| Judy - an EXCELLENT idea - posting menus... you are brilliant, a great way to keep us on track and passing new ideas around! This is dinner tonight - Chicken pecan and roasted vegetables (red peppers, artichoke hearts, cauliflower) Chicken pecan - easy, and delicious! 1 cup ground pecans 1/2 cup grated parmesan cheese 1/2 teaspoon garlic salt 1/2 teaspoon dried leaf basil, lemon juice for dipping (I use about ? cup ? I also use ?real lemon? ? it?s easier than squeezing lemons) 4 boneless chicken breast halves, pounded to make flat and even in thickness 2 tablespoons olive oil + 1 T of butter In large shallow dish, combine pecans, cheese, garlic salt and basil. Place lemon juice in another shallow dish. Pound the chicken breasts so they are about ?? thick (actually a little thicker is fine ? don?t go crazy and flatten ?em!) Dip chicken in juice, then coat with pecan mixture. In large non-stick skillet, heat oil and butter, add the coated chicken; cook 3 to 5 minutes on each side or until golden and cooked through. ok, I'm off to walk - got lose this weight... <<sigh>>

| Monday morning--in the dark. Daylight savings time doesn't do much for us morning people, at least not at first! Oh well. Once past the initial jet lag, I'll catch up. Posting menus? Mine are not that interesting. But I'll give you the things that "anchor" my day: Breakfast is almost always flaxseed/wheat bran cereal with whey protein powder OR one-minute muffin. Gotta have my fiber fix. I put mixed berries or nuts in the cereal; a slug of cream cheese on the muffin. Plus coffee/half-n-half. Dinner almost always starts with a huge salad. Mixed greens (the ready-to-eat kind in a bag), cukes, mushrooms, olives, blue cheese crumbles, artichoke heart, etc. I like Ken's Creamy Caesar, Kraft Lite Done Right Three-Cheese Ranch, or Green Goddess. The rest of dinner is meat/fish/pork and another veggie--broccoli, green beans, zucchini. Lunch is often deviled eggs, tuna with mayo, leftover chicken or steak. (Not all on the same day!) I often skip veggies at lunchtime, because I eat a lot at dinner. I don't eat a lot of cheese. I don't snack. Green tea in the afternoon for a pick-me-up. Pretty simple. Oh, and I drink a couple glasses of wine rather frequently. I work to keep that little habit under control though. Things I can get carried away with? Extra coffee/cream--treating myself to a coffee break mid-morning. Mixed nuts--if they're in the house, my little fist is in the jar way too often. Wine--already mentioned. SF chocolate--if I buy a little bag of Russell Stover SF peppermints, they don't last long. And there's Chip's Chocolate factory across the street, with a whole case of SF goodies. | Good Monday Morning! We are a busy bunch. And we are actually talking about low carb!! I think most of us made Donna's Muffins over the weekend. I made a double recipe and noticed I was running low on eggs (Barb, we are living in the same space/time). So I used only 7 eggs, half pecan meal, half almond meal. I also ran out of vanilla. That never happens! Ended up half vanilla and half almond extract. I also made a loaf in addition to muffins. Turned out very well. Looks like an order at Netrition needs to be high on my list. I am also out of PolyD and my no-carb bake mix. All your dinners sound so delicious! Since DH does the cooking, I am afraid posting my dinners will not add one iota to anyone's list. A meat, a vegetable, a salad. I am having a "new" problem now. Shelley, I meant to ask you about it. I now have a bad metal taste in my mouth. I had to renew my steroid prescription and asked the pharmacist if it was the steroids. Nope. Today is my third treatment. I'll ask the doctor if it's the radiation. Judy! it sounds like you are getting back on the Induction bandwagon with a bang. One pound already? That's great! My skinny clothes are definitely tight, too. And last Spring I bought quite a few new outfits. I'll be damned if I have to buy more. I have not thrown out my fat clothes yet. I rummaged the containers for a few pair of not-as-big pants. They are still a little on the big side, but at least I can breathe. Being home all the time with nothing to do is THE culprit right now. And that metal taste. I keep trying to eat different things to get rid of the taste, to no avail. Best thing so far is the Diet 7-Up made with Splenda. Rachel, you sure have a huge pantry to clean out over the next 7 weeks! Someone mentioned perhaps relaxing a little and go a little easier on yourself until you are settled. That may be a plan? Funny you mentioned Corn Bread Mix. Bob mentioned just yesterday if we had corn bread. I told him to buy some Jiffy when he went to the store! Is Istanbul (not Constantinople) a vacation or work-related? I was there in January, 1969. Can you say cold and damp? I was amazed at how western it was. Bought a neat suede suit, too. Should have bought a rug. Back then, everything in that neck of the woods was cheap. Terry, if I recall, DH bought an air gun (looks like a rifle) once to scare away some squirrels. That may be better than a BB gun. Water may work well, too. But watch out for neighbors! They'll report you to the cops. That happened to us. Son Paul was aiming at some squirrels from his BR window on the second floor. All neighbor saw was a rifle coming out of the window. Sigh. Luckily, the cop was very understanding. Peg, you do have your migraine meds with you, right? Hoping you can nip this one in the bud before it takes hold. NOT FAIR when you are at the shore. Not fair any time for that matter. Shelley, so you do have PM's in your PM house! How wonderful! I remember seeing a bird in one of the compartments, but you thought it might be a starling. Were we wrong? Judy's right. Your menu's always sound good. I don't know where you get the time with your hectic schedule to create such wonderful meals! Donna, good idea about decreasing the oil in your muffins. So you use Olive Oil. I use Canola. Do you think OO is better?? You mentioned giving you daughter a "good meal." Is she coming over? (Duh. She must). Hope all goes well! Sorry I am a little hit-and-miss this morning. I am actually dreading this week with three treatments and no "down" time between taking the steroids. I also have to make 2 more copies of my "oldies" CD. All the nurses and the doctor like my CD. Since they have to listen in in case I have to have them stop for any reason, they hear my CD, which is blaring because I can't wear my hearing aids during the treatment. So I thought I'd make each of them a copy. Maybe they were just being kind? Oh well. They can dump the CD if they were! It's a mixture of my favorite oldies from the 50's, 60's and 70's. Some doo-wop and including my all-time favorite "White Shade of Pale." Anyone remember Jefferson Airplane's "White Rabbit?" "One pill makes you larger and one pill makes you small. And the ones that Mother gives you don't do anything at all ? " On that drug culture note, I bid you all a wonderful week! Mine will be good, too. It's the last of my treatments!!! Love you all.

