Salad an experiment: LC on food stamps

I ran across this and thought it was interesting: a fella ate a week of low carb on a very restricted food stamp budget.

While I don't know that I'd want to have to do this, obviously, it's good to see that it is, indeed, doable, for those wondering about the cost of low carbing...

I was on food stamps at one point in my life - in the early seventies. Although I wasn't LC at the time, I had no problem feeding a family of 3 on whatever they allowed me at the time. I never bought any prepared food. I bought meat, eggs, cheese (whatever was on sale) veggies & fruit (fresh/frozen), tomatoes & stock (canned) and staples like flour, sugar, salt, spices etc. and cooked from there.

Everything was made from scratch and I never came up short.

I'm not surprised to find that one can eat a healthy low carb diet on food stamps.

In 2002 my husband was in a work related accident and was almost killed. So for about 6 weeks we had absolutely no money to live on except for a small pension he gets from a former job. I had to apply for emergency stamps. I must say that for us at that time they were a life saver.

Anyway for 2 people we received $275. a month. I did very well on that as I cook from scratch anyway. One time the check out clerk in the grocery store complimented me for the way I shopped.

We have also used food stamps when our kids were younger, and were able to eat pretty well. Some of our elderly folks get just a few, sometimes it's not worth their time to fill out the paperwork, for just $10 or $15 a month. But that sure would help to supplement a lc plan. Since food stamps are meant to supplement, not to be sole source of food income, then a family should be able to do pretty well doing lc on food stamps.

Regina Wilshire covered this a few months ago on her blog.
