    Sunday was non-eventful. Ate a salad and some pistachio nuts and that was all I had all day.
    When I got on the scale on Sunday I was 147.5 so I am up a half a pound. I'm okay with that considering what I ate on Saturday.

    Monday for breakfast: 2 scrambled eggs and 3 strips of bacon. No lunch. Dinner was a stir fry with broccoli, snow pea pods, mushrooms, carrots, beef, shrimp and chicken. Very good. Soy sauce made e swell up today but I will drink more water tomorrow and hopefully won't be as bloated.

    I went to the doctor's today for an annual check-up and my flu shot. My arm is still sore from it tonight. The doctor ordered blood test but you must get them at the hospital lab and it was closed by the time I got our of the doctor's office so I have to go to the lab on Saturday morning. Have to a fasting blood work so have to remember not to eat before I go. Got my mammogram referral and a colonoscopy referral. Have the mammogram scheduled for Thursday but can't get the colonoscopy appointment until Novemeber later and with being off this week already I won't be takng any time off again until December so I scheduled it for then.

    Tomorrow is my birthday and I am going out to dinner for seafood. I will have dessert which will proably be a non-LC cheese cake. It is my birthday and I AM having something made with sugar for dessert. If I hadn't had the Saturday episode I'd feel more justified but just the same...it is MY birthday. :-)

    If you eat low carb the rest of the day, one piece of cheesecake shouldn't be a major setback. Just make sure to eat ample protein beforehand and you shouldn't get too big of an insulin spike.

    I've been away since my birthday....no, I didn't fall off the wagon. :-) Just been soooooo busy with school, work and job-hunting, which is job in itself. I am still employedd for now but I know my days are numbered.

    Birthday was nice; didn't over do it and didn't have cheesecake. :-) Had lobster and steamed veggies for dinner (NO potato) and a piece of Baskin Robbins ice-cream cake for dessert.

    Weight is currently 146.5 Have lost only 1/2 pound over the last 10 days but better than gaining!

    Foods I'eaten are pretty much the same as ususal but added a sweet potato here and there during dinner and sometimes had an apple or pear with cheese for lunch..

    Gotta run...have school at 8:00 tomorrow!

    Thanks for stopping by my journal P.i.P. High five on sticking with the plan. The last 10 pounds or so are the hardest. Don't be discouraged if it comes off slowly. Atkins encourages the last 10 pounds to be done slowly so you are better able to incorporate LC as a way of life not just a diet.

    Last 10 or so pounds don't seem to want to move. Am sticking to plan and still exercising with the trainer but still stuck on 146.5

    Oh, well, could be worse, I will hang in there. Vacation is 34 days away. Maybe stepping up the exercise or drinking more water will help. Doing a countdown to 12/3/09, the day I get on the plane to an 8 days in the sun and sand!!! CAN'T WAIT!!! Would like to lose at least anohter 1.5 pounds to be at least 145 when I go away.

    Gotta run and do homework. Posting is difficult due to school and work schedule but I am still on the LC wagon.

    Oh....bought a new car yesterday. At least it is new to me:-) a 2007.

    Get out the tape measure P.i.P. Muscle weighs more than fat and takes up much less space. If you are working with a trainer I am sure you are building muscle. Try on some smaller sized clothes and you might be pleasantly surprised.

    Finally----I am 146lbs
    10 pounds total lost since restarting the LCE lifestyle on 8/19/09.
    A real milestone for me. Took over 2 and 1/2 months but well worth the "weight". :-)

    I think Libby is correct in that muscle weighs more than fat and that I will see a difference in my clothes even if not on the scale. I put on a size 12 suit for work this morning and my pants fell off. I cracked up laughing and went to the back of the closet for one of the dusty size 10' suits I still have. The jacket fit okay but the pants were still loose. I wore the suit to work anyway and put a saftey pin in the pants waistband. I have a slew of size 8's and 6's and think I can begin pulling them out once I lose another 5-10lbs. I'm haning in there and feeling great in spite of a horrible boss and the threat of no job!!!