| Hi Gang! I'm better this morning. Monday and the clouds are at the shore. It's raining. It's fine with me. Nothing could ruin my time at the shore (unless it's a migraine). I had to close the shades in the bedroom yesterday because it was so bright. I hate it when it gets that bad. I've actually had trouble with my neck throughout this trip. It's an old problem. Suspect that my spine is deteriorating. It sounds bad, but comes with my AGE. I'll get it checked out when I get back. I don't take migraine meds because I don't have any more estrogen in my bod. (not really) The Doc won't give the migraine meds to me. I really don't have them that often. Sometimes I go years without one. Good idea to post menus. Judy: We put a pork loin in the crockpot with a cup of water, garlic, salt and pepper, and a can of chopped jalapenos. Turn in on low and let it cook all day. It breaks down into "pulled pork." We actually serve it on a fried tortilla with grated cheese and lettuce like a tostada. Not exactly lc; you could skip the tortilla and simply have it on a plate. We have this at least once in two weeks. Tonight we are having another one of our favorites: Mexican Pepper Casserole. The recipe is in the Moosewood Cookbook. Slice 3 bell peppers in strips (different colors are nice). Saute onions and garlic with salt and cumin, coriander and dry mustard. Add peppers after onions are translucent, and saute for 10 minutes. (Recipe says to add flour. We dont) Layer peppers with 1/2 lb of cheddar cheese thinly sliced. Pour over with custard made with 4 large eggs and 1 and 1/2 cps sour cream. Sprinkle with paprika and bake 40-45 minutes covered. Uncover for the last 15 minutes. Rachel: I SO know what you mean about finishing up the "pantry." We've done that now TWICE, in less than four months. We've carried some things across the U.S. once and started to carry it again until I vetoed it and through most of it away. My dh is an inveterate "saver." I noticed that we have a classic Coke in the frig that we've carried both ways. Neither one of us are going to drink it. I don't know why he continues to carry it. I'm going to throw it away without his knowledge ! Alida: Hang in there sweetie. Yaknow, I get that metal taste when I am in ketosis. Could that be it? Of course, with all the stuff that your body is going through, I suspect that it is related to that. Soon this will all be over.....Sigh. Barb: Thanks so much for your posts and your ideas for "clean" eating. When I am chugging along eating clean, I don't snack either. I'm not a natural snacker, but when I give myself permission to "eat" I eat everything! I'm with you with the wine. Two glasses is my limit too. Donna: I hope that your week is a peaceful one! Terry: Good to hear from you. Your menu looks good. Yeah, I know what you mean about cravings. When I decide to eat clean, I am going to have to go through those cravings. We are going to go back to the grocery store today. Dh didn't buy enough the other day when he went, and I was starving last night. Nothing would have it that I had to get into "Aunt Sally's Pralines." We bought them in New Orleans. ----------------------------------------------------------- And speaking of Daylight Savings.....no problem.....I just get up an hour later! | Hi gang, I'm happy to be back in the loop after a hectic but successful weekend. I've tried to catch up, but forgive me if I don't address everyone right off the bat here. I will say, though, that the seagull story, Peg, is absolutely priceless! I laughed like you won't believe. And I hope that incident will show up in a sermon some time. Love it. Glad you're better. Alida, I do think I remember my Mom had the same metallic taste after radiation treatments, so I'm thinking it will fade after your treatments are over. I will have you in my thoughts and prayers this week, for sure. Bless you for making those CD's. Sounds like gooooood music, to this old hippie! Thank you all for sharing any tips, ideas, recipes (yum, Rachel and Peg). My cooking, too, tends to be very simple, and terribly repetitious, so easy ideas are always welcome. | Morning ladies. I think it's a good idea to post menu's here, but forgive me if I don't post what I ate yesterday. I'd be too embarrassed to have anyone know...just think of me standing in the kitchen eating ice cream right out of the container. Yup...not a good day. Today I'm extremely bloated so it serves me right. I'll start tomorrow...lots of water today. Alida: Thinkin' of you today, love. I hope this week goes fast for you and it's all over. Sorry about the metallic taste, that must be awful. And no, dd didn't come home for dinner. I picked everything up and took it to her. Just felt she needed a good meal. I was shocked to see how badly she's shaking, but that must mean that she really hasn't had anything to drink. The funeral for her friend is tomorrow afternoon, so I think I'll go with her just to make sure she doesn't falter. Oh, and as for using Olive Oil in my muffins....I have no idea if it's better....it's just the only thing I have in my cupboard. If canola oil works, then go for it. Judy: I couldn't sleep last night either. Last time I looked at the clock it was 1:30 and all I could think of was that I had to be up in 6 hours! Definitely an early night tonight. Barb: Your menu looks pretty close to mine except I can't eat those one minute muffins. Sure wish I could...they are great. But, every time I have one I gain weight. Not fair, no one else has a problem. Rachel: Thanks for the chicken recipe. Looks delicious. Definitely on my "to try" list. Peg: Heading home soon? Won't it be nice to be back in your own nest? It's always so nice to go away, but sometimes better to be home. After 2 weeks on the road, I'm always ready to go home. We've got lots of clouds today, so maybe some rain. That would suit me fine. I've had the 24 hours needed on my fertilizer on the lawn, so some rain would be good. I've just about done all I can on the yard and garden, so now I need everything to just grow. Looks like I overpruned a honeysuckle so that will have to be replaced. But, everything else is coming up good. Yesterday I spent part of the day bent over digging dangelions out of the gardens and lawn. (not a pretty sight from behind, I bet). Poor dh didn't know what hit him when he walked in the door yesterday and I let him have it. I have to give him credit...he just sat on the couch and took it like a man, and let me vent. He knows better than to go out of town and not phone to say he got there and make me worry. Then there was the theft of gas at the station...he should have stayed there to make sure the girl didn't have trouble, which she did. Anyway, he was very sheepish when I was done, so I'm thinkin' I could just about get anything done that I want now. lol (so how about getting the darned crown moulding finished!!!) Oops, big boss man is driving up the street so that's my cue to look extremely busy. lol Talk to you all later.

