Not even close to full strength yet, Gregg. But I'm still doing that 10 day regimen of 2 powerful antibiotics. They knock the heck out of me. But it's started getting better the past 2 days. The good news is I've lost 4 pounds since this started. What a way to lose weight, but I'll take it any way I can get it!

Cooking for one can be challenging if you get beyond the steaks and chops that single cooks usually fix for supper. Did a really good sort of stir fry for dinner tonight. Took a cup of black soy beans and added a bit of water and some beef stock, (okay beef base powder), 1/3 cup salsa (because a can of tomatoes would have been too much) cayenne pepper and a tsp of leeks i had left over (waste not want not) and put it on the back burner to simmer to make them a bit more tender. Then i added peanut oil to my wok and stir-fried chopped green peppers and onions and a clove of garlic. after a few I threw in some cubed pork shoulder and stir fried that on high until well browned. Added the beans mixture to the wok and covered it and simmered on low heat while i walked the dog. Came in and added soy sauce and 1 tbs s.f. raspberry jam. cooked a few minutes more. Very good! I wish i'd made more. Served it with hot chili oil sprinkled on top.

Even cooking for 2 can be tough. We had 5 kids and they had the nerve to grow up and leave home! Now, I have a terrible time just cooking for the two of us. I always make way too much. That could be the reason why I have two very chubby dogs?

LOL Donna! My sister has the same problem. She always has enough leftovers to feed everyone 2 or 3 times. My problem is i eat what i make. So i have to make just enough.

*L*...love the way you said in ONE breath that you wish you had made more..(of the yummy sounding stirfry) and then say that you EAT what you make so you have to make JUST ENOUGH..
*L* sounds like an INNER STRUGGLE of you wanting to eat what you SHOULD and eating what you WANT! *L*... ya done good robbo! i just hope the EATING less DUE to the meds.. doesnt leave you in a weakened condition leading to MORE problems...
i am NOT with ya on the losing weight whatever way you CAN.. bubba... you take CARE of yourself! *making up for lost time pickin on ya *..

Rob, when I lived along, many moons ago, I would pre cook food for the week, then freeze it, taking out a portion each morning of something to eat for that day.... dh is out of town this week and i took some time this weekend and made chicken curry with veggies, a beef stew with lots of veggies and some broiled chicken breast to add to salads.... now when i come home, I grab and nuke what I want.... and have some things to take to work for lunch....
have a great day.

Kim - Definitely an inner struggle between what I want and what I should have. A struggle I win most days.

Shimmer - Thanks for stopping by!

Carolyn - Yes I used to do that too until I started eating more the night I made it than made into the freezer. lol I should hire my sister to cook meals for me and deliver them already frozen. I'm good about not being tempted by food once it's frozen. Well ice cream is an exception. lol

I'm feeling much better the past couple days. Only have 2 more days of antibiotics (anti-life) left and that means my last pills will be taken early tomorrow morning (5:30ish). Hooray, I cannot wait! But I still will not be able to drink any wine or any alcohol until saturday or sunday. Not that I've been Jonesing for any but it will be nice to be able to have a couple - three miller lites watching football. It was rough watching everyone else drinking beer while I sipped on some Diet V-8 splash. Which by the way is Very good and only 10 calories and 3 carbs per cup. I got the berry blend.

Rob, I know exactly what you mean about eating more than freezing. My son and I both have the same problem. If I make a double batch of something for dinner, I need to package it up BEFORE we start to eat. Otherwise there's not enough left for a second meal...sometimes not even enough for a snack. LOL

Ice cream is and always has been my biggest weakness. It ranks right up there with chocolate. I won't even allow myself to purchase the low carb kind at this point because I know I'll not be able to eat just a bit.

I see you got a bit of walking in while going to the store. That's good. But do take it easy when you first start your regular walks again. It won't take long until you'll be right back to where you were...you just don't want to get back to where you were at the day before you went on the antibiotics.

Melissa - I eat whatever amount of ice cream I buy within 48 hours except for the ice cream bars. For some reason I can limit myself to one or sometimes 2 a day. You might give those a try come summer when you NEEEED an ice cream fix.

Gregg - yes the beer is on order for Sunday! Every team I really liked is out so I'm rooting for The Pats because a good friend is a fan and I'll pull for the falcons because they're closer. dumb reason but ya gotta have a reason.

I forced myself to walk 2 1/2 miels today and it hurt. Not just cuz of the meds/pain problem but because of the dam cold. But I exaggerate, once i got going with the hood pulled over my head it wasn't too bad. But I won't be up to my usual distances until spring I don;t think.

Yeah, Kim, Effort! <sigh>

I just wanted to post now so my journal doesn't go to the second page.

Did almost nothing today so far. I got up at 2:45a.m. and tried to go back to sleep twice so far. Having eaten breakfast at 4:45 and lunch at 11:00 I strted making my dinner at 3:00 and figure I'll eat at 4:30. Maybe I'll only eat half of the chicken cacciatore, no flour thank you, and save the rest to eat around 7:00. This way i won't wake up starving tomorrow. There has to be a better way.

Took the last 2 cipro and flagyl this morning! HOOOOORAAAAAAAYY!! Life may return to normal tomorrow. But do I want it to? I lost 6 pounds since i got sick. Yes the scale said 200 this morning. On the button! just a lil ol half pound and i'm in the 200's. It would be very fitting that I reach this landmark in time for my 2nd atkinsversary. That's feb 14 for those card sending kind of people. Happy valentines day to a big loser.
