar free jello (it is soooo good). When I took my blood sugar it was 151!!!

I was so glad to find out I can have the delicious jello. I am guessing I really should not have it as a snack, and I will need to limit my other carbs pretty strictly if I want to eat the jello. (and I do want to eat the jello)

A lot of us make our own jello, using a package of KoolAid, sweetener to equal one cup (I use liquid Splenda, but perhaps the liquid Sweet N Low would work, too), add one cup boiling water to dissolve, one cup cold water, and let it set up in the fridge. I make mine in a pint canning jar, stick on a lid, and put in the fridge. Takes up a lot less room than a bowl! And canning jars are heat resistant.

Whatever flavor you can get the KoolAid or other unsweetened drink mix in will make great jello.

If you make this with Sweet N Low, let me know how it works for you.

Nice thing is, no maltodextrin!

tracy-it's a type of sweetner/carb that is not supposed to cause blood sugars to spike the same way sugar does. it's also used for a filler in granular splenda (and is where the carbs for granular splenda come from). That's why many of us use Sweetzfree, which is Liquid Splenda and has no carbs. But if you are not experiening problems with your atkins shakes, then i personally wouldn't be concerned about it. RandysGrandma has reported she has an extreme sensitivity to a number of food additives.
