I tried the spinach bread, but maybe I didnt drain it enough or something. It came out more quiche-ish and less bread-ish. It tasted really good, though, and I did add wasabi to it I'll try again this weekend. Thanks for the recipe!

Well, it is going to taste more like a quiche... you do have to drain it REALLY well and make sure you whip the eggs enough. At least I feel like I am eating something outside of the meat and cheese besides a lettuce wrap Brought some for lunch today... gonna have to try putting some WASABI in it this weekend

Have a great day and get your water in!

Rhonda

Had to buy a l/c yogart this morning at the snack shop in the building.... thought for sure I had packed a couple of boiled eggs for breakfast before I left the house, but not in my bag.... Was in such a race to get out the door this morning, maybe I didn't. Anyway, did pack my lunch. Spinach bread with l/c roast beef and pepper jack cheese... NO SNACKS today.... Figure I do not need them if I eat balanced meals... Keeping my calories at 1500 to 1600 and snacks just don't figure into that unless I want to eat more veggies.... and I really don't Making sure I get enough veggies in at lunch and dinner.

Good job not eating garbage when you forgot your eggs Rhonda. The only thing we have in the snack fund that is even remotely low carb are slim jims and peanuts.

Thanks Renee Thursday will be three months I have been doing this WOL and so far I have not cheated. It's tough sometimes, especially making separate meals for the family, but I am determined!

wow... almost three months already! thats great! and while i dont like the word CHEAT... i DO know THIS... it is MUCH easier to eat OFF plan... if you do it at all... its a slippery slope.... ooooooooooooooh THIS isnt sooooooooooooooo bad...ohhhhhhhhhhhh THAT isnt gonna hurt this once... *L*...
of course i am talking about LC items....
for ME... except for that slice of bread.... and a few wasabi chips ....it is ALWAYS so called LOW CARB that are the things i tend to go OVERBOARD with...
(as in TOO much cheese... too much half and half ..blah blah blah...

keep eating clean rhonda... it isnt being deprived...its doing what you REALLY need...
as long as you get those VEGGIES in! :-)
^5 lady!

Thanks you guys..... you are ALL the GREATEST! Yeah, I shouldn't say 'CHEAT' but I have to :( Otherwise, like you said Kim, I would be far tooooooo easy for me to slip in a french fry or even yummier that dang CHEESECAKE! I feel so good eating this way and exercising each day.... It's like a new me....... well..... wait it IS a NEW ME Don't mind all the compliments I get either.... it's nice to finally be noticed! But now, l/cing has become so easy..... I don't even have to think about what I can or "choose" not to have..... I could kick myself in the butt for not doing this two years ago as I had planned....... even bought the book, but somehow never read it then...Amazing how in three months you can really turn you life around plus meet great supportive people who know where you are....... your struggles and where you want to be!

Kim........ I am gonna get in my veggies tonight Steaming brocoli and cauliflower now... and broiling those jalepano sausages my DH bought me about ..... oh..... let's say two months ago and have been in the back of my freezer. He asked me WHY I hadn't eaten those since it was a kind gesture of him supporting me and picking out things I would eat on this WOL.... Welllllllll didn't want to say they probably have TONS of calories... so just decided to cook them up and eat a couple of slices with TONS of veggies See, I knew you would be proud of me! Never seen these kinds of sausages before..... kinda like link ones but they came from the deli at the grocery store..... well, sure the taste will be interesting mixed in with all those veggies!

Time for WATP..... snowed and icy plus brutal COLD winds tonight so no walking for me except in the living room

No breakfast this morning.... have a pounding headache that will not go away... I should have stayed home, but figured I had too many deadlines to meet today. I will try to eat something for lunch, but for now it has just been coffee and water. Will have some green tea after I finish my third glass of water.... Hopefully, this isn't the beginning of a migraine :( Haven't had one of those in almost a year, so not giving into it yet!

Lunch was leftovers from last night's dinner. Sausages (4 ounces) with brocoli and cauliflower weren't too bad leftover. Glad they are gone tho... a little more calories than I want at this time to consume. Also had 1 serving of the homemade kind of sugar-free jello. Should be good until tonight as NO SNACKS at least for a couple more weeks. Just want to eat healthy with lots of veggies.

Dinner was a faux taco salad..... and I ate in late -- like 8:30 or so. Hate that when it happens. Prefer to eat dinner much earlier, but had too many things to do once I arrived home. Probably will be up a few more hours working on the appellate brief, so probably will be okay. Don't want to sleep on that much food! Still drinking my water. One more glass to go to get to my quota for the day. Guess who will be going to the bathroom all night!

Thanks for checking in No, still have the pounding headache this morning at 4:00 a.m. Probably a day away from stress would help, but still planning on going into the office this morning. Thanks for asking tho!

Boiling my eggs for the office now... scale said I had GAINED a pound this morning, but figure it is due to TOM as that will come and visit me any time now... Guess it is better than the alternative -- Have enough children Gonna REMIND myself to stay off the scale for a few days or maybe longer until her "visit" is all over.

Oh the brighter side, it is Thursday and hoping to take at least part of the day on Friday off. My poor children have had their spring break for the last week and no mommy to stay home with them and have fun :( Got to get my priorities straight, but there is a house payment to make each month!
