Default zucchini

I got this recipe from a co-worker - it came out SO good!

(I do bulk cooking on the weekend, so feel free to reduce the amounts here to fit your life style)

9 cups sliced zucchini
1 cup sliced jalapeno peppers (remove the seeds, unless you really like spicy)
food)
1/2 cup tomato sauce (canned, no sugar added)
8 ounces shredded jack cheese
salt (per taste - I use mineral salt)

heat up a large frying/sautee pan, coat bottom with olive oil (one turn of the pan does it)

add zucchini, peppers, sauce and salt - heat through until zucchini is semi transparent (I like my veggies crisp) and the tomato sauce is reduced about a third (10 minutes, use a lid if you wish)
when cooked, turn off heat and top with cheese, stir to combine.

This netted 8 cups total
per fitday (I did NOT run the olive oil through the numbers)
1 cup equals
138 calories
8.75 fat
5 net carbs
8 protein

Heating the peppers takes the bite out of them and leaves the dish with a wonder flavor.

How good is it?

Hubby just ate half of it!!!

Sounds nice & spicey! A nice recipe to have on hand when zukes & peppers are in abundance from the garden.

Hubby just ate 1/2 a cup of jalapenos?! :crying: YOWZA!! I'd be stayin' FAR away from him for the next 12 to 24 hours!

mmm sounds like a wonderfull side dish to eat from for the week... or add a meat to and have as a casaroll style skillit meal! mmmm
