I made this recipe for supper last night and it was a very big hit. I used low carb bread of course, and I also added a little mozzarella cheese to the stuffing, just enough to glue the stuffing together. I also had quite a bit of stuffing left over so I made a little nest out of it in the bottom of the pan and then sat the roast in the stuffing to bake. As the roast baked the drippings basted the stuffing, just like when you make a turkey.

I think the beef broth listed in the ingredients for the stuffing is a miss-print. I didn't use any, it would have just made a big mess.

I used an eye of round (choice grade) from Sam's club and it was juicy and tender. I also cooked mine a little longer than the recipe says. I cooked mine about 25 minutes per pound. I like pink in the middle, but just barely. I like my meat cooked.

This recipe is a real keeper and it's also so pretty that I'm thinking that this will be one of the dishes I will serve during the holidays when we have company. It's very rich and satisfying.

im makeing this tonight for dinner... i tweaked it a we bit more and used some things i had on hand to spurse it up a lil more... (i didnt have time to marinate it .. since i just got home w/ the meat. i used baby portabella mushrooms , and a little bit of a veggie soup packet i had left and choped up some fresh spinich and added it in, i also probly added more garlic than the recpie called for .. actualy i dont even rember it calling for garlic but... MMM i love garlic...

and i left out the onion.. not on purpose.. by acident.. lol... i did use a shake of dried onions tho.. so that should take care of that... I think im going serve it w/ a home maid portabela mushroom cream gravy type thing for drizleing over and some zuchini and summer squash.. and a spnich salad... thank god for grocrie day..

OMG... is pretty much all i have to say... i sprinkled a small amount of rosemary over the top of the roast.. I served it up med rare.. i would have rather it been more MED but couldnt find my meat thermom. so i pulled it out and cut it after it rested and seen it was still pretty rare.. so i seared it around in a pan just to try and cook a little moer .. and served as was.. w/ my mushroom cream sauce.. OMGGGGGG. dh was like OMG lol.. he said this has to be the best roast i ever had in my life!!!!!! He kept asking how i got it cooked so rare.. i laughed for a while then said. umm i followed a recpie.. ROFLMAO.. that never happens.. and i followed it up by saying , well not totaly.. ROFL.. i said i took it out about 4 min to soon.. and i added a few things (and forgot the egg in the stuffing if i make it agin i wont forget that..) OHH it was AWSOME!!!!!
I must say.. i over ate but ohh it was the best meal i have had in a very long time..

any ideas for leftovers ... (and i thought i needed more meat ... glad i didnt pay more for an even biger one.. (got a 2 lb and it fed the 4 of us 8 yr old and 2 yr old.. + 2 adults.. ) this was an awsome meal..

I'm so glad you liked it, isn't it beautiful? It looks like something that you'd get at a very expensive restaurant and tastes like it too.

I didn't have time to marinate mine either, I just sprinkled it with some seasoned meat tenderizer and pounded it in with my tenderizing mallet.

This is one that's going on one of my holiday tables for sure.

Barb- i thought that too... that it would be something i would make for the holidays... but then i remberd so many people in my extended family HATE mushrooms.. (my sister mainly but i know there are more... ) i was trying to think of a way to make this to be just as good but w/ out the mushrooms... and i dont think its possible.. esp w/ the cream sauce i made w/ it...

I was so tempted to break out my dig camera and take a pic of it plated.. i realy made it look like something you get in an expencive resturant.. i broke out my electric knife so the cut would be smooth and even.. plated w/ a spinich salad.. and some of the cream sauce just dribbled over the plate OHH IT was truely pleaseing to the eye, mouth and belly!

I realy didnt do anything on the lines of tenderizeing it.. since i served it med rare.. (wich idont normaly do i rather have med...) it was so tender like melting in your mouth..

i have been serfing threw that web sight trying to find something else just as awsome to make... gona be a hard one to beat!
