Cola Joes

1/2 pound lean ground beef (I used 96/4)
1/4 medium onion, chopped
1/2 cup Heinz Reduced Sugar Ketchup (or other lc ketchup)
1/2 cup diet cola

Saute ground beef and onion and drain if needed.

Whiz beef/onion very slightly mix with stick blender or food processor to make texture finer, but not completely smooth. This makes a big difference in the appearance, taste, and mouth feel of finished product, IMO.

Return mixture to pan and add cola and ketchup. Simmer until the mixture is heated through and begins to thicken to desired consistency. Mine only took a few minutes to reach a lovely non-runny joe-like consistency. Serves 2

I served dh's on a slice of toasted Healthy Life Omega Bread (6 net carbs), and mine (since this is induction) on a bed of lettuce.

Sloppy Joes sound great!! Going to try this one for sure...that would be a good base for my shell-lessTaco salads that I thrive on.

Judy...I find my one carb ketchup here at super wal-mart..being here in Louisiana not to far from you. I just can not find my carbwell BBQ sauce anymore...Bummer

Hi Lisa, oh yum, taco shells---Great Idea! Yea, Lowry stopped making the Carbwell bbq sauce Lisa, darn it. However KC Masterpiece "Classic" is a reasonable substitute. You may have to add a little Splenda if you like a sweeter sauce.

Shell, it knocked me over how good this was without anything else added. Thanks for the idea. Now I'm thinking of Sweet and Sour Pork, with a little vinegar and AS added

Lisa,
Here's my LC BBQ sauce I came up with. This is the basic sauce, and it's pretty *tweak-able*...LOL!

1/2 C one carb catsup or make your own...I'll try and find my recipe for that as well.
1 T. Worchestershire sauce
1T. lemon juice
1-2 tsp liquid smoke, or(to taste)
4-6 drops liq splenda, or (to taste)
1/8-1/4 tsp red cayenne pepper, or (to taste)...if I want a sweeter, smokier flavor, I usually don't add the pepper. If I want something bold or spicey(like over wings), then I'll add the pepper.
Whisk all together. No cooking at all. I usually let it set for an hour or so to let the flavors merge.
This makes a little over 1/2 cup of sauce( about 10-11Tbsp) with
12 carbs for the whole recipe. So 1 Tbsp of sauce = 1.25 net carb.(which is waaaaay better than my old fav Bullseye at 13 carbs per servg!!


Bren...I was totally *blown away* the first time I had the cola chicken. When I read the recipe, I was like...."yeah, right...we'll just see about this..." LOl!
tweaking for S&S pork or chick sounds doable too!

lunch today.......... Cheese enchilada

totally easy -- shredded cheese (and onion if I have it) inside of a LC tortilla and topped with left over chili from a couple of nights ago. Nuke and eat.

yummm, Judy! I love enchilidas! I've also made *over-stuffed* beef and cheese burritos with the LC tortillas. I just nuke ground sirloin spiced up with dried minced garlic and onion, cayenne pepper and cumin. Drain the meat well and put it on a lc tortilla with a couple Tbsp of picante and some some shredded cheddar. Roll it up, cover with moist paper towel and wax paper and nuke until all melted and gooey! Top with a blob of sour cream and more picante...who says Mexican food can't be LC???

Tonight will be oven fried pork loin chops. For each large chop, I use about 2Tbsp of Maggies dry cereal mix that's been spiced up with season salt, garlic powder, fresh ground black pepper. Foil line a baking sheet, spray it with olive oil pam, or drizzle the real thing; place the chops on the sheet, and bake at 400 for about 45 min or so until done. I'll have mashed fauxtatoes and a salad, DH will have a microwaved spud and salad.

Shelley, I used the lc ketchup and cola in the crock pot with a pork roast and a pile of chicken leg quarters, then after I took the meat out, I poured all the liquid left over in a pan and cooked it down until it was reduced by about half. Put it in the fridge. Yesterday I put some of the pork in a skillet with a couple of tablespoons of the reduction, minus the fat on top, and had a wonderful lunch. It makes a really nice sauce. Thanks for the tip.

Good idea Shelley!

Last Sunday I put 6 chicken breasts (I was planning on a lot of left-overs!) in the crock pot and covered it with a LARGE jar of Pace Salsa (medium). Cooked on low for about 7 hours. Remove chicken and put 1/2 cup sour cream into the pot. Mix till combined. Shred chicken and put back in pot to heat through. Delicious on a LC tortilla. I also just eat in plain for lunch. May not be real induction food, but I still lost a pound the next day!

When you are looking for something a little sweet to go with a cup of tea this is what I throw together:

Microwave cookies

2 tbsp. olive oil
2 tbsp water
1/2 cup almond flour
2 scoops vanilla whey protein powder
2 tbsp. flaxseed
3 tbsp. gingerbread Davinci
1/4 tsp. pumpkin pie spice
1/4 tsp. baking powder

Mix all together. If needed add a little more water. I put them on parchment paper and nuke for about 1 - 1 1/2 minutes. Makes 4 big size cookies. After putting through Fitday...if I did it right...it's about 2 carbs a piece. I love them the next day when they go crunchy. God with a cup of tea at night.

Been following along on this thread, fun ideas! Shell, I can't wait to try your diet cola sauce and maybe even do the sloppy joe thing that Bren posted. Those stick blenders are a miracle tool for cooking.

Bren, I found your Masterpiece BBQ sauce at SWM, tastes pretty good for what it is.
