Mushroom Parmesan Chicken
4 large boneless, skinless, chicken breast halves
1 t Garlic powder
2 cups fresh sliced mushrooms.
1/4 stick butter
1/2 cup heavy cream
2 1/2 Tablespoons 100% ground parmesan cheese
4 oz. Parmesan grated cheese
2 Tablespoon dried chives to garnish
Cut chicken breasts into thin strips. Sprinkle with garlic salt and saute in butter till cooked through. Add mushrooms and saute until chicken is lightly browned and mushrooms are tender. Add heavy cream and simmer 5 minutes. Add 2 1/2 tablespoons 100% parmesan cheese to thicken cream, mix well and simmer 5 more minutes. After the cream has thickened, top with 4 oz. Parmesan and chives, cover and let sit till cheese is completely melted.
