The pulled pork sounds awesome, I'm still trying to find sauce that is low enough carb (or a recipe) so that I can make some. I think I just need to get me some pork fat!

Katie, I usually make my own bbque sauce for the pulled pork. Here's that recipe:


1 cup sugar free ketchup
1/4 cup finely chopped onion
1 garlic clove minced
1 teaspoon chili powder
1 teaspoon paprika
1 tablespoon vinegar
1 tablespoon Liquid Smoke
1 tablespoon Olive Oil
1/2 teaspoon black pepper
1/2 teaspoon cumin
2 packets of Splenda

In a small saucepan combine all ingredients. Heat to almost boiling and then remove from stove and allow to cool for at least an hour to blend the flavors.

In the morning place a boneless pork shoulder in your crockpot. Pierce the meat in several places with a fork. Pour 1/2 of a 3.5 bottle of Liquid Smoke all over the top of the pork roast. Set the crockpot on low and cook for six to eight hours or so. Just before ready to serve, pour the bbque sauce over and turn up to medium. Watch the cockpot during this time as you do not want your sauce to burn. Happy eating!

i must have missed your enchilada moment rhonda... but with as well as you have been doing (and some when you havent eaten near enough all day! ... i expect with a little water you'll be right back in the groove !

glad you can swing keeping the T-BIRD... some things ya just have to make room for eh? ;-)

i HAVE been walking during the day alot since moon is only working mornings at the radio station... but i know what ya mean... walking at night is a bit scary sometimes.. especially when its snowy or icy on the road...

i havent walked with daughter2 in AGES... (thinkin maybe since i went to alaska in june) she walks from HER house to HER work every day now... so she doesnt need to walk with me...
she has really seen alot of positive change in her body since walking to work... on her feet all DAY at work (she has MY old asst mgr job at the clothing store i used to work at ..wierd... really wierd.. ) at OUR business's she was up on her feet most of the day with the pizza shoppe... but with the furniture shoppe she was able to sit at the desk WAAAAAAAAAAAAAAAAAAAY more..
anywho... i miss walking with her... even tho i love walking alone....
she works all day from quarter to nine in the morning till six thirty at night... so i dont see her NEAR as much as before....
its been good for her tho.... i can see that...

ohmygawd its a JOURNAL HIJACK! i forgot i wasnt in my own place *L*

Hijack my journal ANYTIME Kim! In fact, I miss you dearly when you are away. Yes, I had that enchillada moment and it has passed and I am doing good, once again One thing with this WOL, you learn your body very well, and that is the key to success. After not eating enormous amount of carbs for a year, I can feel it when I overload, and I do NOT like the feeling at all. A reminder that keeps my in check. I miss my oldest daughter as well who married......... but I realize I must allow her to have her own life and NOT call her every day as I wish to. I am glad things are going well with you. Wish I could hear the radio station Moon was on... he is such a sweetheart..... I am still looking for mine! I am going to miss walking so very much when the ice and snow comes along here..... at least Rob has instilled that determination in us to WANT to get out and walk! LIONS AND TIGERS AND BEARS....... OH MY! Do not walk after dark Kim!

Hi, Rhonda. Thanks for the nice compliment over in the General forum--and the invitation to visit here. Actually, I do drop in from time to time, and the thread notifications pop into my e-mail now.

Hope you'll keep the T-bird, whatever you have to do. You'd hate yourself on some great January day when the temp soars to 70 if you didn't have it. I keep my Miata mostly under wraps in the winter. Still, it's so little, if it gets stuck in a snowbank, a couple guys can pick it up and put it back on the road in a jiffy. And they always do!

I was inspecting that Magic Bullet thingie in the Jones Store the other day. It was sixty bucks or so, but the store (like most of them) is having a 20% off sale on just about everything. You might check it out. (Small appliances might be in the fine print exclusion.) I bought one of those pre-lit Xmas trees for a bargain price.

Barb, I am so thrilled you stopped by! Thanks for the suggestion at looking at the Jones Store for the bullet. I think I might do that Friday. I so want one..... but refuse to use my credit cards anymore. Yes, the snow and ice will be here soon as we both know.... I suppose that is the nice thing about having a small car like yours..... of course, if you were not such a pretty woman, doubtfully there would be many men assisting you out of the snowbank! Just one of those things I have observed.... If you are not beautiful or old, they tend to drive right by!

Defrosting the bird in the frig today. Hopefully, it will be thawed enough when I return home from the office this evening to start prepping it for cooking.

I hope your turkey thaws in time, Rhonda. I moved mine from the fridge to the sink today. I just hope I don't give everyone ptomaine. I've had it in the fridge since Sunday night and its still frozen solid :(

Rhonda - I find if I have a big turkey (15 lbs or more) I have to put it in teh fridge by monday evening or it;s still slightly frozen on thursday morning. If you think it isn't defrosting fast enough put it in an ice chest and cover with water. That will make it defrost more than twice as fast as air defrosting. You could even brine it that way. wishing you a TGIF!! on wednesday once again

Hi Rhonda! I'm gonna try out that recipe for pulled pork. Last time I did Carolina pulled pork it took me over 16 hours and a smoker to do it. I mopped it every 30 minutes. Oh boy was it good though. Yours looks much easier.

people who hear moon on the radio like him.. ME? I am just to freaked when he mentions anything about me or family stuff.. and he sure has NO editing skills in that regard *L*
but i do like to hear him laugh when he is doing the chit chat with the owner every morning.. that is fun..

one thing he is NOT is politically correct..
so i cant listen very often...
