| Iowa State University did a small (very small) "test" and found that people who ate their salads with FULL FAT dressing actually absorbed MORE carotenoids than those who ate reduced fat or no fat dressings! I think this is hilarious because even in the days when I did low fat, I ALWAYS used real, full fat dressing.
