I threw together some zucchini patties tonight, loosely doing a take on Paula Deen's show this afternoon.
Since I buy Whole wheat, reduced calorie bread for my DH I used one slice and processed it in my magic bullet. 1 slice = 6 carbs. I used half of the crumbs, so 3 carbs for that.
so I whisked 1 whole egg, then discarded half, a pinch of Italian seasoning, S&P, 2T dry parmesean(kraft in the green jar), and the half slice of crumbs.
I grated 1 med-lg zucchini onto a paper plate, then took several paper towels and *squeezed* out the liquid from the squash. (do this a couple of times). Then add squash to the binding mixture. meanwhile, drizzle a nonstick skillet with some ELOO or EVOO and 1T butter and heat on med-high. shape the squash mixture into 3 med size patties. Fry on each side until dark golden brown; I didn't time it persec, but I think my cooking time was probably about 6-7 minutes on each side. I put a serving of Ranch dressing on my plate and *dipped* bites of the patty it in. Very good with my ground sirloin.
carb wise...maybe a little more than I would like to spend on a veggie, but sometimes you just need something with a little extra POW to it, yanno?
I looked at what it came out to in fitday, and it's about 11 carb/3 fiber/ 8g net carb for the whole recipe. So not to bad if you're in OWL.
If I make this again for DH and I, I will double the recipe.

Shell, those zuke patties sound delish. Would make a nice appetizer. How did I miss those?

I was craving a cheeseburger for lunch, so I made a cheeseburger with a LC wrap instead of a bun. Stuffed it with organic baby greens, pickles, a little mayo and a sprinkle of shredded cheese and of course my ground chuck crumbles. Very tasty, although I missed having onion because I'm headed back to work.

I LOVE a turkey bacon, cheeseburger between 2 lg romaine leaves.

We are having LC burritos tonight. Got to have my Mexican fix at least once a week...LOL!
