Again, I was playing around in the kitchen with a salad dressing idea, and came up with this.
I think this is my final *tweak*
SW Chicken Salad
With Creamy Chipotle Dressing
For each salad you will need:
2 c. mixed salad greens (I usually use a mix of green loose leaf lettuce, spinach leaves, and iceberg)
3-4 oz cubed chicken breast meat(you can use grilled, baked, or saute'd chicken, but chicken cooked with spices like, garlic, pepper, chili powder etc. tastes better)
1 oz of medium sharp cheddar cheese, grated
2 La Tiera Taco shells, crushed
Assemble the salad in the order of the ingredients listed above.
Make the dressing first so it can chill and the flavors blend. Top with Creamy Chipotle Dressing. See recipe below
Total carbs for salad = 5 carbs if above measurements are used.
Creamy Chipotle Dressing
2 T. sour cream
1 T. Mayonnaise
1/8 tsp. (heaping) of chipotle chili powder
1T. half n half
dash of sea salt
1/2 to1 pkt. Splenda, not over a 1 pkt, or dressing will be to sweet.
Whisk all together and let chill for 20-30 minutes.
Makes 1 serving of dressing at approx. 2 carbs.
Total carbs for salad with dressing is approx. 7 carbs.
