I just had to say thanks again to Charski for her wonderful "real" pancakes recipe (I did not see them in the recipe section so I'll go ahead and repost it here.)
They are just delicious and with the fresh blueberries so readily available...YUMM!!(Plus they are sooo good for you!)
Char's "Real" pancakes:
Whisk the following in a bowl:
1 heaping TBS flax meal
1 heaping TBS almond (or other nut) meal
1 heaping TBS wheat bran (not germ)
2 heaping TBS vital wheat gluten
1/2 heaping tsp baking powder
In a 2 cup measure mix:
2 TBS SF syrup ( Danish pastry or vanilla, etc.)
1 TBS heavy cream
1 TBS coconut oil or butter, melted
2 eggs
2 TBS water
Blend the wet and dry, mixing well. Add 1/2 cup blueberries if desired.
Use small ice cream scoop or 1/3 cup measure to pour batter into hot skillet and cook until nicely browned.
Makes about 9 3" pancakes. Serve with butter and your favorite SF syrup.