| Hey galpals... Sorry this will be a quickie fly by the seat of my pants thing...LOL. Very intense day at work...ack...Mondays are like that, so it wasn't unexpected...but still aacckk! Also sorry to disappoint on the menu tonight. I took the easy way out and used my *dinner date* card tonight since I didn't get to use it over the weekend...LOL. DH and I went to our favorite little Mexican cafe and I had my usual...beef fajita salad, minus the tortilla bowl of course. It's LC friendly, and per my calculations, probably about 8 carbs including the homemade red salsa I dress it with...yummers! Anyhoo....I'm tracking again in fitday and that always helps IMO. As much as I'm trying to stay close to induction level carbs, I've been right at 24-33g the last few days...sigh. I think the light is about to come on...or the switch is about to be flipped...yanno? I am really looking forward to getting myself back on track after my trip. Also, some job changes might be in the works, so I think that would be a Godsend. Bren...your email hit the nail on the head today, dearie-do! LOL. Anyway, sorry this is so *hit and run*, but I've got to get things ready for work tomorrow, and I've GOT TO GET SOME SLEEP!!! I'm messed up with the time change too, Judy and Donna. Isn't that just the pits??? I couldn't turn my brain off last night...so I maybe got 4 hrs of sleep. | The sun came outthis afternoon and is STILL out! Woohoo! However gals, my biological clock has enough problems without time changes. I'll be off kilter for weeks, but that's ok, I love the afternoon sun. Sorry, Morning gals. I can, at least, report a nice dinner. Tilapia Parmesan, mixed veggies (green and yellow beans with carrot slices), salad, with apple slices and a few potato wedges for DH. Oh, and a side dish of catsup for DH, too. Even though the tilapia was wonderful (he even admits it), fish is just not "right" without catsup, ya know. Cultured guy he is, LOL!! The tilapia is broiled on both sides a couple of minutes, then spread with a mixture of parmesan, mayo, butter, basil, and seasonings and broiled until the mixture is golden and yummy and the fish is done... Shell, glad you feel the switch is ready to flip. Cool!! Donna, yup, hit DH up for something good, ok??? You're finished with yard clean-up? Yikes, I haven't started yet. But then I wait for sun and above freezing, and there hasn't been much of that here. Alida, still sending good vibes your way. Judy, good for you---NO MORE FAT CLOTHES, girlfriend. You'll be giving that size 12 away by summer, betcha. Later, kids....

