every saturday morning i make a special breakfast for the fam - pancakes generally, and i eat eggs

. today, i had my eggs, and also one pancake. i know that i will have meatballs and leftover egg salad for lunch, and crustless quiche for dinner, so that was my carb count for the day.
it was sooo nice to just know i was going to have one pancake (and enjoy it!!!!!!!!), as usually i smell them and suffer

. i do love my egg salad though: mashed hb eggs, mayo, a little dill relish,
and then i top it with salsa, and parmesan cheese. very nice! so i ate my fill of that, THEN had the pancake (which wasn't very big, mind you; no syrup or anything; and wholemeal flour...so i'm sure i did not go over my daily carb count)
i feel so much more in control of life these days....
