anywho... really great that you have those clothes to donate to make some woman feel BETTER.. isnt that wonderful? something that you NEVER want to wear again is going to make some OTHER woman raise her self esteem and posibly get a job and change her LIFE because of you.. :-) yeah... mull THAT over a little while...

and then go eat something green!

Hey Kim! Yeah.... I know some more GREEN veggies.... Baby spinach would be good.... really like it with salmon ..... thanks for the reminder. Sometimes I just get on a kick and forget about other stuff Been eating lots of cooked cabbage for dinner .... guess I over-bought and cooked too much but it is good and low carb/calorie. Going to try Maggie's cereal this weekend... figure if I like it, will only be a weekend treat cause although it has lots of fiber..... still, at least to me.... has lots of carbs. I am still trying to keep my carbs around 30 to 35 and mostly from veggies as I have found I do best with that. Up again at 3:00 a.m. on a Saturday morning... guess I will try to get a nap in later today if I cannot go back to sleep.

It's now been a little over 11 weeks since I began this WOL..... I am still in amazement with all the weight and engery I have found since beginning. The weight I have lost is really becoming very apparent to others now. Had at least 4 people today at the office comment on it. Glad it is showing..... probably because I had purchased some new clothes that actually fit and don't sag or try to cover up..... even bought some cute jeans and shirts that don't hide my curves or lack thereof

Kim, I have regularly donated to the women's shelters. After my first divorce with four small children, I found myself and the children seeking help from one of them until my family could wire me some money and come and pick me and the children up :( You see, my ex cleared out all of our bank accounts and I didn't dare stay at home because although I had a restraining order against him, he had violated those before and well.... I was basically in fear for mine and my children's lives... Stayed in a Battered Women's Shelter with the children for three days and the people there were so wonderful and compassionate.... will never forget their kindness... Actually, when I left with the children, I only took the clothes we had on our backs as it was one of those "emergency exits" no time to even pack a bag. Needless to say, when I was able to return to the house, much of my prized possessions had been destroyed ... But, it was worth it all to get out of an abusive situation and I have rarely looked back. Ex suffered a heart attack last year..... and generally not in very good health. I do believe in Karma...

Forgot to post what I had for dinner last night here..... MUST keep track of those things if I am ever to learn what or what doesn't work for me!

Dinner was cooked cabbage again.... (only one more head to go!) and 4 ounces of grilled pork (lean) with some carb options asian marinade... it was good.... used only 4 tablespoons of it total and added some water and let it simmer on the stove with the meat for about 30 minutes. Total carbs for 4 tablespoons was 4 with 150 calories, so since I only ate about 1/4 of what was there.... not bad. Kids didn't even realize it was l/c

On coffee cup number 4 now..... wide awake, but who wouldn't be after being up since 3:00 a.m.?

OMG that cabbage would be playing havoc on my system LOL....you have more strength than I

I'm up with ya too hon....as you read, baby up at 3am. Nice and quiet now though, makes for good journal reading time.

For some reason, cabbage has never bothered me..... Now as to tomato-based things like pasta sauce.... well, they used to play havic with me... Now, have them so seldom, and when I do, it is always the l/c stuff. Haven't had heartburn in months... LOVE this WOL!

Dropped another pound this morning... that's a total of 5 pounds in one week.... don't know what is up, but I will take it Hopefully, I won't find it again in a few days....

Still haven't made Maggie's cereal; maybe today. Going to make some spinach bread today as well. Never had it, so we'll see if I like it. Would LOVE to have a sandwich... so maybe this will trick me into thinking I am eating one, since there will be something between the meat and cheese!

Got the first floor cleaned on the house yesterday.... Now only two more floors to go... but those are the easy ones usually..... Lots to do and sooooo little time before tomorrow morning.... don't want to even think about that right now. Just going to enjoy my last day of freedom!

Made the spinach bread... it was good! Had it with 2 ounces of roast beef and 1 ounce of swiss cheese..... Have four more slices of it for lunches this week, so that is good. FORGOT to take my supplements this morning! Dang, and it's already 10:00 a.m. Guess I was sooooo excited about finally having a sandwich..... even had to have it for breakfast Will take them today when I have lunch.... Have to get my lunches ready for this week plus finish the laundry so WTH am I doing online?????

Took a nice long walk through the woods this morning with my beloved Bassets.... no need for weights when you have them pulling you all the way! Also walked around the yard to see what rose bushes had survived the winter.... they all seemed to do so, so my rose garden should be in good shape for spring Need to get at least one more decorative tree for the back yard ..... not sure what kind I want, but will go shopping next weekend at the nursery for one that catches my eye..... the bean tree beside of the house is gonna have to go :( May try to replant it someplace else in the yard, but it is too close to the air conditioner and the foundation... worried about the damage it will cause if I leave it there.... They are so beautiful so I will hope I can transplate it someplace... Guess I will be extra nice to DH and see if he will dig it up

i was left with the three kids.. staying with strangers and babysitting for her FOUR (and watching MY three) and she did the same while i bicycled to work at 4 am to a service station... maaaaaaaaaaaaan that seems like a LIFETIME ago..*L* i guess it really WAS..*L* 26 +years ago..
one nite... just before he left.. i was out of diapers AND formula... and uh.. lets just say that after a LOUD disagreement .. he PASSED OUT while i sat crying about what to do in the middle of the nite when your HUSBAND gambled away the money for those things and EVERYTHING else.. and comes home in the middle of the nite and falls asleep..

