I keep checking in though and seeing what everyone is doing and posting.  Apparently, someone has noticed this as I saw a message today when I logged on that said I haven't been posting but been lurking - LOL LOL - that really cracked me up!  It was one of those moments where I found myself looking over my shoulder and saying &quot;OMG, someone's watching me!&quot;  I totally am a lurker, I love to see what everyone's posting but often log off without posting my own update.  Alright then, so I've been officially called on my lurking ways and will try to post some more  :winking:.  So, the scoop here is I have been sticking to the low-carb life but haven't gone back to induction which I will eventually do but as of right now straight up LC is actually working fine.  I've lost 3 lbs since last time I posted.  Not exactly rapid WL but that's not all I'm in it for anyways so that's alright with me.  I feeling pretty darn good lately and that delights me.  I recently found a yummy find at the grocery store - Low Carb Pita Bread called Joseph's Flax, Oat Bran  Whole Wheat Flour Pita Bread.  It is a soft pita bread that is very yummy and only has 4 g of Net Carbs per pita.  I made a very yummy jazzed up egg-salad sandwich with it for lunch today.  This entailed 2 chopped hard boiled eggs, 1 tsp mayo, 1 tsp spicy mustard, salt &amp; pepper mixed together in the usual way.  I then scooped this onto the center of the pita and topped with thin slices of red bell pepper, a few slices on red onion and some romaine lettuce.  I then folded it in half and packed it in a baggie for lunch today.  It kept very well - the pita was not a bit soggy, the veggies stayed crisp and it was a very filling meal for lunch.  If you haven't had this yet, you've gotta try it!  I bet it would make really yummy low-carb pizza too.  <br />

I've been trying to get in the 8 - 8 oz glasses of water a day - some days that works out and on others it doesn't - instead I'll find myself downing 4 diet pepsi's then trying to squeeze in 2 bottles of water before bed because I'm so thirsty for water.  Has anyone else ever done this?  Ughh - well don't start - it's terrible.  I find myself having to get up in the night to go to the bathroom or wake up in the morning after a terrible night's sleep with a bladder that is ready to explode!  That is getting really old let me tell you so I'm halting all water at 9 pm from now on in hopes of better rest!  I did drink my water today though so I am on track.  <br />

DH and our little girl planted 6 tomato plants today and we'll add some pepper plants this weekend.  We had a great crop of fresh tomatoes last year so I'm hoping for more.  There is nothing like home-grown, red, plump and juicy tomatoes in the summer!  We've also got some blueberries growing for the first time and I pray we get to enjoy them before the birds do!  <br />

The weather here has been incredible - the skies are crisp blue and full of fluffy white clouds, temps in the mid 80's, soft breeze and wonderful.  Everyone is talking about summer and how hot it will be.  Here in Savannah it get's pretty steamy by July/August and everyone starts wilting by mid-day and I'm sure this summer will no different but I will not complain.  We live about 45 minutes from the Tybee Island beach so we'll probably make a few trips out there.  It still seems funny to me to have to drive that far to get to one - I grew up and up until 2 1/2 years ago lived in Daytona Beach area where it only took 10 minutes to get there.  What is crazy is that once I was married and working, I hardly ever went!  Well, I think I've said enough for now and likely satisfied the lurky fairy that watches over me. It's been quite awhile since my last posting but I've been reading all of yours every chance I get.  I am so excited to say that I have finally finished Physician Assistant school, Whoo-hoo!  2 1/2 years of hard work and I can finally call myself a real PA!  :dance::dance2:  I have been studying like crazy for months as I will be taking my board certification exam on Monday so wish me luck!  I have a great job lined up and will start at the end of April - DH will be delighted I am back in the workforce and making some money, I am just delighted I found a great job that I love doing, ok so the money thing is good too considering we will be drowning in student loans come October.  As for LCE things have been a little rough over the last month - I'm still eating low carb but not as carefully as I was - truthfully things have been a little stressful with finishing up school and the testing we do for this - I always eat and eat and eat when I 'm stressed.  I've also been really pinched for time, haven't been able to shop for good foods so I haven't exactly been making the best of choices when eating - it's called scrounge for whatever you can find or DH brings home.  This pretty much stifled my losses and then added a few lbs back but... I still have the big picture in mind and am back to it today.  Soooo, water, water, water (Thanks for the reminder Dixie) and LCE all the way.  Have a great day everyone!</blockquote>

I woke up this morning around 8:00 thinking about what all I needed to accomplish today.  Sunlight was streaking through the bedroom curtains telling me it was another crisp and beautiful winter day - no rain today.  My 10 yo daughter was still in bed and the dogs were begging to go outside.  We have 2 dogs, a collie and a peek-a-poo.  DH let the dogs out and I did my normal morning ritual of running downstairs to weigh myself before the day begins.  Well, I stepped onto the scale rather nonchalantly thinking not much would have changed, maybe a lb increase as I felt like I was retaining water.  When I looked down I could hardly beleive my eyes, I had lost 5.5 lbs from the day before.  My first thought was this is a mistake so I weighed again.  Same.  OK, I called in DH to weigh, about the same as his usual.  I then took the battery out of the scale, waited the obligatory 10 sec., put it back in and reset the scale.  I re-weighed.  Still the same.  DH re-weighed on my adament request, same.  What?  Could this be true?  Well after weighing myself a total of 10 times I finally allowed myself to believe it, I literally lost 5.5 lbs overnight for a total now of 12 lbs down!!  Holy Cow!  I never expected because my WL has been averaging 2 lbs a week since day 1 so this was an unexpected loss but I am absolutely delighted.  Really makes me glad I didn't allow myself to get discouraged by what I perceived as an initially slow weight loss.  Actually, I think it's a blessing b/c in the past I would lose 8 lbs the first week and then 3, 2, 1 and sometimes none the weeks after and get so discouraged thinking I was doing something wrong and then I would fall off the wagon.  These recent results just remind me that there is no way of knowing how much or how fast you will lose and that the important thing is that I just stay consistent. Well, I wasn't sure if that would work for me - I've done so many diets and never quite got there in the last few years. I didn't know If I could ever get there again. Well, what a surprise when about 1 week ago I woke up and oddly enough felt really well rested - something I haven't experienced in a few years. My daily backache was gone, my headache gone and the strange foggy feeling was lifted. I felt more clear-minded and crisp than I had in months. Unreal!!! I expected this to go away but instead I have been feeling better and better everyday! I came to a huge realization for me and that is Low carb lifestyle is what my body needs and prefers - the endless sugars and carbs were driving my blood sugars up and leaving me in a thick and foggy wake. I can feel the sharpness returning to my thoughts, Hallelujah! This is the start of week 4 and I have not only not cheated for the first time ever but haven't even thought of cheating! My resolve is like steel, unpenetrable. I have lost 6.5 lbs and am delighted with where I can see myself going. The forum and LCE website has been such a blessing with keeping me feeling satisfied and not deprived - I am so thankful to everyone's support and their postings - the OMM has been a true godsend. Every day I wake up and realize how good I feel and think &quot;why would I even think of messing this up?&quot; I feel as though I am finally on my way to getting healthy.
