Thread: dieing for some mole

    no not a critter lol
    but a Mexican condiment
    a deep red/brown sauce made from peppers
    my grandma use to make this for us we poured it over our chicken and rice
    she also made us fresh tortillas
    i can remember her rolling them out and the shacks of the all over the kitchen covered in clean kitchen towles she would make enough for couple weeks at a time
    does anyone have a recipe from scratch
    i would like to look it over see if it can be
    done L/C
    i know it has peanuts chocolate and chicken broth i thin there was toast in it also

    oh some menudo would be nice also!
    OK as you see i miss home and the food!

    You know, I've thought of mole too...

    (Of course, you knew, I was wondering if you really meant a MOLE by the title! )

    If Char or someone doesn't have one, I'll see what I can come up with.

    Menudo? Sorry, I can't go there with a 100 foot pole! It was one of about 3 foods I've ever had in my whole life that I just couldn't bear to have in my mouth!

    Yeah Sharron, I'm with you about menudo! On the other hand, fresh tortillas made the old-fashioned way with lard and patted out so thin that you see light thru them when you hold them up, those I would die for! I ate a lot of those as a kid. Throw in a pot of really creamy frijoles (again, made with lard) and you have my idea of comfort food.

    i understand how some people dont like menudo but i love it!
    give me a lemon and some oregano diced onion with it and yummy yummy
    grandma use to make somthing like menudo but not with tripe she used pork
    it was good also


    there is things i cant even think of eating like squirrel no no no hubby's grandmother would make it for him with a gravy over it

    OK isn't tripe some kind of stomach? and is te soup really spicy?

    Yes, tripe is part of the cow's stomach. I don't remember menudo being all that spicy but I'm sure that how people make it varies.

    yes it is one part of the cow's stomach
    i believe there is 4 stomach linings in a cow and the honey comb tripe that is used in the menudo is the 3 or 4th lining

    hope i remembered that right lol

    i dont think it is to spicy you add lemon juice and oregano as you eat it

    Just an FYI, many "die-hard partiers" consider menudo to be the absolute cure for hangover

    I have not tried this yet, but boy it sure sounds GOOOOD!

    Easy Mole Sauce

    Serving Size: 8

    1 cup chopped green onions, white and light green parts only
    3 tablespoons light olive oil
    1/2 teaspoon coriander seed, toasted in a dry pan and then ground
    1/2 teaspoon anise seed, ditto coriander
    2 tablespoons chili powder, preferably from freshly ground roasted Anchos, if available
    2 teaspoons sweetener, Splenda bulk
    3/4 teaspoon ground cinnamon
    1/8 teaspoon ground cloves
    2 tablespoons unsweetened cocoa powder
    2 tablespoons natural smooth unsalted peanut butter
    2 1/2 cups chicken broth, preferably homemade but canned low-sodium will do
    8 ounces no-sugar-added canned tomatoes
    3 whole garlic cloves – mashed
    3/4 teaspoon salt

    Heat oil in large skillet til hot. Stir in onions and cook til translucent. Add ground spices and stir til fragrant. Add remaining ingredients and simmer til thickened to your liking.

    Serve over baked wings, chicken, duck, wherever you like mole!

    Tripe's not bad; it just sounds bad. It's also used in pepper pot soup, something that's hard to find most places.
