Try oiling and flouring the pan before putting the batter in it - that should help release the cake from it. Sounds like you found the wheat gluten - essential to make baked goods rise without using all-purpose flour. Also, if you try the first recipe Rob suggested just finely grind your rolled oats in a blender and that will become oat flour. Many like the gluten from Bob's Red Mill (available on line) but I just buy mine at WinCo ( a grocery chain here in the west). They have tons of bins and sell it in bulk - it is much cheaper and works well with all I've baked. Have you tried a health food store - the one here carries Bob's Red Mill products.

Most of the seasonings look good in those recipes - I use all spice in mine and no mace. I plan to make some pumpkin bread for christmas. Last Christmas I asked my DD to make it and she left out the cloves because she doesn't like it - it was very bland. I learned ground cloves is very important to the recipe.

since i had made it in a cake pan and it was so flat.. i cut it to fit a loaf pan.. and frosted it in layers w/ some splenda sweetend creamcheese. i needa to a search for an actual cream cheese frosting beacuse this was very hard to spread on the cake/bread and i need something that can be piped threw a bag or spread very very easy so it dont break the bunt form..

any sugestion to make it raise a little more.. ahh.. maby i should just try trippleing the recipe.. its very tasty so.. im sure it will get eaten.. even if it is LC! thought about cutting it in 1/2 takeing 1/2 to my church and haveing 1/2 for my dinner since we are haveing both dinners in the same weeknd.. im haveing mine the saturday befor t-day and church is haveing its social that s unday.. could realy make it look cute displaying the inside... to bad im not realy talented i would try and layer it... but that is p ushing my luck..

One way to lighten things up is to replace the powdered egg whites with a few real egg whites and whip them up separately. Then, after mixing everything else, put a glob of the whipped whites into the batter and stir it in. That lightens up the batter. Then incorporate the rest of the whites by gently folding them in. This will give you some volume right off the bat. It should increase some during baking.

Just a thought.

hey thanks...

if anyone catches this question.. would pam w/ flour be a no -no .. im realy looking for a way to keep this cake from sticking to my bunt pan..

i thought about useing regualr egg whites.. and then just tossing the extra yolks in to my omlet or what not for breakfest..

When I taught microwave cooking classes, we had a hard plastic bundt pan. To keep cakes from sticking in it, we sprayed the pan with Pam, then took a round coffee filter, cut out the center so it fit down into the Bundt pan, sprayed THAT with cooking spray and pressed it into the pan, then poured in the batter - it helped the cake release from the pan, and then you just peeled off the coffee filter. Don't know if it would work for one baked in the oven or not though!

I just invested in a set of silicone pans, muffin, bundt, loaf, lasagna, and 2 sheet liners - so far I've only used the muffin pans but man I love them! I'll be trying a bundt cake for T'giving in that one though....

i have seen those pans online and on infomericales.. you are talking about those blue pans that are flexable.. i wounder if you can buy them in stores yet.. you know.. they always put those things that say .. " can only order it threw the company " a month or so later you see it in stores w/ a big lable on it "As Seen On Tv"

i dont think i can find a coffee filter big enough for a big bunt pan.. guess this will seriously be a trial and error creation.. at least i know the cake is going to taste good..

im definatly going to use regular egg whites.. im headed to the store.. 1 Dozen of eggs is 48 cents.. WOOHOOO a low carbers dream come true.. now if heavy cream would drop in price for a week..

Gilley, I bought a set of those pans - bundt, muffin, and loaf - at Long's Drugs locally. The rest of the stuff I bought on eBay.

If you DO buy any - make SURE to get the ones with a SHINY surface - I bought a muffin pan from Amazon made by KitchenAid and ended up sending it back, some genious made the surface dull and pebbly, and gee guess what - the muffins stuck as badly as they ever did in metal pans! DOH!!

I've seen the flexible silicon baking pans at a couple of high end cooking shops - Sur La Table has them and so does Cooking, Etc.

well.. i just bought a regular old bunt pan..i hope i can realy figure out something more to make in it asides from this.. beacuse that is more money than i would have liked to spend on 1 pan that ill use maby but 1 time a year..

well.. since my bunt cake is going to be eaten this weeknd i made it today... i was so excited..i ended up trippleing the recipe and used an extra egg... my recipe was on my laptop and it proceeded to lock up w/ a weird box over my recipe and i forgot to put my oil in .. by the time i rebooted i had alredy poured in to bunt pan. i was worried... i realy was afraid it wasnt going to come out of pan.. i put in oven and let it go..
let it in about 7 min longer than sugested till done.. pulled it out... sat it to cool for about 1 min... while i got my bakeing rack out.. and i looked it had baked away from the edges i thought .. okay hold your breath and flip... IT LOOKS BEAUTIFULL!!!! I almost dont want to frost it like i had wanted.. it realy looks good.. it got darker in the little creases of the cake... ohh i wonder where my camera is.. if i find it befor saturday morning ill take a picture befor its frosted.. and then after...

even after trippleing my recipe it was probly 1 inch short of filling the pan. so its going to be a short pumkin..

but im proud of it.. and to think none is going to know its low carb! (my sister wanted to make a pumkin roll and i told her.. im makeing something better please dont.. if she wanted to make something she could make chocolate cake.. (my dh's fav, he is not a pumkin fan nor cheesecake!) anyway.. just wanted to post an update..

a few people know its going to be low carb.. my mom whom is diabetic .. and ill point out to my grandmother (whom is diabetic also) that it is"suggar free!" if i say low carb to her she will probly waddel away from it.. no offence to my grandma but she is weird like that. im still hopeing to take a picture tommrow morning befor i frost it and after..

okay i have pictures of the cake.. only thing is i have some major upsetting news about the cake its self.. everyone was to full lastnight to eat any cake.. so i took a tiny sliver to taste it.. it was wonderfull i put a bowl over it and was going to take it to my church social thismorning.. walking out to my car i leaned up aginst the car to balance it and it slide out of my hand.. and is now bird food.. i was so upset i cried all the way to church! i worked so hard on it .. and it turned out wonderfull.. my colors on my frosting were not as good as i would have liked but it was nice.. and it ended up not being seen by anyone! :(

i have the picture.. but they are to big to load to the web sight.. if anyone would wish to convert them for me ill send them via e-mail to them.. i havent figured out how to change it and DH is not here at the moment..
