| I do have a dehydrator and I made it once before but it was with the above ingreds. and probably sugar and I don't want to go there. Thanks guys! |

| I found one on another site with zero carbs so if anyone wants to try it let me know. I haven't made it yet so it may need to be tweaked first. I usually change things a bit to suit our own tastes after the first time. |

| Bring it on~ I am also looking for a pemmican recipe. My great grandparents and before used it, (well, duh, they were half Natives lol). My dad used to make it when I was a kid because he was Eagle scout and still active in boy scouts as a young adult-- no recipe remains though. Johnny Bowden site has a link to buy it (even organic, grassfed buffalo pemmican,) but I can't afford it. The berries in it make it not so good for induction, but the fat content helps you stay full and I think i remember that it was not as salty as jerkey. I forgot lunch the other day and ate a whole package of Jack Link for breakfast lunch and snack. Only a few calories and about 6 carbs, but that was my WEEK's sodium intake, lol. Not to mention that some of the chemicals they add to commercial jerky make my fibro worse. Good luck on your first batch Cindi. I wanna try some.

| PS. Do you use an electric dehydrator? Unless you live in urban Phoenix where the humidity is high you can do solar dehydration in AZ with no spoilage, and it can actually be faster than the electric. Not to mention that its free, and saves energy. Here in NN people still dry their red chili on the roof, and jerkey is often hung on strips on racks outdoors. I don't do that anymore because of flies, air pollution, etc. (Plus the 18% humidity which was "high" when I was a kid is now 60-80 % this time of year because of urbanization and climate change). Last months GRIT magazine had plans for a cheap solar dehydrator which had a cover to keep out vermin. They are online. What else do you dry? Want to get back into it. When I started teaching and especially when I had boy, my time for baking, canning, and drying seemed to evaporate. I am going to change that, because the food we buy isn't as good. No WAY however, am i ever going back to making fresh tortillas couple of days a week and 10 loaves of bread. LOL

| Yes I have an electric one and have only made jerky once but when I first got it (for free) I did all sorts of fruits when they were on sale. Dried mangos are awesome, dried strawberries look like scabs! ![]() The best jerky in the world IMO is Gary West out of Oregon but it's so expensive. We used to order it for gifts but it's just not worth it. recently we saw it at Cabela's and it was around $20/lb. maybe more, at least when you order it it's not marked up that high but still ridiculous! Now I've accumulated a couple of recipes and will probably put my own twist on it. I sure hope Mike gets a deer this year. |