    Gotta run...more homework due tomorrow and Thursday.

    PS--love my new car!!!!

    Oh...some may be wondering why buy a new car when you may not have a job soon...because I deserve it!!!! Drove my old car for over 18 years and have been saving for a new one for over 3 years. I will not let a nasty boss keeep me from my dreams!!! I will flip burgers at MacDonalds and clean slop jars before I go without. I will get a new job, if need be. And, I will keep my new car.

    I say get those size 8's out and try them on. I am anxious to try on my size 10's (another 5 pounds) and then my eights (at least 10 to 12 pounds).

    Hi PIP.
    Thanks for stopping in my journal. I understand about the new car. Last year was the 1st NEW car (truck) I ever bought. I was shopping for a replacement truck and then just plain said "I deserve it." Boy, was that a lot of money. I'm worth it!

    Oooooooo....Ijust have to vent. So, I have to do this project with a classmate who has done NOTHING so far on the project. I've done all the work and am trying to explain to him what I did when he cops an attitude because he doesn't understand it and then he hangs up the phone on me. Like I don't have enough stress in my life, then I have to deal with an ignorant Son of a Sea Biscuit!!!

    Of course I called him back and he won't answer his phone. This is the second time I've had to work with him and the first time I worked with him on a project I called my professor to tell him we were having issues and the professor says, "you're two adults and I expect you to work it out": I don't pay $6,000 per class for this BS. I am going to go have me a drink before I get in my car and go find this guy to give him a piece of my mind!!!

    Today I ate: 2 small link sausages for breakfast. Broccoli for lunch and 2 spare ribs for dinner...I am way too busy to eat. Went to the trainer today and am making good progess. Working with kettle bells now. Ugh!!

    B - 2 soft boiled eggs
    L - 3 chicken wings
    D- 2 chicken wings

    Will probably add some veggies before the night is out.

    I think I pulled something in my calf with those squats on Tuesday with the kettle ball...not feeling so keen today.

    WHITE CASTLE HAMBURGER PIE
    1 pound ground beef
    1 packet onion soup mix or seasoning mixture (see recipe below)
    2 eggs
    1/2 cup mayonnaise
    1/4 cup heavy cream
    8 ounces cheddar cheese, shredded
    Salt and pepper, to taste

    Brown the hamburger with about half of the onion soup mix or seasoning mixture below *; drain the fat and season to taste with salt and pepper. Stir in the remaining soup mix or seasoning mixture and put the meat in a greased 9-10 inch pie plate. Stir in half of the cheese, then top with the remaining cheese. Beat the eggs, mayonnaise, cream and a dash of pepper; pour evenly over the meat. Bake at 350º for 30-35 minutes. Let stand 10 minutes before serving.

    Makes 6-8 servings
    Can be frozen

    * If you're wondering why I only mix half of the soup mix with the meat while cooking, then stir the rest in later, that's so it will flavor it a bit, but you won't lose most of the flavoring with the grease that's drained off.

    Serving Suggestion: For a true White Castle experience, top each serving with dill pickles and mustard. Or, make a sauce of dill pickle relish and mustard.

    Per 1/6 Pie: 490 Calories; 41g Fat; 25g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs
    Per 1/8 Pie: 368 Calories; 31g Fat; 19g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs

    SEASONING MIXTURE:
    If you'd like to save a few carbs, you can use onion powder and dry minced onions in place of the onion soup mix, which has 16 carbs per packet. I used a mixture of 2 teaspoons toasted onion powder (available from Penzeys, or use regular onion powder) and 1 tablespoon dry minced onion. I also sprinkled a little onion powder in with the egg/mayonnaise mixture. The carb count for the recipe made this way is:

    Per 1/6 Pie: 476 Calories; 41g Fat; 24g Protein; 3g Carbohydrate; trace Dietary Fiber; 2.5g Net Carbs
    Per 1/8 Pie: 357 Calories; 31g Fat; 18g Protein; 2g Carbohydrate; trace Dietary Fiber; 1.5g Net Carbs
