Default Hello

I have been LC'ing it for 2 weeks now and found this site looking for a low carb asian lettuce wrap. Haven't really found a recipe I like, but I will make up my own. So glad I found this site. I need support and I like web forums.

I have 75-80lbs to lose. Not sure how much, will see when I am closer. I have 3 very young children and I want very much to be a part not only of their lives, but also of their children's lives. So I must become healthier to do this.

I have not begun exercising yet, but that is a goal for the immediate future(next week or 2).

I am hoping to get my hubby on board and eating LC with me. He needs to lose 30-40lbs. Plus he is now taking bp meds. Hypertension is hereditary in his fam. I am trying to impress upon him how much I want him around for a very long time. (His mom died at 60, plus 3 grandparents around same age, all of stroke.)
So, without becoming a nag I want him to join me.

Well, that's enough for an intro. Off to make lettuce wraps. Will tour site later.

Glad to have you with us, Nikki! It sounds like you have lots of great reasons to stay on track, and I would be surprised if DH will soon join you, once he realizes how well you're doing and how great you're eating.

I will do that. I found a recipe for hoison sauce, which does have carbs in form of sugar, but I was willling... But the stir fried chicken with hoison was divine in a lettuce wrap. If I could find a way to get molasses that is low carb or maybe try the bean paste that is mentioned, not sure what is in that, though.
The total carb count was 6-7. I found that to be acceptable.
I then added stir fried veggies and called it dinner.
Will probably repeat this with left over pork loin tomorrow for lunch, so I will post recipe then, if I am able. We are suppose to have bad storm, possible tornadoes tomorrow. Hopefully just thunderstorms. Dh is a bit freaked out. Hope he sleeps all night. Usually if it's storming he wakes up and can't go back to sleep, which, of course, wakes me.

I just wanted to say hi and welcome. When I started LCing DH was kind of skeptical but supportive, although he didn't want to try it himself. After I had lost 20 lbs, though, he decided that it might work for him, too.

He lost 30 lbs fairly quickly and has kept it off for months now. So, I think that your own determination and successes could help your DH see that joining you might be the way to go.

I love ordering lettuce wraps, but I've never tried making them at home. Do you have a recipe? I always love trying new LC recipes.

Hi Nikki! Although my DH doesn't say he does low carb, he mostly does it by default because that's how I cook. He does have oatmeal everyday for breakfast and his job often has him eating candy (he works in a chocolate factory - we call him Willy Wonka!). He often has to test the candies! And he comes home smelling like chocolate every night!
