| First of all, how many carbs are in clams. Everything I see seems to contradict the other. Does anyone know if they are "free foods" or if they have carbs to be counted? Also, how many carbs are in a pickled egg? My last question is... Can you use soy flour as a thickener. Will it work? Also, can you use soy flour during the Induction phase of Atkins? HELP! |

Jewel. I use the USDA nutrient database to determine the carb count of foods. For clams, the USDA says that 3 oz of raw clams have 2.18 grams of carb. If you use canned clam, (which have been cooked), 3 oz has 4.36 grams of carb. Eggs have 0.5 grams of carb each, whether or not pickling them would add more would depend on what was in the pickling brine. I have not tried, nor heard of anyone having success using soy flour as a thicking agent. Also, according to DANDR, soy flour would not be on the acceptable foods list for induction.

| Welcome, Jewel. ![]() As for thickeners, most of us use some sort of vegetable gum type thickener. I like those made by Expert Foods, such as NotStarch. Hope you'll make yourself at home here.