i heard a noise at the door... and i went out to check what it was.. there on the doorstep was a bag with pampers and formula... i have no idea who brought it..(hell it was 2 or 3 am) no note was left .. but there ARE angels out there... and i often think about the sweetness of the gesture ...and wish i could have thanked them.
also... i ended up crying a few days later while trying to decide what to get at the corner little store... with what few bucks i had... the clerk gave me more diapers and the number of the girl who was in need of a babysitter... and i subsequently moved in with her for a time (blocked out how long... but wasnt very) until one of the kids told me that VANESSA sure was red when we came back to the CAR (phoenix people! can you say DEATH BY HEAT in a closed car? she wasnt a year old yet.. i dont remember where i went next... but i ended up going to court reporting school and getting an apt. (which they should have NEVER given on the states WEEKLY allowance for it... but the acting manager felt sorry for me and let me take the apartment (another angelic intervention) and he is my BROTHER IN LAW now *L*

annnnnnnnnnnnnywho... yeah.. karma for sure... i hope that all these kindnesses are repaid... i try to do that sorta RANDOM acts of kindness when I CAN...

sorry for the rambling..*sigh*... what i REALLY came here to do was ask you WHAT IS THE RECIPE FOR SPINICH BREAD *L*

Hey Kim! Thank you so much for sharing your story with me... when we see where we were .... and where we are today, we sure have no reason not to be thankful and try to help others! You will love this recipe... It is really good and since I know you LOVE spinach... you will be making some soon. Don't think of it as "cooking" -- just stirring a few ingredients together

Spinach Bread

Small package of spinach (around 10 ounces) thawed and drained
4 eggs
(spices of your choice but here is what I used)
garlic powder
onion powder
salt
pepper
cayenne
few red pepper flakes
parmesian cheese

Mix all ingredients together well. Spread out to be as thick as you want. (I used a baking pan -- It does rise a little with the eggs in the mix) Bake in a well-oiled (I used olive olive) baking pan or dish. Bake at 350 for about 15-18 minutes or until firm. Slice into 6 pieces and eat with your favorit sandwich stuffers.

This can be stored in the fridge or freezer. You can rewarm it slightly if you like in the micro when ready to eat or just eat it at room temperature.

The weekend was good. Got the clothes to the women's shelter and the house all cleaned Ate on target all weekend.

Lunch yesterday was 1 grilled hamburger patty, 1 ounce of cheese and 1 cup of broccoli.

Dinner was two grilled hamburger patties, 1 ounce of cheese and another cup of broccoli.

No snacks, plenty of water and green tea

Oh okay, could have gotten in more veggies, but I figure the broccoli and the spinach bread I had for breakfast was enough.

Breakfast this morning is two boiled eggs. Lunch will be a salad with yet another hamburger patty.... maybe an ounce of cheese on my salad or on the patty. Took my supplements and drinking my water. It's going to be a LONG Monday at the office :(

Bought some Luzianne Floravorings for ice tea -- the peach mango one (0 carbs, 0 calories) no sweetner.... it's good, makes plan old green office tea tolerable... especially since I do not use splenda with my teas... Anyway, lunch went as planned... I was VERY good considering there was a CHEESECAKE in the break room at lunch today for the taking........ would have to be my most favorite dessert of all! I was strong tho and heated up my burger and made my salad and dare not go back in there until the end of the day, except to deposited my dish in the dishwasher.... Would not even have been tempted had it not been CHEESECAKE! Surely it won't last long in the office with all these people who devour anything and everything in site!

Okay..... didn't give into the CHEESECAKE Found a recipe for a low carb one, but sure it has tons of calories, but gonna post it here in the event I ever feel the URGE to have one again

Basic Low Carb Cheesecake

32 ounces cream cheese
1 cup splenda
1 teaspoon vanilla extract
1 teaspoon lemon juice
4 eggs
1 egg yolk
3 tablespoons sour cream


With an electric mixer, combine the cream cheese and splenda at
slow to medium speed, scraping sides often. Add all other
ingredients except eggs. When completely mixed (with no lumps),
add the eggs and egg yolk, one at a time, beating very slowly.
When eggs are incorporated, do not mix any more. Over-mixing the
eggs is a contributing cause of cracked cheesecakes. (The leading
cause of cracking is over-cooking, so don't believe any one who
tells you it is normal for a cheesecake to be cracked; it
isn!&t.) Always treat the batter gently.
Pour the mixture into the springform pan. Place the pan on a very large piece of
aluminum foil, and fold the foil up around the pan to create a
watertight barrier around the cheesecake. Then place the barrier
pan in an even larger pan and fill the larger pan halfway with
water. This is called a water bath. It is a gentler way to cook
the cheesecake. Place the entire water bath containing the
cheesecake in a 300-degree preheated oven. Cook for 1 hour and
reduce heat to 200 degrees for 1 more hour. Turn oven off and
leave cheesecake in until the oven is completely cool. The
cheesecake can even be left overnight at this point. Cracks can also occur when a cheesecake cools too quickly. It may be beneficial to run a knife around the edge of the cheesecake, separating it from the sides of the pan. If your goal is to serve
the cheesecake on a different dish without the bottom of the spring form pan, then the pan can be lined with parchment paper before the batter is poured in. Make sure to grease both sides of the paper. This will make for easy removal of the cheesecake
later. It works best if the cheesecake has been refrigerated fully before trying to remove it from the bottom pan. (may substitute 1 cup of Davinci Syrup which reduces carb count to 3 for each serving!)

Dinner for the family is hamburger helper tonight... Too tired to make them anything else on a Monday. Guess I will just have a faux taco salad when I brown up the hamburger... At least it is ground sirloin, so little fat content. It's raining and cold here tonight, with more snow coming in tomorrow, so guess it will have to be WATP tonight for exercise. Got my sweats on and ready to go after dinner is made for the family.
