Zucchini - frozen or fresh - which is better?

"Low Carb Cooking" at Low Carb Diet Support: "I would like to know if frozen zucchini has the same bulk and texture as the freshly grated zucchini? I would like to freeze 1 cup measure for later bread/etc. baking while the price is ...."

Question Zucchini - frozen or fresh - which is better?

I would like to know if frozen zucchini has the same bulk and texture as the freshly grated zucchini? I would like to freeze 1 cup measure for later bread/etc. baking while the price is low 'cause they are in season. 79 cents or less is better that 1.50 or more..

My mother does that w/ her zuchini.. I'm going to be sliceing 10 zuchinis tommrow in difrent ways some are going to be cubed for soups, some are going to be slices for casarols. I helpd my mom thisevening pick some from her garden she had an over abondunce.. then we went to all the neigbors giveing some away.. we picked a total of 84.. EIIICHEWAWA... (dont get me wrong my mother plants a big garden... but HOLY COW... and there are so many more left on the vine... )

If you shred it first, as for use in bread making, it will work. When you defrost it, it will give up a lot of its moisture, since the freezing process bursts the cellular walls. However, you can still use it in breads or muffins and it will work fine! For other uses, forget it. It will be not much more than mush pieces.

BTW, for cheap or surplus zucchini, it makes a very nice sweet relish (use any sweet relish recipe calling for cukes and onion, etc.) with liquid splenda used as a substitute for the sugar in the recipe.

Hmmm. I posted before I saw your response, Gilley. What do you do to your pieces and slices to keep them from turning to mush when they're frozen and defrosted? All I've ever been able to get are limp, mushy, lumps.

well i have not realy attempted this much... had done the cube thing and what i did was lay them flat on a tray and then freeze them so they were seperated and not all bunched up (habit from work) then i put a set amount in each bag.. The one time i tried it i pulled the bag out when makeing a soup right at the end of my soup cooking time. i turn the heat off and just let the heat of the soup warm the zuchini... it dont get to bad..it would be the same as if i cut it up and cooked it some what earlier in the soup makeing ..
i cant afford to let these go to waste so.. im gona use them..

ALSO going to whip up a FAU apple crumb pie.. (thinking about trying to use LC wraps as bottom crust.. hrmm.. )
I gota take advantage of all this free food.. i actualy have ate zuchini in almost every thing i have ate the past few days just as filler.. i zhreaded some in to spag sauce put some on my steak wrap.. lol just throwing in some carb veggies where i can... gona cut some up and munch on it in a few min..)

Yeah, I can see how the cube thing could work in soups, if handled as you described!

I like to munch on raw zucchini, too.
