Here's the requested Meatball Stew Recipe. It was my grandmother's. Definitely not low carb, but can be modified. I used low carb bread to make the meatballs in mine this weekend.
Old-Fashioned Meatball Stew
INGREDIENTS:
2 tablespoons minced dried onion
1/2 cup fine dry bread crumbs, plain or seasoned
1 teaspoon Worcestershire sauce
2 eggs, lightly beaten
salt and pepper, about 1/4 tsp. each, or to taste
1 1/2 to 2 lbs ground beef
2 tablespoons vegetable oil
4 to 5 medium red potatoes, peeled and cubed
1 or 2 carrots, sliced about 1/2-inch thick
2 ribs celery, chopped, or 1 1/2 tablespoons dried celery flakes
1 medium onion, chopped coarsely
1 can (10oz) cream of mushroom soup
1 can (10oz) tomato soup
PREPARATION:
Mix eggs with dried onion, bread crumbs, Worcester sauce, and salt and pepper. Blend meat in and mix thoroughly. Heat oil over medium-high heat in a large skillet. Form meat mixture into meatballs about 1 1/2 to 2 inches in diameter; brown on all sides in hot oil.
While meatballs are browning, place the potatoes, carrots, and celery in a Crock Pot (3 1/2-quart or larger). Using a slotted spoon or spatula, place browned meatballs on the vegetables. Quickly brown the onions and add to the Crock Pot. Pour soups over all; cover and cook on low for 7 to 9 hours (3 1/2 to 5 on high). Taste and adjust seasonings before serving.
Serves 4 to 6.

Yes, I definitely had a workout yesterday loading the firewood. Felt good though. Arms are a little sore this morning, so it lets me know I need to do a little bit more upper body workouts.
Vickie, thanks for stopping by this morning with your decafI wish you much luck in giving up the stuff. I only gave it up during my two week induction. Caffeine does not seem to bother me..... However, I only have it with my morning coffee. The remainder of the day is usually water only, with maybe some green decaf tea in the evenings.

Can you say..... TIRED???????? I think I need to sleep for about two days. Made chipolte taco salad (my favorite) and too tired to even eat it tonight. Kiddos had a feast but hated the l/c taco shells that I used instead of the high carb chips. Hey, they were in the pantry for about six months, so time to go! At least they ate the salad part of the mealThere is a sense to my madness!
Time to reanalyize my own life and see exactly what direction I am headed. Have my rescheduled luncheon with the general counsel of the insurance company after the massive snow storm we both cancelled out on a couple of weeks ago. Mr. Boss Man doesn't want me to have that for many reasons...... mostly because we lost the big trial he was a client for and now appealing the case....... and the gentleman I am having lunch with.... well, threatening to sue the firm for malpractice, and making his case very well.... I might add. So, since I am NOT sneaky, he will be picking me up at the office on Thursday..... and I guess let the chips fall where they may. Have to think about my children..... my financial future.... and getting out of the pit I have been in for five years with NO time off.
Anyway, going to finish folding my laundry..... debate life in general, and hopefully fall asleep for at least a couple of hours.

Rhonda - What about being vested in whatever plans your firm has for you. Didn't you say you need to wait until March? I admire your honesty with your biss but I;ve seen that backfire too many times to be comfortable with it. I knew a guy who was a bartender for a major restaurant chain who gave his 2 week notice. The Manager in charge of scheduling only scheduled him for 20 hours the last 2 weeks. Low? Yes but what could he do. What he did - he walked out on the spot. Not saying this is your situation just That I am always leery of being too frank and earnest.

I totally admire your honesty and integrity in this, but Rob's right, it's risky. Being labeled a "flight risk" prior to taking another job is dangerous business.
I've seen it work out really well for some people and really badly for others. I work with a girl that got a promotion when she threatened to leave and another that had every ounce of responsiblity stripped from her when she did the same thing. It doesn't seemed to be based on employee merit, either. Be careful

I totally understand the "could sleep for 2 days", and I get way more sleep than you. I'm not sure how you keep going sometimesI hope you manage to get a little more rest over the next few days.

Well guys, I appreciate your advice, and yes, this may backfire on me being so honest with Mr. Boss Man. Rob, I plan on letting the general counsel know that I must stay with my current employer until March 26th when I am fully vested. He is the one that is continually calling me wanting me to discuss employment with him, so he will either wait..... or not wait.....

Ah ha! Satan get behind me!Just joking! I deal with you folks all day long... I work for a national mediation/arbitration company coordinating and setting up cases for ADR. Most da's are really nice...overwhelmed...especially house counsel for the carriers...but nice. ;-)
