Default I was a cooking fool

this weekend.

I do bulk cooking on the weekends so I'm not stressed or left short of food options during the week.

Well this weekend I really went overboard (thank goodness for the freezer!)
Here is what I made - hope it helps others with ideas for their menus

One rotisserie chicken (lots of herbs and butter yum!)
Low Carb stuffing (I was doing a trial run of the thanksgiving menu)
Zucchini-Jalapeno pepper saut?
Chicken/mushroom/celery soup (I love soup for lunches!)
chicken salad
hamburger patties - bbq'd
artichoke heart frittata
mushroom frittata

my kitchens a mess, but the freezer and frig are well stocked!

(yes, I'll post the stuffing recipe!!!)

I cooked myself silly too!! Must've been the weekend for it!

I made:
Broccoli-Hamburger Alfredo Casserole
Ground Turkey Patties w/ sauteed mushrooms
Eggplant Parmesean
Bacon and cheese quiche
chicken salad

It's about 2.5 hrs out of my sunday but it is worth it when i only have to warm something up and make a salad or a veggie to go with. No stressing, no being tempted to eat the whole thing. Thank goodness for Tupperware!

I meant the "wrong thing" up there, but I guess "whole thing" could apply as well. Must be time for lunch LOL!

I did not doo cooking like that but i went grocrie shopping today.. since Mondays are more like my Sundays.. beacuse its my guarnteed day off every week... I went and stocked up on cheeses bought a turkey breast that im roasting in oven now to slice on my meat slicer in sandwich style slices for roll ups or wraps.. i bought 2 things of the carb option smoothies more cheese , 2 doz eggs that i just finished hard boiling 1 doz, tons of fresh veggies that i need to finish cutting up and packageing seperatly . bought fruit and some chicken that is going in my saute pan so i can cut it up for chicken what ever salad, wraps, or to just put on my salad.
I also was given 5 LBS of rib eye steaks that my father Won at some picnic thing over the weeknd that i gota figure out what to do w/ since my freezer is full now.. was gona do a few of them to medium and let sit till cool and slice up for omlets, wraps, salads ect.
Since i have been cooking meals for just my kids and my self.. i have been eating usualy difrent foods totaly than my kids so im looking for convience and nothing heavy so i dont over do it..

I always do "planned overs" on the weekend - then I don't have to worry about dinner on worknights.

I did two racks of baby back ribs with my LC BBQ sauce, a rotisseried turkey breast, a panfull of meatballs/marinara sauce, and the loaded fauxtaters casserole. Plus, I made a quart of yogurt and sliced up a full flat of strawberries and put THOSE in the freezer!

Oh yeah, and two pounds of bacon and two pounds of bulk sausage formed into patties and cooked in the GF grill.

AND a bagful of "cream of what" cereal for my breakfasts!