I have a terrific and easy recipe that will use up some of your cornbread mix if you want it for some night when you are having company. It's a corn casserole, makes a lot, people love it and it's WAY easy. Let me know and I'll email it to you. Terry, what is it about cravings. We work so hard to get rid of them, and in a mouthful of bad choices they are back on us. I must admit that mine have improved the last couple of days as I have had a lower total carb count and more water. For those of you embarrassed to write it down, I'll be the first to post the wanderings of my eating. Today's totals: 1211 Calories and 30 net carbs. Water did not equal a gallon -- more like .5 . It's just too hard to get it all in and make the run to the bathroom between every class. Breakfast: Splenda sweetened yogurt with a couple T. of All-Bran stirred in and a pumpkin thingie with margarine. (Yeah, I know, it's not butter, but at least it was soft tub margarine and not the awful stuff.) Lunch: A leftover hamburger patty and the leftover cauli Snack(s): A handful of nuts, 1/4 of a tortilla with real butter on it. Dinner: What a joke...... I had to present a student at an awards dinner. They had chicken spaghetti. I ate the salad that thankfully had cheese to put on top, a bite of the spaghetti and a bite of the roll. I was trying to be polite. When I got home I had another pumpkin thingie and margarine. And there you have it........ I'm betting that you guys all ate better dinners than I did tonight.

| LOL Judy, fish sticks! Oh yeah, do I remember them well!!! Actually I still don't do fish, espeicaly if it tastes like fish. Urp!!! This was my first venture in cooking fish in ages, and it was with the help of the make and take place. Honestly, I find I'd do it again, even sitting across from Catsup Charlie. OK, take that back--I love fried catfish, hush puppies and cole slaw, darn it. Good job on your totals today, and on avoiding the always dreaded awards dinner entree.

| My menu had it's good points... and it's not so good points. First breakfast was coffee with half-n-half and flaxseed/whey protein cereal. A couple of more cups of light coffee. Second breakfast was a pumpkin vanilla smoothie (frozen pumpkin pulp blended with DesignerWhey protein). Lunch was leftover beef stir-fried with frozen bell peppers. Dinner was decent... cauli mash, baked spinach, leftover roast beef with LC gravy. For dessert, DH and I split an OOM drizzled with cooked blueberries. The unfortunate part was the unnecessary snacking on TJs LC chips and peanuts. My circadian rythem has been off for a couple of days anyway. I'm sleepy at 9 pm, crawl into bed at 9:30 pm, and then awaken at 11 pm and lay wide awake until 1 or 2 am. And the time change is not helping me one bit. The whole daylight savings thingl seems so pointless to me. I mean, it's not like there's actually any ~more~ daylight, is it? Now kids are going to school in the dark again, and that's not safe. Both my kids in the reading lab today were ~so~ slow and drifty... neither finished all the exercises, although they were trying. This is the first time that has happened since I started last September. They are both very good kids, and not normally slackers. Seems odd, and left me suspecting their performances were adversely affected by the time change. So I wonder... even if only 10 to 20 percent of the population is adversely affected by the time change, how many more accidents happen? How many more instances of bad judgement? How many uncharacteristic quarrels? I suspect there's an unaccounted toll that would be surpising if it could be quantified. and... here it is, just after 9 pm and my eyelids are drooping. I wonder if it would be better to go to bed or stay up later hoping I'll stay asleep? Hmm... I'm voting for bed.

I was on TV last night with the Georgian folk group ? did a call-in (a solo) and was interviewed as well ? a lot of fun ? I have no idea when it?ll be aired ? but I?m checking around to see if one of my Georgian friends can tape it for me so I can laugh at myself! Judy, had to laugh about your daylight savings rejoinder ? always hated Spring ?ahead? and LOVED Fall ?back?? you would just hate jetlag. PLEASE email me the cornbread casserole recipe ? I may even use it tomorrow for the singing group? can they eat it out of bowls like chili?? Actually, Judy, I DID suspect this. One reason I wouldn't dream of teaching kids is the "entertainment factor." I'm a real ham, but the energy required for maintaining constant classroom excitement, changes of pace, and adapting every activity to individual "learning styles" is beyond mortal strength.
