    Question Help! Burrito w/black soybeans

    Okay, first I am NOT a good cook... I'm a recipe follower, so I need some help.

    Need a quick dinner for tonight. Going to feed DH and DD bean & cheese burritos, so I thought I would make myself a burrito w/an LC tortilla, Eden's black soybeans, cheese and I don't know what else.

    Please... any of you GOOD cooks out there (you know, the ones that know what goes with what to get the best flavor), I beg of you... help me out and give me some suggestions. I don't want to try and make one and have it come out grody. Already had an experience like that today w/the Pumpkin Spice Muffins :o (which when I have time I will post about and ask for help there, too).

    I guess if worse comes to worse, I will just make myself a cheese (and maybe chicken) quesadilla, but I'd really like a good tasting bean and cheese burrito. I do miss them.

    Debby, LOL! Don't fret.

    I take the soybeans and drain the can, then use a fork or a potato (whatever that is) masher or the blender or food processor - whatever you have handy - and make them into a coarse mash.

    Then I fry a piece or two of bacon, cut up, in a pan - remove the bacon once it's crisp, then add the bean mixture to the hot fat and fry them for a few minutes. You can add some garlic powder or salt if you like, that adds to the flavor IMHO.

    Then I usually stir in some salsa and put that into the tortilla with cheese.

    It's pretty good eats!

    Oh... Thank you, Char! You are a godsend! Okay, though... I do have a question. Doesn't sound like you put the actual bacon in the burrito, but just fry it up for the bacon fat to fry the beans in... is that right? If so, I have some bacon fat stored in the fridge, could I just use that since I don't have any bacon thawed?

    You CAN add the bacon bits back to the beans once they're refried too, if you use bacon.

    But yeah, what Marcie says! Lard, or stored bacon fat, no prob.

    You can even use coconut oil if you have it!

    Well, thanks to you, Char and Marcie, my burrito was pretty tasty. Used pepper jack cheese inside and a touch of cheddar on the top and served w/salsa, sour cream, shredded lettuce and diced tomato. YUM! Had some guac w/a few LC tortilla chips on the side. Was only able to eat half the burrito, so I'll get to have the other half for lunch later in the week.

    Also, only used about half the beans, so think I will mix in some pepper jack (making a bean dip of sorts) and have it with LC tortilla chips later in the week for lunch. Hopefully that will be good.

    Think I either used too much bacon fat (or I had burnt it before)... something about it just didn't taste quite right... maybe I just don't like the bacon taste w/my beans. SO, next time I think I will use lard. Where do you get that by the way? (see how ignorant I am )

    Cilantro seems like it would go well w/black beans. Am I right? Any other ideas for what to do w/Eden black soy beans? They pack such a nutritional wallop, it'd be nice to have some other ideas. Already use them in my chili recipe. Yum!

    I need Sharron, Cheftrina, or someone to come give me some cooking classes!

    lard can usualy be found in the butter area of your grocrie section.. if you can't find it... ask a store clerk and they can find it for you.. i have also found it in the meat section w/ bacon..

    I've also found lard beneath the tortillas on the bottom rack! And in some stores, with the other oils and baking products.

    I've gotten to where I only save the bacon grease if I've cooked the bacon in my Foreman grill - that way the grease drains off as it melts out, and doesn't continue to cook. Otherwise I've experienced that "burnt taste" and I don't like it either.

    Lard is traditional for refried beans though so go for it - I've used it and loved it.

    As for other things to do, I've made chili with those beans and also done them as simply as opening the can and draining, then combining the whole beans in a microwave-safe dish with a good dollop of my favorite salsa (which is currently the Chipotle Salsa from Safeway - their store brand) and then just heat it up. It makes a nice side dish.

    You can use them just about anywhere you'd use any other canned bean.

    Yes. And read the label. Make sure it's just lard. (I use Morrell's) Some of these idiots mix in trans-fats.

    Thanks for all the tips! Will need to pick up some lard on my next shopping trip to the regular grocer. Would probably end up with way more than I need if I were to buy it at Sams Club.

    Yes, Char, that was probably it... the "burnt" taste. Poor me... no Foreman grill :( But, sometimes I broil my bacon, so that grease would probably be worth saving, don't ya think? Will have to try that next time.
