Hey J-girl. A ramiken is just a one-serving baking dish. However, for the purposes of the mock danish, any small dish or cup that can go in the microwave is just fine.

I wondered the same thing the first time I saw the word...and had a time finding any, but now they are all over the place.. they come in different sizes, and are made of different stuff...here is a photo of one...

I use a Pyrex custard cup. You can find them in most large grocery stores. Here's what they look like.

Well I tried the mock danish last night,...made it in a coffee mug (that's what I make the 3-min chocolate cake in). Didn't really care too much for it. Does it really make a difference if you use wax paper or clear wrap? I dunno, I guess I'm not sure how it got the name "danish" - to me, it just tasted like egg.

Kelly-me, too! I tried it by the recipe twice. There was a cream cheese flavor, but I just could not get past the consistency and the egg taste. But, I'm really freaky about mixing foods, too. I have weird, staunch rules about that. I think I may try that 3 minute chocolate cake soon! I never met a chocolate I didn't like! Any tips?

Heya!

I tried the mock danish tonight too! Except, I hate that "eggy" taste (ewwwwwwww) so I used only the egg white and it was wonderful. I made it with vanilla extract and lots of cinnamon. I even put a dollop of sugar-free strawberry jelly in the centre, for that "Danish look" ! It was wonderful! Even made DH one for his breakfast tomorrow at work. try it without the yolk and it is much better in my opinion.

I'm jealous - you all seem to be able to enjoy cream cheese. When I ate much of it I gained weight - ughhhh! Is there another danish recipe w/o or little cream cheese? 3 oz is just too much for me in a day.

Well, tried the danish again ...without the yolk and it was better, but still not what I was hoping for. I know, I know...there is a reason they call it the MOCK danish!!!

Ditto on the vanilla and cinnamon. I put plenty of each. I also tried pumpkin pie spice recently for a more "fallish" flavor. I also put a tiny bit of butter on the finished product and sprinkle just a little splenda on top of that. YUMMY.
