Hey Sandi, I like this recipe as much as the eggplant parm....hmmm.... maybe I'll take elements from both and make a "white castle hamburger eggplant parm bake."

Today I didn't get to eat breakfast and was starving by 10:00 am. My co-worker gave me 2 peanut butter crackers (the entire pack had 16 carbs for 6 crackers so eating 2 would be almost 6 carbs.)

For lunch I ate at the dreaded "Chinese cart" -- chicken, shrimp and beef combo with veggies NO rice. Always tastes great but usually causes me to retain water and show a surge up on the scale. Oh well, I;ve been just too busy to plan ahead like I usually do.

Dinner was 6 chicken wings.

Today ate:

Breakfast - boiled egg
Lunch - veggie and chicken soup (Yes....from the Chinese cart)
Dinner - Cheese steak with no roll
Snack - grapes (about 20)

I won't be getting on the scale until Sunday but I feel bloated so I know the Chinese cart food is catching up with me. Have school tomorrow all day but will try to go food shopping at least to buy some salad or veggies to make my own veggie chicken soup.

Ahhh the dreaded Chinese buffet can be a downfall for me as well. Living in the buffet capitol of the world takes some self control. Still working on that part.

Can't believe I haven't posted since the beginning of the month! Grad school is kicking my be-hind this semester. Between school and the crap going on at work, I have no time for anything , including myself. New boss still hates but I finally went to HR to complain about the way he treats me. Don't think they;ll do anything much about it but at least I put it on record (and in writing at that).

I've managed to keep up my workouts with the personal trainer and I'm not cheating with stupid, empty carbs but I did go on a bean soup binge one week. I made a 15 bean soup eith chicken one Sunday and it ended up being so much that I ate if every day for an entire week and a half. I know beans have lots of carbs in them but I told myself they are a good source of protein and fiber. The truth was I ate them because it was easy and I was too busy to cook or shop for anything else.

I haven't lost a pound since last posting and don't know if it was the beans or if it is the workouts with all of the weights but, I am down another pants size (from 12-10) so I'm finally gonna believe that muscle weighs more than fat and that is why the scale isn't moving.

I have a bunch of work to do before vacation on 12/3 so I suspect I will be AWOL form the LCE site again. But I eill try to post when I get the time.

Have school tomorrow at 8am so I've gotta run!!

P.S. -- I still love my new car!!!

Hi P.i.P. Glad to see you are hanging in there. Don't sweat the bean soup. At least it wasn't cookies and ice cream. Just remember the last 10 pounds are the hardest, and if you stick to the LC WOL and keep working out you will make your goal. I think you will see more movement in the scale once you get a break from the stress of grad school at Christmas.
