Default Cauliflower Puff

10 oz pkg frozen cauliflower, cooked until tender & drained
2 lg eggs, separated
2 T cream
1/2 tspn salt
fresh ground pepper to taste
2 T finely chopped green onion
1/2 cup grated sharp cheddar cheese
2 T butter, melted
2 T grated parmesan

In a blender, whirr cauliflower til smooth, add yolk, cream, salt & pepper. In a medium bowl beat egg whites til stiff, fold in cauliflower mixture, green onions and cheddar cheese. Spread over the bottom of a buttered 9" pie plate. Drizzle with butter and parmesan. Bake at 375 until golden brown, about 20-25 minutes, let set for 15 minutes before serving. Cut into wedges and serve.


(I admit I have no idea about carb count but it all looks allowable to me. I found this recipe way before I began LC'ing and just came across it again yesterday. R)

Looks very tasty, indeed! I copied this into DietPower's nutrition calculator and came up with the following values.

Assuming 6 servings, one serving would be:

129 Calories
5.8 g Protein
11 g Fat
2.23 g carb, 0.7 g fiber: net 1.6 g net carb

Ladies and Gents, we have a winner! Made this last night for dinner and it was EXCELLENT. Used half a head of cauliflower, cooked, instead of 10 oz of frozen. Whole family liked it. Don't expect any leftovers!
