Want to pick your brain; am having a potluck lunch at work on Monday and don't plan to cook. Got any ideas on what I could bring that would be okay for the carb-eating folks and still okay for me to eat? I can't seem to think of anything...

Congrats on your progress Sandi and congrats to your sister. Wish I could partner with my niece and get her on back on the LC wagon. She is unfortunately struggling with an addiction to starches: potatoes, rice, bread. I told her she will get back on the LCE wagon when she is ready.

Congratulations again. Keep on truckin girlfriend!
(How's that for some mixed generation slang? Groovy?)

Phat is right about carb addiction, or at least white, processed, overrefined carbs-- for me its worse than crack or alcohol or pain pills. You can walk away from those things without seeing them every second going into everyone's mouth~ and most of us didn't start our addiction to those things as toddlers, lol. (Poor babies, I do have some every year who WERE born drug addicts, and they are still struggling to survive by kindergarten.)

Getting your relatives to go low carb with you is like trying to get them to quit smoking when you do: fraught with peril. I have tried to convert everyone I know to low carb eating, but just like sharing the Gospel-- they won't hear it till they are ready, or till they hit rock bottom and need someone to help them crawl out of a slimy pit. You must be a terrific example and motivator because you are doing so GREAT as a family!!!
Practically the last words my Daddy spoke to me were "Darling, You have GOT to lose weight! (The words between the the lines were -I'm dying because I didn't). But it still took me nearly 2 years to get started. You are doing great as a whole family!!!!

Still here and doing it
Been busy
The school hired me to serve lunch but the pay must be min. wage.It is barely worth it money wise, but I said yes because It is making me move, and get out and all. I have also having issues of this hernia or what ever it is.
I just pray its not to late for me to get healthier.

Yeah Sandi! Getting even a minimum wage job helps with a couple of things (or at least it always has for me). It gets me out of the house, makes me brush my hair and try to find decent clothing, makes me think about something other than my problems (I know, i whine about my job a lot on here, but it would be worse if I was at home all the time by myself).
I don't know about you, but serving food in our school cafeteria would make me NOT want to eat, lol. They used to make some things the kids liked (regional foods, like enchiladas and tacitos) that the kids really ate up. Then the dietician changed everything around and it is supposed to be low fat now, but it looks awful, and they use the cheapest most horrible processed foods they can buy. Just thinking about those mounds of instant mashed potatoes makes me feel puky, without even the "chicken fingers" to go with, lol. That said, my poor son had to eat it today, because we both woke up too late to pack his lunch.

I am proud of you for moving forward. You will find a better job, your health will improve, your weight will continue to be smaller, and you will be really glad you started low carb lifestyle. I'm glad you did because you are so encouraging to me.

PS. What are you doing for your hernia? Can you wear something supportive, like bike shorts or compression shorts to help with discomfort till you figure out what u are going to do?

The job is to help the school more then the money, Shoot I need the money too, but It is a win, win here.
Who are they gonna hire for one hour a day? for so little, and I could use the money and It makes me go out and do things.

well it has been a long day here
running around and all
Did lunch at the school, went to the dr. he said he doesnt think its a hernia, but a very large fatty tumor. It is bigger then his hand. He doesnt know why the pain and stuff.
So i have to have some tests and then we will see.
All I know something is hurting
not good on the diet today
I didnt cheat, just didnt eat enough
after the drs had to rush jess to work, then run in the opp. direction to get jace and bring him to PT, wait for him to get done, and then go shopping.
Now I have to wait up to get Jess, who can get out as late as 12 or later
Just picked up Mcdonalds today
had 2 double cheese burgers
right now I just want to go to bed lol

I am so sorry to hear that you are hurting. Fibro and IBS and celiac disease all cause some wierd pains, maybe that is what's going on. I am praying for you.

The Dr wants me to take more tests to see what this lump is but the
Dr did say to take a laxative and fast to give intestines a break.
SO I took it last night, and havent eaten anything but tea with cream and splenda and water. He said drink Juice but thats all sugar and I didnt want that.
It is 10:14 here and I am not hungry, Mentally hungry like I want to eat, but not physically hungry
Tomorrow Ill have eggs and a burger at night.
It feels good not eating lol

Sunday Nov 15th
Well today is Jess's Birthday
My baby is 19 now, goodness where does the time go.
He was the baby I was supposed to have aborted, because they said he didnt have a brain. (true he doesnt use it sometimes lol)
Today We went and set up for the shoe box week, and one church brought over 1200 shoe boxes, amazing
1200 kids will get a gift that wouldnt have before. No kid shouldnt have one gift at Christmas
I gave him the choice if he wanted to go out with his friends, or do the shoe boxes. He picked shoe boxes.
Everyone was amazed he was "working" on his birthday.
We ordered out from Jackson hole, where he loves,
Had a burger with cheese and pickles and 2 bites of a cheese cake
We all were starving and it tasted soooo good.
Tomorrow I work the whole day dealing with little kids, plus lunch and then I have to run Burger King Night
I am worried I wont be able to do it all, and my fibro will get in the way.
I will be so glad when tomorrow i am home. I am not sure Ill make it here to post. We shall see

Hi Sandi,

Wanted to stop by your journal and see how you're doing with the gluten-free diet. Gluten-free was really tough for me in the beginning - harder than Atkins induction. It's so hard to find quick, easy, inexpensive foods and gluten hides in so many things! I can always tell if I accidently eat gluten, I wake up with achey joints and sometimes I have flu-like symptoms and I usually "puff up". Dairy gives me intestinal issues. I used to be able to eat hard cheeses, but I had to give them up also. But when I keep my diet clean, I feel better than I did in my 20s! Keep at it - it is worth it! And, you probably know this, but it can take 6-12 months to completely clear the gluten out of your system. Once your intestines start to heal and you start to get all the great nutrients out of the foods you eat, you will feel terrific and have so much more energy.

One easy, quick way to up your veggies is to throw some canned or frozen veggies in a pan and then scramble some eggs. Olive oil is a good oil to use. I know it's expensive, but the Omega-3s are really good for your brain and nervous system.

Keep at it - you're doing great! Your loving heart just shines through in your journal postings. You remind us that there's always someone who has less than we do and little gifts and kindnesses can change people's lives.
