| I thought it might be fun if we shared some meal/food prep ideas. Just give a brief description of how you prepare a LC food item; it doesn't have to be in *recipe* form. If you know the nutrition content/carb count then list that as well. Sometimes I totally run out of ideas that are doable for DH as well as myself. He usually eats about the same things as I do, except I'll fix a microwaved baked potato, or rice, or a pasta side dish for him on the nights I have cauli or squash. Anyhoo...I thought it would be helpful if we could bounce some ideas off each other. Who's game? I'll jump first: last night I did a LC chicken fried steak. I used cubed round steak, moistened it with a bit water(didn't even do a egg or milk wash), then "breaded" the steak in about 1/3 cup of Maggie's dry cereal mix seasoned with a touch of garlic powder, S&P, and fried it in a non stick skillet with about 1/2 cup of light olive oil. I made DH's steak with flour and fried his last. So he had *regular* and I had LC next???....

| Oh, Shelley, good idea! I may have to try that soon. As for other ideas, I'll think on it. One of my latest successes was a LC wassil. The packaged Alpine Sugar Free mix just seems to be lacking. I took about half a bottle of my sugar free spiced tea mix and poured the contents of the Alpine packages into it. Overall, it turned out quite nice. Spoon for spoon the carb count is somewhat lower than the alpine mix is alone. I call that a win win situation. |

| Great ideas, ladies. Judy that's a great idea for the wassail I'll think about any tips I might have, but bet I'll learn more than I'll share

| yummm...wassail sounds good on a cold, windy day like today! I don't think I've ever seen the Alpine mix, though. If I did, my brain doesn't remember it...but that's nothing new...gasp! This morning, I made a OMM like this: (this is how I make them all the time, actually. Using Mags cereal mix as a base, then add on it from there) 1/3 C maggies dry cereal mix about 1/2 tsp baking powder, BIG dash of cinnamon(prolly a whole tsp), dash of SteviaPlus. Stir the dry together; put aside. Then in my 2C pyrex measuring cup, I spray it with butter Pam, add 1/4 C egg beater(or you could do a whole egg), 4 or 5 drops of liquid splenda, a half cap of orange extract and about a tsp of light olive oil or coconut oil, whichever I'm in the mood for. Stir in the dry stuff and nuke about 80-90 seconds. I usually eat half of this huge-a-mongus muffin with or without a scrambled egg, or sometimes the muffin with some turkey bacon. Then sometimes I will make a *deluxe* muffin...add in 1 T each of VWG, lite sour cream, erythritol, and either 1/3 cup blueberries, raspberries, or a couple of Tablespoons of canned pumpkin. Some days I put in 5 pecan halves, somedays not. I know we've pretty much *talked the devil* out of the OMM, but I still like them, despite having one nearly every day. LOL! Another thing I really like when I eat the hot cereal, is stir in 1 T each of cocoa powder and unsweet coconut and about 5 pecan halves. Tastes like German Chocolate cereal...now, how bad can that be??? hehe! OK...totally un-inspired about doing Chicken breasts for dinner. I'm thinking maybe the diet cola chicken thang; some slaw to go with, and DH can have some mw baked beans with his dinner....we'll see. TTFN s

| Diet Cola Chicken??? I think I need that recipe............ Here in grilling country, I often marinate chicken in ranch dressing (also works with Italian or regular marinade), wrap the breasts in bacon and throw on the grill. Texans grill any time of the year. If it's not raining and the wind doesn't blow out the flames, you grill it. |

| diet cola chicken I think I got this from WW years and years ago. I LC'd it as much as I could. Place 4-6 boneless, skinless chicken breasts in large non stick skillet. Mix together: 1C One Carb catsup and one 12oz can diet cola...I use diet rite or caffeine free diet coke. Pour over the chicken, place on medium heat, cover with lid and cook for about 45 min or until juices run clear. Remove the lid and let simmer another 10-15 min until the self made BBQ sauce thickens a little more. Now, a cup of One Carb catsup has 16 carbs. But, at most I will use 2 T of sauce over my chicken breast. So I count each chick breast at about 2-3 carbs. This makes the most unbelievable sauce. Really. And makes the house smell almost like you are at a smokehouse. Leftovers stay very moist as well and are very good re-heated and shredded, and put on a LC tortilla with some cheddar cheese on top. Yummers! TTFN s

| went with the diet cola chicken... I purposely decreased the cola to about 1 cup with the 1 cup of one carb catsup, and the sauce was really THICK with 4 med-lg chick breasts. here's a pic right before I plated it up. and I meant to say, Judy, as soon as I can grill outdoors(decent temperature and no wind), I'm gonna do your bacon wrapped chick thang. Top it with a little cheddar and dip in ranch or LC bbq sauce...sounds mmmm good!

| Shelley, how about a dash of liquid smoke in the diet cola sauce? It would really give you that smoky flavor. Wouldn't take much, either. This is something I might have to try later. And maybe some onion powder. Even a bit of garlic powder. Oooh, oooh, some chili powder, for a nice spicy sauce. Yep, gotta try it. Thanks for the ideas!

| Judy, the Heinz One Carb ketchup has been renamed Heinz Reduced Sugar ketchup--same stats. Has a blue band. It seems to be available almost everywhere here. This recipe from Linda's Low Carb Site is supposed to be a good, too, and would be handy for larger quantities. Even Better Heinz Ketchup

| Thanks, Bren! You know, I have a LC cookbook that's hardly been cracked. I may get motivated to go look for some new recipes. Back last fall I made some revolution rolls from the old 72 Atkins book. Not bad. I may give them a try again this weekend. |

| Nita, The sauce really doesn't need anything else in it. Really. You may be surprised at how the catsup and cola flavors come together. I think adding liquid smoke might skew the flavor...but tweak away...LOL! over and out!
