plain cheese omlet
omlet with cheese and steamed broccoli
cheesey broccoli soup
maggie's hot cereal
cauli-puree with melted cheddar..add cream for cream of faux-tatoe soup
soft set mock danish

IMO, he should eat or drink, what he can, in order to get calories and keep his fluid intake up.
When he's better, he can jump back on track with you.

Late to the party, but here's my two cents.

Cottage cheese is listed in some Atkins editions. It does have carbs, but can be a part of the daily allotment. Don't get the low-fat version. Go for the 4%. Occasionally, for sweet tooth, I sprinkle a little Splenda on it--and cinnamon.
