Jess, I've been there, and I know how good it feels to not cave in. Don't fret the canned stuff; it's canned right after it's picked, so it could actually have more vitamins than the "fresh" you get at the store that maybe sat there for a week. We lived on canned green beans and spinach the last time I did a lc stint, and it was fine. Keep it up, hon.

thanks for the encouragement. i had heard once that the canned stuff is as good as or better than fresh, so i'm not too worried about it. i love canned spinach. it's so easy and yummy!

so last night i got up in the middle of the night & thought i was going to die if i didn't get something sweet. i made my way into the kitchen & ate a sf ice cream. i guess i could have done a lot worse, but i'm still not thrilled with myself.

I wanted so badly to go down to the basement and get a lc chocolate bar last night but I didn't. It's so not on plan (though if chosing between that and regular sugary treats of course lc chocolate would be best).

I had a OMM last night and this morning my keto stick was still a deep purple. I'm goin got add my flaxseed meal back in this week. I had some last week but it wasn't enough to satisfy me. Now that I'm upping the carbs I can add enough to feel satisfied.

I was thinking that even with the higher carbs I'm still below what would normally be induction level in the new book. It'll be another week before I get above that.

Nita - you mentioned somewhere recently in another thread something about having Maggie's Cereal and it tasting like Cream of Wheat.

I absolutely LOVE Cream of Wheat, and your post has had me missing it!!!! So, yesterday I thought I'd try to get Maggie's Cereal to the consistency of Cream of Wheat, and I did. It tasted great, too.

I've been making it wrong. I've not been using enough water. This time I took a one-cup glass measuring cup, filled it to 3/4 full, and popped it into the microwave for 2 minutes -- I've found the hotter the water, the better this turns out. To that, I added 1/4 cup (a little less) of Maggie's Cereal, and 1/2 cup of Splenda.

Hey.......I like it sweet.

Anyhow, it was very watery at first, but the more it cooled, the more the consistency was that of Cream of Wheat and it was soooooooo satisfying.

I ran to Kroger to get some brown Sugar Twin so that I could make some this morning with that as the sweetner, but <GASP> they don't carry it any more! I'll hafta find an alternate vendor.

Anyway.........just wanted to tell ya', Nita, that your post was the impetus for me making faux Cream of Wheat, and I thank you.

Doing well, getting over my small cheat the other day. The LC ice cream WAS a better choice than other things I could have grabbed (sugary stuff that would have knocked me WAY out of ketosis!). I have very little appetite and I'm having to basically force myself to eat. It's kinda cool!

OK I was so ready to cheat last night and ended up eating some lc chocolate instead. So while off the old plan I was still able to keep my net carbs lower. Luckily the chocolate didn't take me out of ketosis (the stick was still purple). So I resisted before but could not last night.

I love the faux hot cereal. I just use the flaxseed meal and a protien shake so it's easy. Makes it just like coco wheats. In fact I used up all the ground flaxseed meal last night. I need to get some more.

I'm back on track after the lc chocolate. I did one day back at level one then back to level two. I couldn't stomach the thought of going back to level one again and I didn't cheat too badly so one day was good. Though I'm gong to stay at this level for a week now.

i had thai food last night & though i skipped the rice, i'm pretty sure my food was cooked with lots of sugar-- it was sweet. it also had cashews in it, so i know i wasn't eating on plan. it was good, though!
leaving today to see DH in mississippi, so i'm going to do my best, but i dunno...

Nita, i would like to join in here with you if you don't mind. I am new to low carb and you seem to know alot about it and i thought maybe you could help me out some...
I am going into my third week now and have already lost 10 lbs. by just cutting out white processed foods, sweets, statches, breads, etc. and eating meats, veggies, and splenda to sweeten tea with and diet pepsi and alot of water. Also I have been walking to get some exercise.

I need to lose 125 lbs. so help me out here.....

Wow! You're doing great! I'm in the same boat with you. I have about 150 left to lose, after having lost about 75. I am stuck in a major stall. But I'm sticking to low carb for my health first, whether I ever lose another pound or not.

It sounds like you are doing well, but I encourage you to choose a plan, buy the book and read it thoroughly. You can find the original Atkins book on amazon.com, and it is a much simpler way of eating than the newer version. That's why some of us are trying it. I am going to get back to it after our weekend trip. So next Wednesday it's back to level one.

I had a horrific weekend but I am back on track too. I made it about 3 weeks then fell off.

I was 100% on the OAP yesterday and have decided to start from scratch with level one. I wasn't going to do it for a whole week but I think I need to. I have a freezer full of many varieties of meat (it was on sale the last couple times I went to the stores), I've got romaine lettuce in the fridge and I'm going to get some different vitamins tonight.

I'm back on the OAP beginning this morning. Started out with 2 scrambled eggs. It took all my gumption to do this, because I do not like eggs for breakfast, but I choked them down, anyway. They weren't too bad, but I sure like them better for supper.

I've lost 2 1/2 lbs overnight. Guess going back to OAP is helping. I sure didn't expect this kind of result so soon, but I'm happy for it!

Another 1 1/2 lbs. Something's working.....finally.

I actually strayed from OAP a bit, but the carb count was still quite low. I made soup, with some homemade stock, a can of chunk chicken, 1/2 can each of black soy beans and tomatoes w/green chiles for a kick. And some leftover green beans with bacon and tomatoes, about 2 cups of that. We each had a bowl, and there were about 3 cups left over for another meal. It's not actually what would be for level 1, but it was raining and cool, and we needed it.
