I must admit - I was very surprised to see that level of awareness and leadership from that specific food outlet! They have been targeted here on all sorts of secondary environmental issues - but never in this context. Although in Aus - what you see on the menu is REALLY what you get - and there is very little chance of diverting from the set menu - some of the more upmarket restaurants have been into fresh minimally processed foods for quite a while. In the capital city here in Queensland (Brisbane) a couple of months ago I ate in my favourite seafood restaurant. I was delighted to note the tiny oven fired bread was about 1 inch x 2 inch wholemeal (rather than the previously served rolls etc) and only one piece was offered with unsalted butter. I thought 'good so far' then I was further surprised to see the amount of food in the serving was just right - AND the ratio of fish to vegetables was correct! AND I only needed to leave a small amount of the fish to be eating right on my plan! So - hopefully - some in the food industry are acting responsibly. Nowdays - if I go into a restaurant and the menu is not within my preferred context I walk out and I tell them why! Get some funny looks from the other diners! But - this is MY life!
